  • Crack open a can and make this Coca Cola Cake! Soft, chocolatey cake meets rich, fudgy icing in this classic southern dessert made with a not-so-secret ingredient.
    Recipe: sugarspunrun.com/coca-cola-cake/

    1 cup unsalted butter (226g), cubed

    ¾ cup sour cream (190g)
    2 large eggs, lightly beaten. room temperature preferred
    1 teaspoon vanilla extract

    Instructions
    00:00 Introduction
    00:19 Preheat oven to 350F (175C) and spray a 9x13” (23x33cm) baking pan with baking spray.
    00:35 Combine 12 oz cola, butter, and cocoa powder in a medium-sized saucepan and heat over medium-heat until butter has melted (the mixture may separate in the saucepan, that is OK). Bring to a boil, stirring frequently then remove from heat and allow to cool while you prepare your dry ingredients.
    01:37 In a large bowl, whisk together flour, sugar, cornstarch, baking soda, baking powder, and salt.
    01:57 Pour cola mixture into the dry ingredients and stir until smooth.
    02:20 Add sour cream, eggs, and vanilla extract and stir again until the batter is smooth.
    02:54 Pour batter into prepared 9x13 (23x33cm) baking pan and transfer to 350F (175C) oven. Bake for 28-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs or clean. Baking time given is for a metal baking pan, glass or ceramic will take longer to bake (approximately 35-38 minutes).
    Frosting
    03:34 While cake is in the oven or is cooling you can prepare the frosting.
    03:49 Pour cola into a clean medium-sized saucepan and cook over medium-high heat until it has reduced in volume so that it is between ⅓ and ½ cup (79-118ml). You will need to carefully pour the cola into a heatproof liquid measuring cup to check if it has been reduced enough.
    04:47 Once cola has been reduced enough, add butter and salt and continue to cook over medium/low heat until the butter is melted (if the mixture looks a bit separated this is fine, it will come together in the next step).
    05:13 Remove from heat and add cocoa powder, whisking until smooth.
    05:22 Add powdered sugar and whisk again until frosting is smooth and lump free and immediately pour/spread over warm cake.
    05:56 Allow cake to cool and frosting to set before slicing and serving. This cake is great served by itself or with vanilla ice cream!
    Notes
    Cocoa Powder
    Do not substitute Dutch-process cocoa powder, which has a stronger flavor and will overpower the already subtle flavor of the coca cola.
    Storing
    I always store this cake directly in the pan that it is baked in. It will keep, covered, at room temperature, for 3-5 days. The cake may also be refrigerated but keep in mind that this will dry out the cake. Coca Cola Cake may also be frozen (tightly covered) for several months.

      The Coca Cola cake at that restaurant is not the real Coca Cola cake, it tastes just like plain chocolate cake and in my opinion, not good. I have been making Coca Cola cake for about 45 years and my Mama before me. This recipe is similar but not. My recipes calls for buttermilk, and only 8 ounces of Coke. And for the icing, about 4 TBS of Coke and only 2 cups of sifted powdered sugar as well as butter, vanilla and cocoa powder, we prefer more cake than icing. But, this is the best cake ever, so delicious!

    Question. When the toothpick has a few moist crumbs do you add another minute to the time or leave it in the pan a little longer to continue baking as it cools? I try to not have it under bakes but I don't want to over bake it as well.

    • @SugarSpunRun
      @SugarSpunRun  Před 2 lety +1

    Would this recipe hold up to being flipped out of the pan like you would for round layer cakes? I want to make a sheet cake for my daughter’s birthday but I want to be able to frost the sides too. I feel like you can get more servings out of a rectangular cake lol. Any suggestions?

    • @SugarSpunRun
      @SugarSpunRun  Před 4 měsíci

      The cake should hold up to being flipped out as long as you are really careful with it. The frosting is pretty thin until it sets.

  • @juliemello505

    Can this recipe be made as a round layered cake vs a 13x9 baking dish? If so, what sized pans and how many layers will it make?

    • @SugarSpunRun
      @SugarSpunRun  Před rokem +1

      The cake will bake in 2, 8 or 9 inch pans. The frosting will be a bit too runny to really work on a layer cake though. It will likely all just slide off.
