I’m a Louisiana native and we usually throw in some smoked sausage with the okra, tomatoes and shrimp. I definitely recommend adding some sausage if you decide to make this.

However after watching your technique I think I’m going to omit that frying of the veggies I’m so much oil yet add your tomatoes.
