Tempoyak: fermented durian paste
I'm going to make a BIG statement: Tempoyak, and dishes made with it, could be the best of all Malaysian food, if not the world.
So in order to make tempoyak, the durian flesh is removed from the seed, salted, and left to rest in room temperatures for anywhere from a few days to a few months, depending on taste preference, preservation, and how sour you like it.
Ever since I heard about tempoyak many years ago, it was a dream of mine to take a trip to Malaysia to feast upon tempoyak, both the raw fermented version, and cooked into a variety of different dishes. Central Malaysia and the East coast are havens of tempoyak, and I was thrilled to have a chance to finally go.
TEMERLOH, MALAYSIA
Temerloh is in Central Pahang, Malaysia, and we met up with Sufian from Padu Beb ( / sufianpyan , a local Malaysian food lover and vlogger. He was so much fun to hang out with, and he loved Malaysian food and tempoyak!
Restaurant 1: Gobang Maju Patin Tempoyak
First restaurant we tried was Gobang Maju Patin Tempoyak probably the most famous of all the restaurants in Temerloh that’s dedicated to serving ikan patin tempoyak - which is a silver catfish prepared into a fermented durian tempoyak curry. Along with the regular version, we also ordered “super pedas” - the extra super spicy version. It was a life-changing meal and experience, the tempoyak has a very fruity taste, and I think the durian smell was actually stronger than the taste. It did have a slightly cheese culture taste, and blended down with chilies and turmeric it was phenomenal.
Fermented durian sambal - We also tried their sambal tempoyak, the fermented durian paste dip, mixed with chilies. The best veggies and dip I’ve ever had in my life.
Petai jeruk (pickled stinky bean) - Finally, we couldn’t resist some pickled stink beans.
Restaurant 2: Selera Patin Bangau
Since we were in Temerloh, Malaysia, we decided to try a second tempoyak catfish curry restaurant just down the road.
I loved the atmosphere here, so laid back, a local Malaysian food spot, in someone's backyard. Again, it was a similar situation, the tempoyak as the main event, but other Malaysian foods to eat as well.
Their ikan patin tempoyak (fermented durian curry with silver catfish) was outstanding, spicy, full of vibrant flavor, and again, fruity from the durian paste - but almost mango tasting.
Total price - 67 MRY ($16.44)
It was an incredible day of eating tempoyak, and it will forever be one of my favorite things to eat in Malaysia, and the entire world.

I don't understand some of you that keep asking "why does he eats with his hands??" . That's because he's in Malaysia and it's perfectly fine to eat with your hands!!! It's the tradition and actually food tastes even better that way. Obviously you have to wash first for hygiene purposes...
@wayouttatune2 haha maybe? Honestly I can't really explain, but I guess it'll taste better because eating with your hands is a more enjoyable experience? Which tricks your brain into thinking that the food tastes better haha.
wayouttatune2 from what i read, it is a tradition of us, but recently it is proved to have enzymes that helps with digestion. Suprisingly it usually located on our hands. But of course you need to wash your hand first before eating. Perhaps at your place, that fact isn’t well known because u probably eat with spoon and fork or other thing.
Not just Malaysians eat with their hands. Even Filipinos do too, Indians, actually almost all Asian country does duh?

@Swiit Lime that's why you have to wash your hands first before eating. They have been taught the correct ways to wash their hands since elementary school. Although parents already taught the children all of that since their child start eating on their own..

Dear all, as for Mark eating with his hands, it is perfectly acceptable. Usually most of our Malay and Malaysian Indian eateries will provide a foreigner (Mat Salleh) with utensils. But to see a foreigner dive in properly with his hands is a show of respect for our diverse culture and most Malaysians will appreciate this gesture. Of course, do note that most Chinese Malaysian restaurants will dine with utensils such as chopsticks. So if you are in doubt feel free to ask your host or local friends about the culture. Welcome to Malaysia everyone! Love you all and hope you enjoy the food and hospitality!
Edit PS: If the dish is supposed to be shared, it is common courtesy to spoon it onto your plate before using your hands. Hygiene and common sense here :)
not just in Malaysia and India people eat with their hands, Filipinos as well. Actually I think all Asians do.
@@o2jammerz06 I believe Japanese, Korean and Chinese are Oriental Asians as well. Thai and Vietnamese are South East Asian too. And we do not have a culture of eating with our hands. So I suppose not all Asians do.

As a Malaysian, I am honestly surprised to see foreigners enjoying tempoyak. I honestly can't go anywhere near it despite being a huge fan of durians! I always have the impression that only people from Pahang can tolerate the flavour, but I guess I am so wrong. Kudos to you Mark, you've crushed what is considered the last stage of acquired flavours!
True..some provinces in Indonesia also have dishes made from tempoyak. But not many people here love the taste nor its smell. Mark is trully an amazing foreigner!

Crazy! All of those foods are strong in flavor yet they compliment each other to become a whole great meal. We are talking about top level exotic foods here. The silky smooth flesh of Patin Fish, invincible-fruity taste of Durian, spiciness-addicting of fresh chillies, creaminess of coconut milk, cold and richness of Cendol, and finally the ineffable taste of Petai. Im sure, those foods did change his perspective. Great job Mark Weins!!

Bab rasa durian merah, kalau makan begitu ja terus (tidak di perap) bagi aku tidak sedap sebab rasanya pahit. I am scheduled to visit Malaysia this year been seven years since my last visit so I will have to rent a car and check out this place, I think that Fermented Durian will actually be healthy for you it would have probiotics from the fermentation process. durian and tempoyak is at the level of extreme acquired taste.. I hope you try the milder form of durian first before you jump in to the actual fruit and its product of fermentation.. some Malaysian cant even stand the smell of it but most of us love it!.. (i just dont want you to ruin your trip to Malaysia and regret to come to this country)

The thing that i notice about mark is when he eat super good food, he will have that so called little laugh after eating those food because the taste is super duper yummy and that is a sign that food makes him happy 😄
