- COCA-COLA CAKE
1 cup (2 sticks) Butter
3 tablespoons Unsweetened Cocoa Powder
1 cup Coca-Cola at room temperature
Melt butter in a saucepan with cocoa and cola. Bring to a boil and let cool a bit.
Meanwhile, mix in a bowl:
2 cups All Purpose Flour
2 cups Sugar
1 teaspoon Baking Soda
Pour the Coca-Cola mixture over the dry ingredients and whisk together well. In a measuring cup pour the following:
1/2 cup Buttermilk
2 Eggs
1 teaspoon Vanilla Extract
Whisk together and pour into the cake mixture and stir well.
Now add: 1-1/2 cups Mini-Marshmallows
Stir together and pour into a buttered 9 inch x 13 inch baking dish and bake at 350 degrees F for 30 to 40 minutes until a toothpick inserted in the middle of the cake comes out clean or crumby.
FROSTING RECIPE:
1/2 CUP (1 STICK) Butter
2 tablespoons unsweetened Cocoa Powder
6 tablespoons Coca-Cola
1-pound Box (16-ounces) 4 cups Powdered Sugar
Melt butter in a saucepan with cocoa and cola. Bring to a boil. Remove from heat. Slowly add Powdered Sugar and whisk together well. Pour over the warm cake. Let cake cool completely (if you possibly can) and enjoy!
OPTION: add 1 cup chopped Pecans to the frosting before pouring over the cake

First time I had a coca cola cake was at a Cracker Barrel when having lunch with my sister. You could order a whole or half of one from Cracker Barrel then, but I don't know about now. We went home and eventually made one ourselves. Very delicious and I'm glad to see you have it posted here, Amy. Thank you!

A REAL SUTHERN CAKE!!!!!!!, IT looks like is going to be good, but I would only use a cup of sugar, I would use a zero-sugar coke, one stick of butter and 3/4 cup of light olive oil, or coconut oil, I would substitute the marshmallows with any nuts of your choice and 1/2 cup of raisons or 1/2 dates. LOL, the frosting???????? No!!!! I would just put a ganache!!!!!!!! I try to avoid going to go the emergency room, LMAO!!!!!!!!!!!!!!!! I also try not to induce diabetes, YEP., lol. You will enjoy my suggestions, am chef with a conscience!!! But I love your video and you!!!!!!!!!!!!!!!You are a sweetheart.

Looking forward to watching this in the morning. I skimmed the recipe, and it is nearly identical to the one I was given years ago. I think the only difference is that mine contains mini marshmallows. Either way it's a delicious, moist cake.

I hope you laugh at this as much as I did, but near the end of your video when you are telling where each of your family members are I thought you said Bryson has head lice…😮. I thought…No…she didn’t just say that. I know Amy has better sense than that…So I turned up the volume and replayed it. Oh my goodness 😂 it must have been the teacher comin back out in me. Ooh wee it looks delicious I want to make this cake, but I don't have any marshmallows, do I have to use them.
You certainly do not have to use the marshmallows. I've had it without them but one time get you some because they make a gooey surprise in the cake. 😊❤💜
The frosting won't be gritty if you take off heat for a couple minutes before adding powdered sugar😊
