In the South, we have the Waffle House Index. If the WH is closed, which is really really rare, it means evacuate due to a hurricane being over a certain speed. "The Waffle House Index is an informal measure of a storm's severity and its effect on a stricken community. It comes from Waffle House's reputation for being well-prepared for disasters and either remaining open during disastrous weather or reopening shortly afterward.". Yep. 😂

Apple butter is just cooked down/condensed applesauce, simmered with sugar, cinnamon and other spices until it's very thick. It's very tasty! And grits is coarse ground cornmeal cooked into a porridge-like consistency, like oatmeal kind of, or the Italian version polenta. The main difference is that the corn kernels are soaked in lye before it's dried and ground, gives it a unique flavor.

I used to work at Waffle House in my early 20s. I always volunteered to work the overnight shift on Friday and Saturday nights. People would start coming in around midnight until about an hour or so after the bars closed. There was a jukebox in the restaurant so we kept the music going to keep customers in a good mood. The night would go fast and tips were amazing!

I think Waffle House is better than the International House of Pancake. Another breakfast chain that is popular is Cracker Barrel which is about as popular as Waffle House
You all did great with your pancakes especially for a first try.
We make apple butter at home. No butter in it but is describes how it spreads easily. It is made from apples that are cooked, pureed and a lot of spices added (cinnamon, cloves, nutmeg and allspice). It is cooked for a long time over a low heat to condense (like 12 to 24 hours) then canned in mason jars. We also make pear butter. It is yummy and used like jam as a spread or sometimes used in baked goods.

Great video, Recky and Carol. Apple Butter is a jam style delight that we make here. If you have a slow cooker, peel, core and cut your apples into cubes. Place in a slow cooker with about 1/4 cup of sugar (if you are doing a full pot/8 apples) and a teaspoon of cinnamon. If your apples aren't tart or juicy, add 1/4 cup of water and sprinkle, LIGHTLY, with salt to help them sweat out the juice. Let it cook on low over night then mash into a paste. Once the paste is made you jar it. It is absolutely delicious.

Grits are ground dried hominy. Hominy is corn that has been soaked in lye, causing it to swell, removing the kernel hull, and making some nutrients more easily absorbed. That makes it easier to grind and also changes the flavor a bit. Succotash is a dish consisting of hominy and lima beans.

Another fun Jolly video. LOVE apple butter. It's like apple sauce, cooked down to a caramel color and thicker so that it's spreadable. Slightly stronger spices. In college (Minnesota!), my roommate's mother made lots of it so we'd toast several slices of bread, layer on the apple butter and pig out. Yum.
Not uncommon for waffles and pancakes to be 'swimming' in syrup (and melted butter). Personally not a fan of that much. Like maple syrup but raspberry is also good but really like blueberry syrup.

Grits are made from dent corn, which has a softer and starchier kernel than other corn varieties. The mature kernels are processed to remove the outer hull, dried, and then ground into smaller bits. The most basic-and perhaps most common-way to prepare grits is to boil them, then combine them with butter and milk

On my mom's dad's side Grandpa's parents came over from the southern part of Sweden. Both sides of the family knew how to cook for a couple of reasons. Larger Families and having to try to stretch the food u had and make it taste good. Both sets of Great Grandparents came over in the 1896-1897 time frame. U were taught what was basic things to cooking that u do not get now a days very often.

Apple butter (Dutch: appelstroop ) is a highly concentrated form of apple sauce produced by long, slow cooking of apples with apple juice or water to a point where the sugar in the apples caramelizes, turning the apple butter a deep brown. The concentration of sugar gives apple butter a much longer shelf life as a preserve than apple sauce. Grits are a type of porridge made from boiled cornmeal. Hominy grits are a type of grits made from hominy - maize that has been treated with an alkali in a process called nixtamalization, with the pericarp (ovary wall) removed. Grits are cooked in warm salted water or milk and considered a soup. They are often served with flavorings[1] as a breakfast dish. Grits can be savory or sweet, with savory seasonings being more common. Grits are similar to other thick maize-based porridges from around the world, such as polenta and mieliepap. The dish originated in the Southern United States but is now available nationwide. Grits are often part of a dinner entrée shrimp and grits, served primarily in the South.[1]
The word "grits" is derived from the Old English word grytt, meaning "coarse meal".[2] In the Charleston, South Carolina area, cooked hominy grits were primarily referred to as "hominy" until the 1980s.[3][4]

    Apple Butter is *SO GOOD!*
It’s basically a jam or spread made with apples and cinnamon. My great grandma used to make it Homemade and jar it. So good on buttered toast!
Unfortunately, Waffle House is not completely Nation wide as there is only locations in 14 of the 50 States. It’s mostly in the South/South East States but not always. Wish they had one in my State, closest one is several states over!

Hi Carol and Recky I have started watching your videos and love your reactions to our food in the US. I am from the south living in Mississippi. Yes we have Waffle House here and I don’t eat there very often. Sweden has always been on my bucket list. If I ever make it there I would love to cook for you. Hopefully you will be able to visit the US and we would love to have you. 🤗🤗

Grits are ground dried corn, similar to porridge but gritty. Many different ingredients usually added to grits. 🇺🇸 Apple butter cooked applesauce.

If a Waffle House is closed, it's because the building is on fire or the apocalypse is actually happening and even then it might still be open, lol. Apple butter is a more concentrated form of applesauce. Grits is coarsely ground corn that has the a close consistency to polenta. I'm not a fan but it's eaten with butter and sugar for breakfast or savory with shrimp.

An omelet with mushrooms, onions, and just enough American cheese to make it melt. Put some breakfast sausage and toast with strawberry jam on the side and prepare to dive in. Makes a wonderful weekend brunch that doesn't take a master chef to produce.

From Wiki. Great place for a meal. Mainly in the southern states as the closest is about 400 miles from me. Great food and a great price. If the Waffle House is closed - you should be there. As they only close for extreme weather.

If you have a slow cooker (Crockpot or other) and blender or immersion blender, apple butter is _suuuppper_ easy to make and so very very good. Apples, sugar, vanilla, brown sugar, cinnamon, cloves, and salt. Let that melt down slowly (like... 10 hours on low) until it's a paste or a butter consistency. Put it on toast or pancakes or waffles or bagels or English muffins or Swedish pancakes or whatever. Yum!

Sweden has gas station hotdogs?! Cool. I think you can do as much or as little syrup as you want. Butter is also a personal preference, but a good one. Tip: leave a pad of butter on the middle of a stack, then eat around it. The last bit of pancake center will be so buttery and delicious by the end.

I love going there and having the grits with just a lil salt and pepper with egg on top and a touch of hot sauce. We make our own apple butter, just did some over this last week end. I love it with any pork, to me it is just like icing on a cake. There are so many ways to have the hash browns that it is hard to decide.

06FEB24:Applr butter Prepare and flavor apple as you would for a tart or pie. Then boil them down until most 75% of the liquid is gone. Due to concentrating the mixture itwill have a brown shade and a soft butter consistency. Put on favorite toast. Enjoy!
Grits are a byproduct of grinding corn. In Italy they are called Polenta.
In mexixo they get ground finer and become part of corn totilla dough.

But I LOVE apple butter! Also, the guy in the middle is Noah Sims who was in the top 4 of season 10 of Master Chef, so he is actually a chef. lol

There is some contention between grits people. Some eat them sweet and some savory. Some put a touch of sugar\brown sugar and\or syrup on them(and butter) and others put butter (yes lots) and salt n pepper on them. Occasionally some will throw a touch of hot sauce onto the savory grits as well to go along with their sausage, bacon and eggs.

I never had Waffle House until I took a trip to Tennessee. We don't have them in California apparently or at least I've never seen one. My brother in law and I were the only white people in there and me being from Cali expected some attitude. Was I wrong, these people were so nice and talkative. The cooks/waitresses all came with questions about California. We were there for two hours chatting and having breakfast. But the Waffle was too sweet for me even without syrup.

Waffle House is not on any list for fine dining, but it's true that in those late night hours it is SOOOOOOOO good . Even better when a fight breaks out and the staff keep right on serving food and everyone who's not brawling keeps right on eating while enjoying the show. I love the waffles because you can fill up all the holes with butter and syrup and it becomes obscenely juicy. Unlike the birthday boy, I prefer to dip bacon in the syrup. I like to get the pecan waffle and two orders of bacon to indulge my gluttony. I also sometimes order a couple of soft fried eggs on top of my waffle, then break the yolks to to muddle with the syrup.

Grit are stone ground corn, mostly you could compare it to creamy polenta. Typical southern style would be a savory version with cheese, you could add butter & sugar if you’re from the north but southerners would turn their noses up at that. And a classic staple of the south would be Shrimp & Grits, which may be varied gravies of shrimp, veggies, ham or pork. Here in South Carolina shrimp & grits is a hometown dish that all visitors usually try.

Grits is ground white corn, boiled until it is a thick grainy porridge like consistency. Some say it is similar to polenta. Most people add butter and salt otherwise they are pretty bland. Some also add milk or half n half to make them creamy. Grits are super awesome with eggs bacon and sausage. I love breaking the yokes of fried eggs and mixing them into the grits.

I'm late to the vid, but to explain some things:
Americans are known for their Work Ethic, and that means WE HAVE WORK SHIFTS 24 HOURS. Simple Comfort food diners cater to those night time work shifts.
The original Waffle Houses were on the major highways, to serve the Truckers of the 18 Wheeled Trucks [English Lorries]. In the US, the truckers drive at night, to avoid the traffic of hundreds of cars on the highway.
Starting in the 1950's through the 1960's, Americans started driving around the nation for their vacations, and having reliable food on the highways, was critical. These Highways DO NO PASS THROUGH TOWNS, THEY PASS BY THE TOWN. This was done to make the long distances go faster, by not having to stop in every little town. However, there were exits off the highways, so you can get to hotels and finer restaurants in the towns.
THERE IS NOTHING IN THIS VID, THAT YOU CANNOT COOK AT HOME. These are all simple simple foods that you already cook. OH, they were in Tennessee... no, this might be their Georgia tour.
I'm not familiar with a lot of Swedish cooking, but I am familiar with German cooking. I will offer German verisons of these southern foods.
Hashbrowns, are German Potato Pancakes of shredded potatoes. Karttofflepuffer... is that the word?
Apple Butter: take your favorite Apple Pie filling [cooked], and put it into a blender until the mixture is smooth as butter. By cooking the apples to very soft, they develop a really smooth texture when blended, while apple sauce is usually grainy and watery. The same spices you use in your Apple pie, you can use in your Apple butter.
Oh, YOU DON'T HAVE TO USE MAPLE SYRUP ON THE PANCAKES AND WAFFLES. You can use any fruit syrup that is produced locally. Another breakfast restaurant chain uses Lingon berry, strawberry, blueberry, and one other fruit syrups.
YOU CAN ADD YOUR APPLE BUTTER TO YOUR PANCAKES AND WAFFLES.
Southern Sausage Gravy: this is a Bechamel sauce where you use the fat from the fried sausage to replace the butter in the bechamel sauce. The ratios are: 1 tablespoon of fat, 1 tablespoon of all purpose wheat flour, to 1 cup of whole milk. Cook the flour in the fat, add salt and pepper, then add the milk and cook until it bubbles. Add crumbled sausage back into the gravy.
Grits, is just cooked corn meal. Use a Polenta recipe, but add about 30-50% more water to the recipe. Polenta is meant to cook solid, grits has more water to mimic a porridge consistency. Some folks use White Corn meal, but you can use Yellow corm meal. Oh, you want a Coarse Grind Cornmeal... NOT a finely ground corn flour. Keep in mind, grits is an acquired taste. Not everyone likes them. Southern cuisine uses them, like other cuisuines use mashed potatoes.
Try adding gouda to the scrambled eggs for the cheesy scrambled eggs, if you don't like the fake American cheese. Cheddar is too sharp, but gouda closely resembles the flavor.
The rest are things you already cook in Europe: pancakes [pfannekuken] waffles, simple toasted bread slices. Fried or poached eggs. Bacon, or ham, they did a 'steak', but you could the same meat cutlet you normally use for Schitizel, but don't bread it.
What they didn't eat: Southern style Biscuits and Gravy. Jolly ate those during their Georgia tour.
American Biscuits are slightly fluffier than an English scone, but YOU CAN USE A YEAST DINNER ROLL AND GET THE SAME FLAVOR COMBINATION.
OH, AND DON'T HOLD BACK WITH THE BUTTER. SOUTHERN BREAKFAST USES ALMOST AS MUCH BUTTER AS FRENCH CUISINE. If it is a bread, butter it, before you add anything to it.

Come to Atlanta and I'll take you to Wafflle House. My treat! You can't spit in this town without hitting a WH, and for good reason - delicious, affordable food 24/7/365, and there's something for everyone to enjoy.
The syrup in the video isn't real maple. It's called pancake syrup, and even though it is maple flavored it's milder, sweeter, thicker and cheaper than real maple syrup. Most people wouldn't use as much of the real thing on their waffles or pancakes as they would with the cheaper and milder pancake syrup.
Grits are famous in the South. You might have a hard time finding them anywhere else. It's a porridge made from hominy (which is a type of corrn that has been soaked in lye to soften it up, kind of like polenta). It's very plain by itself but if you add salt, butter, and cheese and even some bacon or chile peppers or hot sauce, it transforms into something very tasty. Some people like them with sugar, but that's ususually Northerners who don't know better, which is what I used to be.

There's nothing like stumbling out of a dance club or a karaoke bar at closing time, and then going to an all-night diner! Everybody inside is in their dance club clothes, (lots of young women in tiny dresses, high heels, lots of makeup, and crazy hair), and most of us are pretty buzzed. A grilled cheese sandwich and some french fries are a little head start on easing that vicious hangover the next morning. Plus, the food and coffee helps you get sober enough to drive home.
A buddy of mine and me saw a table of attractive women, who would glancing our way too. We couldn't send them a tray of alcoholic beverages, so we sent them a platter of bacon. They laughed and saluted us with their strips of bacon. 😀😆😂🇺🇸

Grits are just a corn that has been dried and ground down into a product that is gritty.
