    Looks great! Suggestion: Use a scale for weighing out curing salts - about 0.250% of total weight. I’m sure that pink salt is nitrites (not nitrates) also known as cure #1. Don’t use cure #2 (nitrates and nitrites) for semi dried meat products including jerky. Lastly, celery powder alone will not cure meat and is not a substitute for curing salts, however cultured celery juice powder is - I’m not really a fan of it though.

    I use a Presto 06301 Dehydro Digital Electric Food Dehydrator it's a $110 dehydrator on sale now for $70 on Amazon. it's extremely reliable had it for years of constant use, has a timer and temp setting. 6 tray with inserts for drying herbs and liquids (like liquid fruit for leathers) but they are as low as $30-40
    also after *years* of slicing by hand I highly recommend some kind of slicer for anyone looking to get serious about their jerky. I like thinner slices than this so I use a deli slicer. I like to use Dale's seasoning instead. I'm obsessed with Jerky just had to share I always encourage people to start. I'm gonna look into this meat tumbling process

    I have a similar recipe with a few more ingredients(+ some liquid smoke)I thin slice my meat and then into smaller pieces(easy to sneak into work),while marinating I use ziplock gallon bags and mix it every few hours(throughout 24hr) and one of my dehydrators don’t have a temperature setting so I have to watch it all day

    I make my own I use Celery salt soy sauce worstishire red pepper flakes onion an garlic powder salt an pepper. Sometimes I use dales in place of worstishire. Also before I put it on the dehydrator I give it a sprinkle of Monterey steak seasoning. Give it a try!

    I was just explaining to another connoisseur of flavor ,as to marination tricks,before homes had seal-a-meal,we went ol skool,and reversed the whole thing to get the same result as vacuum marination.Old skool pressure cookers,on pressure,no heat,thus,basically pushing flavor thru the meat in 1/3 the time.i cant imagine how much a pro baby like that one your using would cost.I am an artist as well as cook,and needed vacuum devices to de-gas resins,rubber,dental stone,etc. ,and almost always made them myself.Boxes,pots,cabinets, closets,and most of all 1960,s pressure cookers the best.i do like that pre-made pot tho,its nice,and fancy lookin.

    Wow. I've been making jerky my whole life and basically live off of it. (Sometimes 😁🙃🤠.) I am going to make a large batch of beef jerky and chicken jerky this morning and thought I'd see how the rest of the world does it and I'm glad I did! That vaccum tumbler is certainly a time saver but that jerky slicer?
    I'd backpack that thing into deer camp!

    I do not use the soy, but I do use a little apple cider vinegar. Also I like a little liquid smoke, garlic powder, onion powder, a little mustard seed along with the Worcestershire. I like to flatten my quarter inch sliced with the grain, down as flat as I can get them, using two pieces of plastic cutting board from the dollar store, and a 22 oz framing hammer. The jerky comes out shoes leather tough. The reason I like it like this , I can cut it into bite-size pieces and chew on a piece for a week, or until I get tired of chewing. I appreciate your presentation.

    Pro tip: If you don't have a dehydrator or a smoker, you can use an oven. On the lowest setting possible, usually 170-180, the secret is to crack the oven open a bit for the first hour or two. As the moisture comes out it will steam the jerky if you don't vent it. Once it stops dripping and starts to dry you can close the oven and walk away. This guy is spot on though; lots of marinade, consistent thickness and mixing the marinade over a day or 2 is best. After about 2 days the proteins start breaking down and it gets too tender. The surface tends to "pill" and is dull instead of shiny. It's still good but doesn't have that nice jerky shine and snap when you bite it.

      And if you take out the bottom rack you can use small wire hooks or clothes pins to hang your jerky from the upper rack. If you put a cookie sheet or a layer of foil on the bottom of your oven mess is negligible.

      debunkthejunk1 that’s how I make jerky is in the oven, works great. I leave the door cracked the whole time tho when I make it. I put foil down for the first hr until it stops dripping, helps keep the oven from getting so messy.

    I lived in Ocean Springs in the 70's as a kid. Only been back once three years ago - literally 40 years later. I like it down there. We use to sail out to Deer Island and occasionally Horn Island which is a ways out. I might move back in my 60's from here in Virginia. Love the food there, the beach, the ocean. It's a nice chill place!

    Great video, i do mine pretty much
    The same way. Same cut of meat, same marimade, same dehydrator. One more thing. When i'm heading out on a camping trip i make a batch and i wrap the jerky in brown paper so the meat can breathe and soak up more fat while i am traveling.
    The next thing and more important is that i toss the jerky on the grill for a minute before I serve it. The heat brings out more of the flavor.
    Warm meat just tastes better .
    Try it and see.

    I have been perfecting my beef jerky recipe for years and stumbled onto your CZcams post . Excellent information and I am going to now get a vacuum tumbler and sealer and up my jerky production. I only make it for family and friends but have always wanted to get my recipe out there in stores. I am sure alot of folks do as well. The jerky competition is stiff! I just enjoy knowing I have made a unique and delicious version of it.

    I make jerky in the oven, toothpick thru the meat and hang on the grate, run the oven at low as possible, about 150-170ish with clothespin keeping the door propped open for 8-10 hrs depending on size . Comes out great every time. I use close to the same marinade as you did and marinade it for at least 2 days

    25 MARCH 2021 now -- I'm looking at a bunch of meat curing videos and saw this title about making JERKY -- I love jerky but it is too expensive for me. When I get a dehydrator I plan to make my own so this video is really great to see. Love that guy showing how its done. :-) Not sure what I will do for a marinade yet, but will remember this recipe as a guide. :-)

    I like to use ground venison thru a jerky gun! I can go a little longer @ 145 allowing the flavors to set up a while longer too. Personally, I think jerky is for sharing and not everyone likes jerky strips cause they can be tough to chew so I use ground meat and nobody has complained yet. Also, I do use Soy every now and then but Ive found that Lime Juice works just as well and it really keeps the meat flavor locked in keeps the sodium down! Happy Jerkying folks!!

    Just saw your video fir the first time. The mechanics of slicing the eye of round are fascinating. I would love to see a video where you smoked the finished product say on a traeger grill. You have just given me the confidence to make beef jerky. Looking forward to seeing other videos. Thank you

    Thanks to both of you for this video. Ive been making this similar recipe since I first saw this video in Nov 19. I omit the Brown Sugar personally. I use the Foodsaver marinade container for my marinading.
