    Sour cherry pickle is one of the delicious and popular types of pickles in Iran that is prepared in the summer season. Perhaps many people have not heard the name of this colorful and very tasty pickle, but you should know that this pickle is considered one of the luxurious and very delicious Iranian pickles that is usually served in high-end restaurants alongside various traditional Iranian dishes.
    Ingredients for sour cherry pickle:
    - 1 kg sour cherries
    - 1 cup water
    - 3 cups vinegar
    - 1 tablespoon sugar
    - 1 tablespoon salt
    - 1/2 teaspoon caraway seeds
    - 8 mint leaves
    To prepare the sour cherry pickle, first pour vinegar and water into a suitable pot and place it on heat. Then add sugar and salt to the pot and wait for the vinegar and water mixture to boil and for the salt and sugar to dissolve completely.
    After the vinegar and water mixture has boiled, wait for 2 minutes until bubbles form, then turn off the heat under the pot and let the vinegar cool completely. Meanwhile, we move on to preparing the sour cherries.
    Remove the stems from the sour cherries, wash them, and then drain them in a colander to remove excess water. Make sure that the sour cherries are completely dry and have no moisture, as moisture can cause the pickle to mold.
    At this stage, pour the sour cherries into a suitable glass container, then add caraway seeds and mint leaves on top of the sour cherries. Now pour the cooled vinegar mixture over the ingredients.
    The level of vinegar should be at least one finger above the surface of the pickles. Once the pickle is ready, tightly close the lid of the jar and leave it at room temperature for two days, then transfer it to the refrigerator.
    After 2 weeks, the pickle is ready to be consumed, and after each use, make sure to tightly close the jar lid. This pickle, like other pickles, has a long shelf life and can remain healthy and high-quality for up to 2 years if stored in a jar with a tight lid in the refrigerator.
