    You could also mix some of it with your fermented mustard for a nice cranberry mustard to top your turkey or Tofurkey whatever the case may be

    Looks delicious. Hopefully I can make some to bring to holiday family gatherings. Usually we celebrate with Mom (mine) and Dad (Lee's). Will have to pick up some Spring water as well. Some of the bottled water is from them but others are from the water company. We're doing well.

    Mary! Thank you so much for your recipes. I made another awesome recipe of yours! My fermented cranberries were "done" today. I pulsed them in the food processor very lightly, added sugar and orange juice. I placed it in the refrigerator and can't wait to have it this Thursday, Thanksgiving day. I also saved the cranberry juice in a glass bottle and plan on adding it to my seltzer water. Aaaaaaand, I have whey in the refrigerator and cream cheese...it was delicious this morning on Rye toast. You are a wealth of information and you are so peaceful to watch. Thank you so very much.

    Would a food grinder, like my Kitchen Aid attachment, work well to break up the cranberries?

      Hi Don. Just be careful - you don't want the cranberries chopped up too much at the beginning of the fermentation process because they will quickly ferment into cranberry alcohol! LOL!! Love, Mary

      Hi Christine, If you cook it and then cool it and then ferment it, yes, it is more like traditional cranberry sauce. This is a raw fermented cranberry sauce and yes, is similar to a relish in many respects. Love, Mary

    Hi, Mary! I followed your process using the masontop fermenting lid and weight. It's been three days. While there are some bubbles collected on top, I haven't seen the "action" that we're supposed to catch to know its time to strain and chill. I'm pretty sure I missed the lacto phase because it now has a mild yeasty smell, like my bread dough. Is there anything I can do with these cranberries? Thank you!

    Can't wait to try. I don't imagine whey powder can be reconstituted and used? Do you make any 'raw food dishes?' Became a fad in the 90's but wow, when I ate at some of the raw food restaurants in New York; did I feel good.

      Hi Dianne, You are correct. Whey powder has been heated so it is not rich in probiotics. As to raw food - ferments are considered a raw food so maybe those are a good option. Love, Mary

    I was wondering if you could freeze the finished cranberry sauce. This is going to be my first attempt at fermenting food. I so far have only done kefir and kombucha. But this recipe looks pretty easy and I love homemade cranberry sauce.

      Hi Julie, Great question. Cooked whey that has not been cultured (such as with cheese making) will not work. You need whey that come from a cultured dairy product. Love, Mary

      I'm giving it a go with frozen since that's what I had on hand. The frozen ones so far have given up quite a bit more juice in the smashing process than Mary's did, so I think I will just add less water to compensate. I'll try to remember to report back in a few days and let you know how it turns out!

      Hmm, cranberry wine sounds delicious 😋. I don't have wine equipment, but i have made some great cranberry ginger kombucha and keifer water 😉. I wish for a smoker for a Christmas present 🎁 😀

      That's a great question. It "may" work but I would recommend using a raw vinegar to make the buttermilk so as to guarantee that you have some good bacteria. Love, Mary

    Hi! Merry Christmas blessings, everyone!
    I made (or tried) apple vinegar in the fall. I used whole chopped apples. The fermentation slowed after a few days and i added a little more sugar. Stirred every day. Temps cooled at my house so it took longer but i tested with pH strips and it was sold 3 when i decanted it. It never really tasted like vinegar but wasn't bad. I put in pantry and forgot about it. Just checked and had the white bead-like particles on it and smelled like acetone-nail polish remover. I dumped it 😝😪. So disappointed. Any suggestions as to why that might have happened? Just curious.

      Hi Sandra, So sorry to hear this. As I have shared with others...ferments can be very persnickety! The smell was from an over development of bacteria versus yeasts. Putting it in the fridge could have helped. Bacteria and yeast do not like cold temps but yeast does better in the cold than bacteria so it would have begun to proliferate faster than the bacteria and the aroma would begin to change. Try again. Fermentation is part art, part science...and A LOT of trial and error. Love, Mary

    Can you get whey from a tub of sour cream? The container always has that whey or liquid on top before you mix it in, or how about the whey you get from making your own butter? Or is plain yogurt the only place you can get usable whey for this recipe? Thank you for teaching us how to ferment cranberries. I have yet to try to successfully ferment anything yet, I did try pears and apple scraps last year but had to throw them out because although they smelled ok, they did not look right. I want to try again this coming year because I know how good it is for your body. Many Blessings to you always, and Merry Christmas.!!

      I will let you know as that is all I had on hand and it's 30 miles to town. The kefir whey settled to the top. Just poured off what was needed. Used Lifeway brand plain whole fat.

    I like walnuts in my Cranberry Sauce. When would I add the nuts? Before or after it is fermented?

      Hi Maureen, You will want to add the nuts after the fermentation process. Also, you may want to consider soaking the nuts overnight in salted water then draining them and rinsing them. This will help increase their digestibility. Love, Mary

    Can fruit be fermented without whey?

      Hi Ann, Yes, it can. You might need a bit more salt. And you will want to watch it carefully because with out the whey to jump start things, you want to make sure that you "catch" your ferment during the lacto-fermentation stage (when you see a lot of nice bubbling). It may take a day or two longer than the 3-4 usually days. But as I said, keep a close eye on it so it does not jump into the alcohol stage. However, that said, if you can ferment your fruit the first time using whey and then save that brine - and then use that brine (which will contain very little whey) to use for all your future ferments, you can leave out the whey at that point. However, if you need to completely eliminate dairy in your ferment, you can just go with the salt. I would recommend using 1 tablespoon of coarse salt as opposed the the 1/2 tablespoon that I used. And more "howevers"...LOL!! You may want to consider making a savory chutney instead of a just straight cranberries. With a savory chutney you can have success when eliminating all the whey. Just mix your cranberries with some veggies - onions, celery, etc., add your salt, and then allow it to ferment. It will work great. Hope this helps. Love, Mary

      Brine from fermented vegetables would also jump-start your fruit ferment! The lactobacillus organisms would be present!

      Great question. I have not tried it but I believe you can. But because of the high sugar content you need to really watch it. It can turn to alcohol and then vinegar very quickly. Love, Mary
