- Coca-Cola Cake
2 sticks of oleo or butter
3 tbsp cocoa
1 c Coca-Cola
2 c sugar
¼ c buttermilk
2 eggs
1 tsp soda
1 tsp vanilla extract
1 ½ c miniature marshmallows
Bring butter, cocoa, and Coca-Cola to a boil, then pour over the flour, salt, and sugar. Add buttermilk, eggs, soda, vanilla, and mix well. Add marshmallows last. They will float to the top. Pour batter into a well-greased and floured oblong cake pan. Bake at 350°F for 45 to 50 minutes. Ice cake while hot.
Icing
1 stick of oleo or butter
3 tbsp cocoa
6 tbsp Coca-Cola
1 box confectioner’s sugar (16 oz)
1 c pecans
Heat to a boil the butter, cocoa, and Coca-Cola. Then add the confectioner’s sugar and pecans. If this is too thick add a spoon or two of water.

You said you are 91 years old? My dad, who just passed away in December 2020 was 91 years old & he looked just as young & wonderful as you do. He was born in North Carolina & lived there with his parents & 8 siblings. They moved up to New York when he was a teen because my grandfather found work at the Alexander Smith Carpet factory here in Yonkers NY where my brother & I were born and raised. This cake looks so delicious! I've never had this cake before, but I've always wanted to try it. I can't wait to make this cake. God bless you!

@@southerncooking thank you Miss Faye! If it wasn't bad enough losing my dad, my husband also passed away 3 months before I lost my dad. He had just turned 62. I've been so depressed ever since. We were married for 38½ years. I will make this cake for my brother & nephew. I'm sure they'll love it as much as I will. God bless & stay well!
