    Recipe :
    3 Paneer Bhurji Recipes
    1 - Dhaba style Paneer Bhurji
    Ingredients:
    250g Paneer, cottage cheese
    2 Onions, finely chopped
    2 Tomatoesfinely chopped
    1tbsp Ginger garlic paste
    1 Bay leaf
    2 tsp Red chili powder
    ½ tsp Turmeric powder
    1 tbsp Coriander powder
    1 tsp Dry fenugreek leaves, kasoori methi
    2 Green chili
    1 tsp Jeera, cumin seeds
    1 tsp Garam masala powder
    Coriander leaves - to garnish
    Salt -as needed
    2 Oil
    1 Capsicum
    Method:
    Heat oil in a pan. add the cumin seeds and bay leaf. Allow to splutter. Add the chopped onions and cook till golden brown. Add the powdered spices, mix well and add the chopped tomatoes. Cook till the tomatoes are pulpy. Add chopped capsicum, mix well and then add the crumbled paneer and mix well. Add salt to taste, kasuri methi and mix. Add coriander leaves and serve.
    2 - Methi Matar Paneer Bhurji
    Ingredients:
    250g Paneer
    1 cup finely chopped Onion
    1 teaspoon coriander powder
    salt as required
    1 tsp cumin seeds
    1 cup chopped, rinsed fenugreek leaves ( methi)
    1 tsp red chilli powder
    1 tsp garam masala powder
    1 1/2 tbsp oil
    ½ cup Green Peas
    Method:
    Heat oil in a pan. Add the chopped onions and cook till lightly golden. Add the chopped methi leaves and sauté till the methi leaves are fragrant and lose all their moisture and oil oozes out. Add the giunger parlic paste, green peas and mix well. Add the paneer, salt to taste, red chilli powder and mix well. Cook for 3-4 minutes and add kasuri methi. Remove from heat and serve.
    3 - Shahi Paneer Bhurji
    Ingedients:
    200g Paneer
    2 tbsp Ginger-garlic paste
    Tomatoes puree ½ cup
    2 Onions, finely chopped
    2 Green chilies
    10-12 cashews
    2tbsp raisins
    2tbsp cashew paste
    Coriander leaves
    1 tsp Chilli powder
    1 tsp Garam Masala Powder
    1 tsp Cumin seeds
    1 bay leaf
    2 green cardamoms
    4-5 cloves
    1 cinnamon stick
    2 tbsp Oil
    Salt to taste
    ¼ cup cream
    Ginger julienne and coriander leaves to serve.
    Method:
    Heat the oil in a pan. add the whole spices to medium hot oil and allow to splutter. Add the chopped onions and 1 tsp salt and cook till the onions are a translucent pink. Add the cashew paste and mix well. Add the powdered spices and mix well. Add ½ cup water and allow to simmer for a few minutes. Add cream and mix well.Remove from heat.
    Heat 1 tbsp oil in a pan. Fry the cashew to a light golden colour and the raisins till they bloom.
    Top the plated bhurji with ginger juliennes and fried dry fruits. Serve.
