How to Make Fermented Cherries

  • Fermented cherries are salty, tangy and super savory: kind of like the love child of a maraschino cherry and an olive. Which is probably why one of our favorite uses is plunked into a cocktail. If you’re looking for something sweet: make pie. But if you want to take a walk on the savory side these fermented cherries are excellent on a cheese board, as a tangy pizza topping (think white pies) and as a fun twist on a cocktail garnish.

    When fermenting your cherries, how much salt did you add? It looked like it was about 1 Tblsp., but I may be wrong. Thanks for sharing your

    Is there a reason for adding the salt directly to the cherries, and then later topping off with regular water (as opposed to putting the unsalted cherries into the fermenter and then topping them off with a salt water solution)?

      We used bing cherries for this recipes but other cherries (like rainier) would be great too! You just want them to be a bit firm and not over ripe.

    Could you ferment cherries whole, without the stems?

      Great question. We definitely recommend pitting them. Cherry pits are poisonous so definitely better to leave them out from the start.

    Can we firment Indian jujubi instead of cherries?

      Because of the sugar content they might not work well for fermentation--it would probably turn alcoholic too quickly.

    how long do the cherries last when they have been fermented? can they be kept for a long time?

      They can last weeks if not months in the fridge before they go bad or mold, they may just get more sour than you’d like. :)

      We used sweet cherries but imagine sour would be totally delicious too! And will try it out as soon as we get out hands on some.

      Sweet cherries will ferment faster, because the bacteria feed on sugars.

    Would frozen cherries work for fermenting?

      You could certainly try! However, the process of thawing and fermenting will probably result in more of a mushy/super soft consistency.

    Have you ever tried pickling cherries with both salt and sugar?

      We recommend using just salt while fermenting them. The fruit already has a high sugar content, and sugar wants to turn into alcohol. But sprinkling some sugar on them in dishes (like in a pie!) sounds delicious! 🍒 Have you tried it?

    I lacto-fermented sweet Washington cherries. They were genuinely one of the worst food experiments of my life. They do not go into cocktails, nor anything else entering my mouth. I eat almost anything, but these were awful. If you want to experiment, go for it, but don't waste a whole jar of cherries the way she did in this video.
