- ● The plain scones themselves are ultra buttery with a hint of sweet tanginess. There are so many flavors you can add directly to the dough, or accompany these with jam or flavored butter. It is extremely tender, flaky, and light. Every bite is heaven! They are super easy. They take less than 40 minutes from start to finish, plus you can make them ahead of time (specific instructions below)!

🧈Ingredients
▪︎Dough
• Bread Flour 70g
• Cake Flour 85g + 1-1/2 tbsp
• Cold Butter 100g
• Granulated Sugar 10g
• Salt 2g
• Baking Powder 1tsp
▪︎Apricot Jam
• Apricot 10pcs
• Granulated Sugar 150g
• Lemon Juice 1tsp
▪︎Glazed
• Powdered Sugar 75g
• Egg White 15g
🧈Instructions
1. Mix apricots and lemon juice in a large pot; add sugar. Slowly bring to a boil, keep stirring until sugar dissolves. Cook and stir until apricot mixture thickens, about 25 minutes, use a hand blender for a smoother jam. Remove from heat and skim foam if necessary. once it's cooled strain the jam and put it in a piping bag. Chill it until ready to use.
2. In a large mixing bowl, whisk together the bread flour, cake flour, baking powder, sugar, and salt. Add cold butter and cut in with a scraper (or your hands) until the mixture resembles fine crumbs.
3. Pour in cold milk fold together gently until the mixture just begins to come together, everything is moist and forms a soft dough. (Do not knead or over mix! don't bother to add extra flour if the dough is tacky. Move the dough onto the plastic wrap and chill it for 1 hour.
4. Flour the working bench and the rolling pin start to flatten the dough then fold it several times. the last fold may vary to the shape that you desire for your scone. Covered with plastic wrap chill again for another 30 minutes.
5. For the glaze: Combine the powdered sugar and egg whites together, mix until fully incorporated.
7. Preheat the oven to 180°C
8. Cut the scone to the way you want them to be. spread the glaze on top and refrigerate for the last time, about 1 hour.
9. Pipe the jam over the scone, Creating a lozenges design.
10. Bake at 170°C for 10 minutes then turn down the heat to 140°C and bake for 20-25 minutes.
