    Have a nice time. In Multan Pakistan, in the months of April to September, the process to keep in sand, is impossible. The alternate is that rooti shuld be used in summer and ambly in winter. Regards.

      You can take ambali along with dal, sabji, rasam, sambar, dahi, achar, fruits etc..... Make sure the curries are not hot if not the beneficial microbes may perish.

      Ambali can be reheated to a lukewarm level using double boiler method. Overheat will destroy the microbes present in ambali. Even curries, rasam, sambar etc shouldn't be hot.

      Ambali should not taste sour after fermentation.... Fermentation depends on weather conditions at your place.
      For fermentation of ambali it roughly takes time similar to that of milk to become curd.... Depending on the climatic conditions at your place you plan accordingly.

    Yesterday, I left some little millet rice in a clay pot (with clay lid) on a wooden dining table overnight to see if it ferments. In the morning, it smelt and tasted like it had fermented and i consumed it. Do you believe this was the case or did i just consume rice? asking as i didn't strictly follow Ambali making protocol. thanks

      Warm and humid conditions create a congenial environment for the multiplication of microbes both beneficial and harmful.
      Microbial activity softens the cooked grain further.
      If covered properly and handled well (without contamination) the fermented rice can be consumed.
      Only dry spoons/ladles should be used for serving.
      It is better not to consume such food in summers.

      6to8hours is enough..... As millets hv protein in them it smells bad if soaked for long just like urad dal.

      Follow the sand method told by sir in video.... Fermenting gruel is similar to setting/preparing curd. Just as how curd goes bad and gives out foul smell if left for long, ambali too goes bad if left at room temperature beyond 12 hours.

      @@MilletChefs once we boiled millet for fermentation , then we need to wait for it too cool for covering with cloth, but it takes hour to get cool, can we put pot in cold water to cool it fast, so i can cover with cloth in 15 to 20 min

      Once you turn off the stove, wait for 1 to 1.5hrs and cover with khadi cloth.... Heat will escape through the cloth.

      Use lukewarm sambar/rasam/sabzi. Beneficial microbes get destroyed if hot.

      If it doesn't go stale you can. It will get sour, smelly n watery when stale.
