Tempoyak is fermented durian. The taste will always depends on the durian's flavour during fermentation. It can be sweet sour. Best when you made into sambal. Just mash some chillies with tempoyak. Most famous dish made is of course gulai tempoyak and the best fish to match is Patin fish. It gives some sweetness plus sourness to the dish.

tempoyak is fermanted durian. this dish very famous at pahang and perak. cause this two state have a lot of durian farm and durian lovers. and also have many food also can made by tempoyak.
many people can cook gulai tempoyak. cause tempoyak is easy to cook. BUT FOR GULAI IKAN PATIN TEMPOYAK only the real tempoyak master can cooked it. it not same like normal gulai tempoyak.
from how choose the best and type of ikan patin, how to clean or wash the ikan patin. how to marinate the gulai ikan patin sauce and how to cooked all ingredients step by step. only the real master gulai ikan patin can cooked it and make it so delicious. cause ikan patin is river fish. not like sea fish. have trick and technique how to cook this ikan patin.
im durian lover. also tempoyak lover. but i really hard to eat gulai ikan patin tempoyak in restaurant in kuala lumpur. cause the taste not good and the patin fish not so fresh and have some weird smell..
but 1 day, 1 of my friends from temerloh pahang come to KL and bring their home cook gulai ikan patin tempoyak. at the first i think. ohh maybe same like normal gulai ikan patin tempoyak. but when i taste and eat it. boommmm is totally different. OMG the fish really sweet. juicy, chunky meat. no weird smell at all. and the tempoyak gravy also super super good and different like others gulai tempoyak. 1st time in my life i can eat the whole fish gulai ikan patin tempoyak.
my friend said. this is original and authentic ikan patin tempoyak. temerloh town in pahang is the master and famous for gulai ikan patin tempoyak in malaysia. in KL for others gulai tempoyak ok. but for ikan patin tempoyak hard to get very good stall or restaurant. in temerloh pahang also have a lot gulai ikan patin tempoyak cafe or restaurant. but also not all good. must asked local people where can get the real gulai ikan patin tempoyak.

I used to dislike tempoyak too..but the one that my MIL made is super good..turn out she made the tempoyak with the still fresh durian..I mean some people made it with the durian that has turn a little bit sour but she made with a new fresh one..a bit of salt and there with cili padi..pegh!

Eat actual tempoyak of course it's not tasted good..but tempoyak ,excellent when it's mixed with budu and certain gulai.. and ulam

Not that I never tried, in fact used to love durians. Just that as I grow older, can't stand them anymore. Let alone eating, even its smell gives me dizziness đ
I only eat patin tempoyak at temerloh pahang only... because else where the patin tempoyak is fishy dan rasa lumpur.... because their use patin kolam.. not patin sangkar or patin liar as in temerloh pahang...

There's a huge difference in taste of the regular patin and patin from pahang (patin sangkar or sungai). You need to try the patin pahang but becareful of the price especially patin sungai or patin buah.
