How To Make Teriyaki Beef Jerky In The Oven

- Once again, I’m all out of Beef Jerky, so it’s time to whip up a batch using 3 pounds of Top Round (often sold as ‘London Broil’) and a homemade Teriyaki Sauce that I kick up a bit with the optional addition of some Sriracha Hot Sauce. Then it’s into the oven to dry, and the result is a pile of tasty jerky that’s not going to last long in my house.
Teriyaki Marinade Ingredients
½ cup Soy Sauce
¼ cup Water (room temperature)
2 TBSP Rice Wine Vinegar
¼ cup Brown Sugar
2 tsp Minced Garlic
2 tsp Crushed Ginger
For Extra Heat: 3 TBSP Sriracha Sauce

This stuff is incredible! I just finished making it and I can already tell it's not lasting more than two days in my house. I added sesame seeds to the marinade to give it a more "teriyaki" look. Great recipe Ry!

On the yield question: For reference, whenever you are calculating recipe sheets in a restaurant you consider a 30% loss for meat. That's between cleaning and cooking. I imagine if you are making a gumbo or some kind of meat-in-sauce dish the loss would be less maybe 20 - 25%
On the keep time: For a restaurant you always consider 1 week in the refrigerator or up to 3 months if frozen. I know some stuff keeps longer than that, but this is a rule of thumb to avoid potential contamination and 1 week is very on the mark for most things, after that they might not be spoiled yet but it has lost a lot of qualities and flavors and nutrients and maybe even grab some of that fridge taste.

I made the beef jerky in the other video I watched of yours and can say it tasted like beef jerky and was the best I ever had. My sister loved it so much that she was already wanting to go out and buy more to make teriyaki XD so, Im glad to see this video pop up. I made this today in my Cuisinart (same as Masterbuilt basic electric) smoker. Your marinade is spot-on. Thanks for a great recipe. Yes, it will all be eaten sooner rather than later. This recipe is a keeper.

Ry looks delicious! I always do some black pepper and liquid smoke in the marinade but skip the hot sauce. Mine doesn’t last very long either as I cannot walk past the bag without grabbing another slice or two. I enjoy your work, always helpful !

Hey Ry, what do you do with the trimmed fat? I know you say they turn if you plan to store the jerky long. I normally cook them and eat them first when they come out. They are tasty.
A lot of the time I freeze it and save it for adding to hamburger when I grind sirloin :)
How long does it last outside of the fridge(if not eaten) I’m planning on doing some for a summer beach day, won’t it go bad because of the heat?
I make mine to be refrigerated. Preservation is a different process.

This was one of those one day away from the 'sell buy' date and the store usually marks those down pretty aggressively. I look for those deals, especially for jerky :)

Don't you need to slightly pre-cook before dehydrating in the oven to kill bacteria? I read you can boil with the marinade so the temperature reaches 160... or cook in the oven at 275..for 10 minutes.then lower it after
I’ve never heard that with beef jerky. With chicken it’s best to bring it to a certain temp quickly before lowering temp to continue drying.

How do you make the meat shine after it all dry up?
It sweats a bit as it cools since I don’t take it to a state of total dryness.
The recipe for real teryaki is 2 parts mirim, 2 parts soy sauce, 2 parts cooking sake and one part brown sugar, the sake and mirim have very strong unique flavors, pure umami.

How long does it takes in the oven?
It depends on the level of dryness you want. Every oven is different.

what temperature?
I usually do it at 160 F, but I know some ovens don’t go that low. I’ve successfully done it at 175 F also.
A local store just put whole eye of round on sale for $2.68/lb. The wife and I are thinking about getting a couple and doing jerky. Last time I used eye of round the jerky came out pretty good.
