    Recipe :
    Matar Paneer Pulao
    Preparation Time: 20 minutes
    Cooking Time: 20 minutes
    Serves: 3-4
    Ingredients:
    2 cups rice
    4 cups water
    200g paneer
    1 cup shelled peas
    1 medium onion
    2 tbsp ghee
    ¼ cup cashew nuts
    2 bay leaves
    2 black cardamoms
    2” cinnamon
    1 tsp pepper corns
    4-5 green cardamoms
    ½ tsp caraway seeds
    4-5 green chilies
    Salt to taste
    1 tsp lemon juice
    2 tbsp Chopped coriander
    Oil to fry
    Method:
    Wash and soak the rice for 30 minutes.
    Blanch the peas in boiling water to which add ½ tsp salt and a pinch of sugar. Remove and refresh in cold water.
    Cut the paneer in 1/2” cubes and fry to a golden colour. Remove in a bowl of cold water.
    Heat ghee in a large pan. Add the whole spices and allow to splutter.
    Add the sliced oninos and saute till pink. Add the blanched peas and saute for 2-3 minutes. Add drained rice and saute for 3-4 minutes. Add hot water, slit green chilies, lemon juice, salt to taste and cook till the rice is 80% cooked. Add the fried paneer and finish cooking. Rest for 5 minutes and serve garnisged with fried cashew nuts and green coriander.
