  • We just had butcher day and I have never ate a Muscovy Duck. I was pleasantly surprised. Smoked Muscovy duck, smoked potatoes from the garden and Brussels sprouts done in butter right out of the garden. It was really good. Joe's Cookin"

    I raise quail, Pheasants, chickens and rabbits, I guess I'll be getting some Muscovy ducks. Great video Joe.

    Thanks for sharing Joe. I was just wondering...when the internal temp. Got to 165 it should have been safe to eat. Why did you think it needed the extra 45-minutes? Was it still moist (it looked like it was)? As always it is a great video and I appreciate you doing them.

    When I was a kid, my dad always kept around 100+ Muscovy ducks here on the farm, they were for meat and eggs. Man, I hated cleaning those things! lol When I became an adult, I bought and also live on that farm, but there's NOT going to be any Muscovy ducks here! lol SR

    Question for you Joe on the apple would chips. You used a chain saw??? Does any of the chips have remenants of bar oil on them??? Understand I have never done this and I am curious. Man you know how to make a guy hungry and I just had lunch about an hour ago!! Only had duck one time, it was store bought, and I hated it. Juddie

      Im sure they did, I have been using the chainsaw to do all my maple shavings for over 30 years when I make my jerky. Maybe thats why it tastes so good. My secret ingredient. Lol.

    Muscovy breasts (alone, not the whole duck) will fetch you about $80. They are a great delicacy! I have had some, but do not yet raise my own. Now I think I will!

    not to sound judgemental but what about the bar oil that would be mixed with the shavings? probably not too much but it would stick to the ducks skin

    Ok, using the chainsaw to make wood shavings.... Doesn't the bar oil contaminate the wood? Even when I have the oiler set on low my saw slings a little oil off the chain.

      It probably does. Its how I have did it for over 30 years so I see no reason to change now.

    Joe, It was me that said I found when I eat our Muscovy ducks that they reminded me of beef. Good aren't they?! :D I am guessing you will be keeping some breeding muscovies around to produce more for the dinner table...Cheers, Tracy

    What I wanna know is.... In that last shot of the ducks, how did you get them to hold still after you had lined them all up so photogenically, alternating beaks to tails? ;) Sure are some good lookin' Muscovies!

      It was pretty dark out so they were all huddled up. That and the fact that so many of their "friends" just went in the freezer they are on there best behavior. Lol.

    I like my duck breast to be rare, it has a lot more flavor imo
