Vegan on a Budget: Smothered Okra. 🥰 I had some okra sitting in the freezer that I didn’t want to go bad, so I thought instead of throwing it out I’d put it to use. Remember no cash in the trash!!!! Use those veggies. 🤣
This is a vegan meal that may not look the best, but is loaded with flavor. 🌱
If you are not an okra lover then this recipe is for you. I feel like often times we don’t like certain foods because we don’t know how to prepare them properly! 🌱
Smothered okra is a traditional Southern American dish with roots in African cuisine. It’s super popular in Louisiana. 🌱
The dish is typically made by sautéing sliced okra with onions, peppers, and other vegetables, then simmering the mixture in a rich tomato-based sauce. 🌱
Over the years chicken, sausage, and shrimp have been added, so I added vegan substitutes. However, that’s optional. It is often served over rice, grits, or cornbread. 🌱
To cook the slime out of okra just add it to a pot with a few tablespoons of vinegar and stir on medium high heat until the slime is cooked out. This takes about 15 mins m for a 1 pound of okra. 🌱

You can use vinegar or anything acidic to deslime. Some people use tomatoes.
