so I can use the kambucha liquid I do notice I forgot it and it got so strong that is not drinkable but maybe could be good for fermentation of fruit. we have a lot of grapes it could work too right?
Yes there is a fine line between creating a ferment and creating alcohol! Lol. I have never tried it with grapes, but I do not see why not :)
If you add the liquids to the honey gradually, while stirring between pours, it should make dissolving the honey much easier.

Yes it's a quick ferment! Then into the fridge to halt/slow the fermentation process.
Hello, is the honey necessary? Or can I leave it out? And test the berries often to make sure it doesn't turn to alcohol. I'm super new to this and hope I make sense lol. THANKS FOR SHARING! (Using pomegranate for a facial mask)
Thanks for your question! In full transparency I have never fermented fruit without the honey (you could also use cane sugar), so I have no idea how it would turn out. Everything I read said to use sweetener as a way of kickstarting the lacto-fermentation process so I have always gone with that.

Thank you so much! Yes absolutely, as I mentioned in the video you can substitute kombucha or water kefir as your kick starter for the fermentation process. For sweetener I would use organic cane sugar if you do not consume honey!

What do fermented fruits taste like? How does the flavor change? Are they still sweet or more savory? I'm very curious!
They have a zip to them... that's the best way to describe it. It's a very short ferment so there is still a sweetness to them for sure. Zip is the best way to describe it... almost tangy? I loved it.
@@SpiraeaHerbs Thanks for your response! I'll certainly have to try it! Do you find you prefer using whey or brine to ferment? Also, if you use brine, does it end up salty? Salty fruit doesn't seem that appealing. :-D
@@GpD79 I definitely prefer using whey. My next choice would be kombucha or water kefir. I want the fruit to be sweeter and it would definitely be salty if you used brine.
Are strawberries the Only no-no fruit? I wonder about cloudberries/bakeapples?
I am so sorry! I didn't get a notification about this comment and I totally missed it. I haven't worked with cloudberries before... what are they similar to? If they are closer to a raspberry you are probably fine.
I have a lot of raw cranberries which I usually make a raw relish with. Would you suggest running them a bit in a food processor before fermenting? I doubt whole raw cranberries will mash much. I’m getting read to ferment some fruit which I’ve never done before. I have those mason fermenting tops which I love so much I sent a box to my daughter as a gift!
Having never done it before I would just be guessing. Personally I would ferment them whole and them ask to make the relish after I've fermented them for a few days.

@@SpiraeaHerbs . Thanks. I’ll get back to you but it may be awhile……garden demands a lot of attention now. Lol. Dehydrating. Water distilling. Yada yada. I’m retired and busier then ever. But it’s all good. The cranberries are frozen and I’ll start with fresh fruit in season for now.
my guess is... if you just added water to cover the cherries, it would have worked just fine. Might have taken a few days extra. Also wondering about adding the contents of a capsule of probiotic. Gonna be looking out for natural yogurt to get some whey from. Thanks for the tips.
Kombucha or kefir can be used too. Just adding water results in an alcohol type fermentation as is my experience.

So, I think I'll mention that whey is actually very easy to come by, even if you don't make your own yogurt. I buy a high-quality, whole milk, plain yogurt. I prefer grass-fed, non-homogenized. Organic is great if you can get it. I empty the yogurt into several layers of cheesecloth, forming a "bag" which I hang a knob on a cupboard door over a bowl. I usually use heavy duty rubber bands, but anything will work. I let it hang overnight, being careful not to squeeze the ball. The liquid should be yellowish clear, not milky. I put the resulting whey into a pint mason jar and store it in the fridge for my fermenting projects. I use what's left in the bag as a cream cheese substitute. I've even mixed high quality cream into the yogurt a few days before separating the whey so the "cream cheese" is even creamier. It took me a while to find the right yogurt to make this so that it tastes right.

If you were making basic recipe 2 T whey , 1/4 t salt, 2 T honey , 3 T water; how much kombucha or water kefir would you add?
Here is the link to the recipe that I mentioned in the video. It's about 2tbsp. However, I did find I had to make a larger batch of the liquid in order to fully submerge the berries.

Can you use frozen cherries? That would be convenient.
I personally haven't tried it, but I don't see why it wouldn't work. But it might change the texture.
Could this be done with blackberries? 😊
I've never tried it so I'm not sure. I know strawberries are definitely a no. But it's worth trying with a small batch.
What happened to using fermenting liquid from another actual ferment?
You can definitely do that as well! Just something to kick start the fermentation process.

Hi… i tried this recipe 2 days ago but nothing is happening… i followed the recipe exactly. I used blueberries
What is the ambient temperature like in your home? If its very cold, it might take a few more days. What did you use as your fermentation medium? Kombucha?
@@SpiraeaHerbs i think the problem is the honey. I used in previous ferments brown sugar and that was no problem. Honey don’t ferment easily
@@Jocke_1979 Agreed. In most cases honey should be avoided, but the sugar in the berries should have been enough to kick start that fermentation. What ferment liquid did you use?
