ROME, ITALY - Welcome to the great city of Rome, and today we’re meeting up with local Chef Heros, who will take us to the market to buy some ingredients and then go cook one of the best Italian pastas I’ve ever had!
Say hello to Chef Heros de Agostinis ( / heros_deagostinis ) - He’s the Executive Chef at Anantara Palazzo Naiadi Rome Hotel (maps.app.goo.gl/5zgZpzDcMFnGt...) in Rome and also of INEO Restaurant - a fine dining Italian restaurant with his own blend of dishes. He’s extremely talented and passionate about food, culture, traveling, and learning about foods from around the world.
After spending many years abroad Chef Heros came back to Rome where he’s from! We had the honor for him to cook us an incredible pasta, one of the best I’ve ever had: Amatriciana, but with a little bit of an extra twist!

That was absolutely perfect. Mark, the pasta, the atmosphere the desserts Rome. I love the Rome. I was there for two weeks. I went to the soccer games Roma oh we had the best time ever. I need to get back to Italy to Rome. Oh my goodness the best food ever thank you Mark thank you for such a delight treat to light treat what we are missing.

I been there, and yes, it's as good as how they are acting.
If Italian food, around the world, was just "normal," as you say, already it would be a good thing. But often in many countries people talk about “Italian food” that then in the end with real Italian food has nothing to do, it has only the name !
As long you use the right ingredients and avoid sugar, you should be able to make real italian pasta. Remember No Sugar and No cream.

@@wadi5145 Thought you meant spices like cinnamon, paprika and so on. We call them "spezie" (spicies) Ok with peperoncino...i use sometimes. Actually i use aromatized peperoncino extra virgin oil ;)

What you would like does not necessarily correspond to the authentic taste of the dish. If the spiciness is excessive it kills any other flavour.

Surprising to not see fresh pasta when in Italy
Keep in mind that many typical Italian dishes call for regular pasta not fresh handmade pasta. You should not think that fresh handmade pasta is always the best for all kinds of dishes. This is a strange wrong way of thinking they have abroad regarding Italian cuisine.
And of course we're talking about a very good quality of pasta (such as the famous “Pasta di Gragnano”, for example), not just any pasta.

Depends on recipe. But waht we have are just suggestions of combinations: fresh pasta is used normally when the sauce is put on it ( pasta al pesto, pasta al ragú, pasta al sugo di noci) . Dry pasta when you want to "saltare" in the pot ( carbonara, amatriciana, puttanesca, arrabbiata, etc...)
Plus, fresh pasta is made by eggs, and they are "heavy"...so we don´t use with too fatty ingredients.
