My first though was "I didn't know you could make 'shine out of cranberries"
LOL!! 😂😂😂
All you need is fruit & sugar
🍷🤡👍
So interesting! Please keep the nutrient dense thanksgiving recipes coming🙏
Will do!!
I really appreciate your thorough understanding and teaching very much!!!
Thanks for the wonderful demonstration! The fermented cranberries look so festive :-)
Mary! How did you know I just bought a bag of cranberries today!?
I did your recommended 48 hour soak for beans-WOW! What a difference! I have not been able to eat beans for years with so much intestinal PAIN, but these didn’t bother me at all
I’m going to make this. I’ve made your Giardinera, fermented carrot sticks, and cucumber pickles, baby beets came out particularly well! All your videos and recipes are super helpful! I’m planning on preserving citrus this winter, too!
So happy to hear this!! 🤗🤗🤗
Can you Water bath this and keep it in the pantry or make several pints?
your just a joy to listen to...................what a beautiful personality ! - thank you for your wonderful recipes
Thank you so much!
YAYYYYYY! Thank you, Mary!!
Yay!! So happy you like this!! Love, Mary
Love the jelly jar idea as a weight, smart! Looking forward to making this for the holidays.
Thank you Mary 🍃
This looks delicious my friend. Learning so much about fermenting.
Thank you, Mary 👑!
Well done !!👍
You are the best. Thank you for doing these videos. 💕🙏🏻😊
Really appreciate the time stamps! Thank you!
You could also mix some of it with your fermented mustard for a nice cranberry mustard to top your turkey or Tofurkey whatever the case may be
Looks delicious. Hopefully I can make some to bring to holiday family gatherings. Usually we celebrate with Mom (mine) and Dad (Lee's). Will have to pick up some Spring water as well. Some of the bottled water is from them but others are from the water company. We're doing well.
Thank you very much
Hi sweet Mary your very nice. thanks for sharing this God bless you
Thanks Mary
Mary! Thank you so much for your recipes. I made another awesome recipe of yours! My fermented cranberries were "done" today. I pulsed them in the food processor very lightly, added sugar and orange juice. I placed it in the refrigerator and can't wait to have it this Thursday, Thanksgiving day. I also saved the cranberry juice in a glass bottle and plan on adding it to my seltzer water. Aaaaaaand, I have whey in the refrigerator and cream cheese...it was delicious this morning on Rye toast. You are a wealth of information and you are so peaceful to watch. Thank you so very much.
Exciting!!
Yes indeed! Love, Mary
I made the no cook ferment, using honey for sweetener. This is absolutely delicious!!! Thank you, Mary☺
Omg, you’re Magnificent! I now have so man fruits in mind to ferment. Thank Mary! 🌺☕️☕️☕️☕️☕️☕️
Thanks
Wonderful
Can you do a video showing how to ferment the cranberry juice and turn it into wine??
Your an angel. Nice vid
Oh this sounds wonderful! I'm going to make this, this weekend.
I already made your fermented cherry tomatoes 😋 I've done the kraut and pickles before but I love trying new things. Thanks so much!
Wonderful!! ❤️🤗❤️
Thank you nice lady. You are very inspiring and helpful. Great video.

Wonderful!! ❤️🤗❤️
HELLO SWEET FRIEND. SO GLAD TO SEE YOU. HOPE YOU HAVE A GREAT WEEK-END.
Thank you! You too!! Love, Mary
Meant to type “so many” fruits to ferment. Some of your recipes will make it to my Thanksgiving Table. Bless you Mart! 🌺
Would a food grinder, like my Kitchen Aid attachment, work well to break up the cranberries?
Wonderful video, as a New Englander, who grew up near the cranberry bogs, I love this time of year!
Hi Don. Just be careful - you don't want the cranberries chopped up too much at the beginning of the fermentation process because they will quickly ferment into cranberry alcohol! LOL!! Love, Mary
@@MarysNest Thank you! I had thought about the smaller grind being harder to keep submerged, but hadn't considered how the greater surface area would speed up the fermentation! You're so sweet to deal with us rookies! Thanks again
I just ferment my cranberries by mixing them in when making sauerkraut. Healthy, easy and taste great 😋
What a great idea!

I can't believe how thin you look. I watched your video on dieting. Very informative. And partial fasting is something I read about too.
You are very kind. I still have a far way to go! Love, Mary
Hello Mary- Just went into this site and love this fermentation recipe! I have everything except the sea salt. Would it be better to slightly undeferment, if unsure? This is a great way to get my started! Thank you for sharing this with us. ~ Diane
Hello Mary, thank you for your superb recipes. I watch you from UK for several years. Could I use this method to make a fermented strawberry jam for exemple? or any fruit jam fermented?
Great! Looking forward to it! I think this should be called cranberry relish. Does it get more like sauce if cooked?
Hi Christine, If you cook it and then cool it and then ferment it, yes, it is more like traditional cranberry sauce. This is a raw fermented cranberry sauce and yes, is similar to a relish in many respects. Love, Mary
Hi, Mary! I followed your process using the masontop fermenting lid and weight. It's been three days. While there are some bubbles collected on top, I haven't seen the "action" that we're supposed to catch to know its time to strain and chill. I'm pretty sure I missed the lacto phase because it now has a mild yeasty smell, like my bread dough. Is there anything I can do with these cranberries? Thank you!
Could please explain why fermenting is better for us?
Hi Mary, Fermented foods are rich in probiotics which aid gut health and improve digestion. Love, Mary ❤️🤗❤️
Can't wait to try. I don't imagine whey powder can be reconstituted and used? Do you make any 'raw food dishes?' Became a fad in the 90's but wow, when I ate at some of the raw food restaurants in New York; did I feel good.
Hi Dianne, You are correct. Whey powder has been heated so it is not rich in probiotics. As to raw food - ferments are considered a raw food so maybe those are a good option. Love, Mary
I was wondering if you could freeze the finished cranberry sauce. This is going to be my first attempt at fermenting food. I so far have only done kefir and kombucha. But this recipe looks pretty easy and I love homemade cranberry sauce.
I see two coffee pots back there. That explains your energy on the video :)
LOL!! One is for de-caf for my sweet husband and one is for caf - for me! :-) Love, Mary
Lol I've noticed that too, thought one might be for decaf or tea water😊
For “2nd generation” ferments where you are using the brine from this, do you have to use the whey or can you just use the brine?
Can I use something other than whey to start the ferment?
Can you use the whey from kefir for the starter?
Would using whey left over from cheese making work instead of yogurt?
Hi Julie, Great question. Cooked whey that has not been cultured (such as with cheese making) will not work. You need whey that come from a cultured dairy product. Love, Mary
Could you puree it, mix it back with some brine, add room temperature gelatin and mold it?
hello what if you are Dairy free is there anything else we can use besides the whey from regular yogurt. Love this very much. thank you for sharing God bless stay safe and have a wonderful day
Yes, you can use a bit more salt - 1 tablespoon. Or you can use the brine from a previous ferment. Love, Mary
@@MarysNest hello that is awesome than k you for helping me 🌹☕💜🥧💖🎉❤️🍁💙❄️🦃🌰🌰🙏🙏🙏
☕️when should you add the nutmeg, cinnamon stick etc. Love this session. Cranberries are one of my favorite fruit so always looking for new ways to use this amazing fruit
Hi Diane, You can add those “extras” at the same time you add the cranberries for the fermentation process. Love, Mary
@@MarysNest ☕️super. Thanks so much for responding. I’m also using your natural pine cleaner using organic, large rosemary bundles of herb from my raw milk farmer who also has veg and herbs.
Mary, I love your bone broth recipe. I have a question, can I still use the beef bone to make a bone broth after we bake the bone and ate the bone marrow. Is there still some nutrition left for Beef bone broth without bone marrow.
Thank you!
Definitely :-)
Can you do this with any fruit? Apples, pears, ect..?? 🤔
Definitely 🤗
is that liquid in the Tofu package whey ??
Hi Mary. Thank you for the recipe. Can I use frozen cranberries for that? Thank you
I'm giving it a go with frozen since that's what I had on hand. The frozen ones so far have given up quite a bit more juice in the smashing process than Mary's did, so I think I will just add less water to compensate. I'll try to remember to report back in a few days and let you know how it turns out!
I think it might work. Did you try it? Keep me posted. Love, Mary
I have Whey from clabbered raw milk. Can I use this?
Definitely 🤗
Fermented vegetables can keep several months to a year. I wonder if there's a way to keep the ferment longer than few weeks, without going to alcohol stage.
How about things for DIEBETICS
Can you ferment dehydrated cranberries?
Hi Carole, Interesting question. I’m not sure. It’s worth experimenting with a small amount. Love, Mary
Would a splash of kefir work?
i made cranberry sauce and put it in the refrigerator and forgot about it lol. today i took it out and i think it's in the alcohol stage atleast it smells like it. do you think it's still edible tho?
♥️
We don’t want cranberry hooch! At least, I don’t 😁
LOL!! Gary!! I knew some folks would!! Love, Mary
Might make Thanksgiving a little more interesting 🤔 😄😆 just kidding
Oh, I have friends who made a cranberry wine I just loved! Was fantastic with the Turkey I smoked and the traditional sides . 😁
Hmm, cranberry wine sounds delicious 😋. I don't have wine equipment, but i have made some great cranberry ginger kombucha and keifer water 😉. I wish for a smoker for a Christmas present 🎁 😀
Some of us need to avoid alcohol for health or religious reasons, though!
Can I get the whey from when I "make" the buttermilk with vinegar?
That's a great question. It "may" work but I would recommend using a raw vinegar to make the buttermilk so as to guarantee that you have some good bacteria. Love, Mary
Is there a way to make this with just salt and without the whey?
Yes, you will need a bit more salt though. I would increase it to 1 tablespoon of course salt. Love, Mary
Do you think food bought store ferments can still go into the alcohol stage?
Hi Dianne, Great question. I think it is unlikely because they have been refrigerated and generally have a “best by” date. Love, Mary
Hi! Merry Christmas blessings, everyone!
I made (or tried) apple vinegar in the fall. I used whole chopped apples. The fermentation slowed after a few days and i added a little more sugar. Stirred every day. Temps cooled at my house so it took longer but i tested with pH strips and it was sold 3 when i decanted it. It never really tasted like vinegar but wasn't bad. I put in pantry and forgot about it. Just checked and had the white bead-like particles on it and smelled like acetone-nail polish remover. I dumped it 😝😪. So disappointed. Any suggestions as to why that might have happened? Just curious.
Hi Sandra, So sorry to hear this. As I have shared with others...ferments can be very persnickety! The smell was from an over development of bacteria versus yeasts. Putting it in the fridge could have helped. Bacteria and yeast do not like cold temps but yeast does better in the cold than bacteria so it would have begun to proliferate faster than the bacteria and the aroma would begin to change. Try again. Fermentation is part art, part science...and A LOT of trial and error. Love, Mary
@@MarysNest thank you thank you thank you! Your videos have given me the encouragement and info to have confidence in trying fermenting. Thank you for sharing your wisdom and knowledge with us! Much love and many blessings! 💜
Can you get whey from a tub of sour cream? The container always has that whey or liquid on top before you mix it in, or how about the whey you get from making your own butter? Or is plain yogurt the only place you can get usable whey for this recipe? Thank you for teaching us how to ferment cranberries. I have yet to try to successfully ferment anything yet, I did try pears and apple scraps last year but had to throw them out because although they smelled ok, they did not look right. I want to try again this coming year because I know how good it is for your body. Many Blessings to you always, and Merry Christmas.!!

I love you
Can I ferment cranberries with the milk kefir whey if I don't have yogurt whey?
I will let you know as that is all I had on hand and it's 30 miles to town. The kefir whey settled to the top. Just poured off what was needed. Used Lifeway brand plain whole fat.
Please heeeelp Mary. How can I neutralize the sour taste of lacto fermented veggies. I want the fermentation but hate the sour taste. Can I try soaking it in baking soda brine?
Oh dear! Yes, they are tangy. It may not be the best food for you. You can try adding a bit of baking soda but possibly a bit of sweetener might help. Love, Mary
@@MarysNest No I absolutely believe in fermented foods. Just have to get past my taste barriers. Will follow up on your recommendations. Thanks for replying. Please be so kind to let me know if you find anything that can be of help in this area. Many thanks. Frik
MARY, THERE ARE A COUPLE OF STUFFED CABBAGE RECIPES THAT I HAVE BEEN LOOKING AT, BUT WHEN I TRIED THEM, WELL, LET'S JUST SAY, THE GARBAGE ATE BETTER THAN I DID THAT NIGHT. DO YOU HAVE A RECIPE FOR STUFFED CABBAGE ? IF SO, COULD YOU SHARE IT ? PLEASE ? THANK YOU. OOPS, I MEANT STUFFED CABBAGE ROLLS.....SORRY.
Hi Jeni, I don’t have a recipe for those. I will need to look around and see what I can find. Love, Mary
Hi Mary.
Whole Foods has reversed their decision about poppy. There was such a backlash! PTL💕🙏🏻😊
Wonderful news! Thanks for sharing!! Love, Mary
I like walnuts in my Cranberry Sauce. When would I add the nuts? Before or after it is fermented?
Hi Maureen, You will want to add the nuts after the fermentation process. Also, you may want to consider soaking the nuts overnight in salted water then draining them and rinsing them. This will help increase their digestibility. Love, Mary
@@MarysNest Thank you!! Yes, I always soak and dry my nuts and seeds. I'm going to give this a try.
How many cups is 1 pound of cranberries? They’re sold in 1 pound packages in the stores.
Can fruit be fermented without whey?
Hi Ann, Yes, it can. You might need a bit more salt. And you will want to watch it carefully because with out the whey to jump start things, you want to make sure that you "catch" your ferment during the lacto-fermentation stage (when you see a lot of nice bubbling). It may take a day or two longer than the 3-4 usually days. But as I said, keep a close eye on it so it does not jump into the alcohol stage. However, that said, if you can ferment your fruit the first time using whey and then save that brine - and then use that brine (which will contain very little whey) to use for all your future ferments, you can leave out the whey at that point. However, if you need to completely eliminate dairy in your ferment, you can just go with the salt. I would recommend using 1 tablespoon of coarse salt as opposed the the 1/2 tablespoon that I used. And more "howevers"...LOL!! You may want to consider making a savory chutney instead of a just straight cranberries. With a savory chutney you can have success when eliminating all the whey. Just mix your cranberries with some veggies - onions, celery, etc., add your salt, and then allow it to ferment. It will work great. Hope this helps. Love, Mary
Brine from fermented vegetables would also jump-start your fruit ferment! The lactobacillus organisms would be present!
@@sandrastreifel6452 - Yes, great tip! Just make sure to taste it first to check that the flavor isn’t too strong. Love, Mary
Ma'am can I replace cranberries with plums???
Interesting. I have not tried it but I think it would work. Love, Mary
Can you ferment dried fruit?
Great question. I have not tried it but I believe you can. But because of the high sugar content you need to really watch it. It can turn to alcohol and then vinegar very quickly. Love, Mary
@@MarysNest You being Prof. Fermentation might be the perfect person to try this and give feedback? Does it make any sense trying to do this? It is just that dried fruit have such an unique taste?
@@thegiftandproductschannel2818 - I have found that using dried fruit to make vinegar works great. But I will have to see if I can “catch” it next time in the lacto-fermentation phase. Stay tuned. ;-) Love, Mary
I can't have milk.
I want the boozy cranberry sauce. Hahaha
What's wrong with the alcohol stage?
I put mine in a plastic zip lock and used a hammer wrapped in a washcloth with a rubber band
You could have said this in 5 minutes
