What package of yours would you recommend for me as I am in the process of opening up a café with hot tea, bubble tea, coffee and crepes in the US? Thank you so very much!
Hi Dominika,
You're so kind. Thank you. 😇😁
I'm able to create a bespoke equipment list for my clients depending on what sort of recipes and drinks they are serving, however in the US there isn't one supplier that I found to be perfect for everything. But my clients have given me feedback from different ones they've used which I share privately.
Feel free to email me through my website and we can set up a free 15 minute voice consultation call, which I offered to all prospective clients. This helps both of us to know if or what areas you might be needing help with and where I can be of assistance.

Thank you for sharing your insight, I actually cooked my bobas the way you explained (15 min, stir, 15 min, rest 15 min) it was on the stove but I have never had such perfect texture. I was sure my bobas were bad quality, turns out my cooking was at fault 😅 thank you again !
OMG! That's such great news! (The part about my recipe working for you! 😅)
Thanks for sharing 😊🙏🏼🧋🥰
Hey Kristin! This video was extremely helpful for what I'm trying to pursue. Do you do pop up events at farmers markets or night markets? It would be awesome to see you post a video going through the preparation process.
Hello Cyril,
Yes I did events and popups. Everything is the same, but at least one day (or more) of prep for everything 😅 Just do everything at a larger scale, keep it refrigerated, etc...
Boba is tricky. Ideally needs to be made on site, numerous boba cookers, one staff just dedicated to making boba at large events. 😅 Small events it can be made in advance and kept warm.
I sold all my shops and businesses now so I don't foresee myself making a video about it all any time soon, but perhaps I can tag along with one of my clients in the future and release that as a video.😉😇
Good luck!!!
I’m in the UK ❤️❤️ I wanna come visit your store!
Hi Amy! YAY!!! 😍
I sold my shops during the 2020 lockdowns, but the new owners are great! They just reopened a few days ago (after 1-year being closed😬)
So be sure to stop by and check the place out! 😍
Nice vid. Cooked starches change their structure after refrigeration. They are never the same again (tougher). They are even absorbed into your blood steam slower and have a lower glycemic index. A consideration for diabetics and those observing a ketogenic diet.
Interesting information. Thank you for sharing. 👍🏼
God bless you
🙏🏼😇
Hi thanks for posting such an informative video. May i ask what brand of rice cooker you suggest and thermos for the hot water and teas?
You're welcome Muhammad 👍🏼
I enjoyed using the rice cooker brand Buffalo here in the UK.
The tea urns I bought through a bubble tea supplier distribution company. They're just generic imported from China type thing. 😉
(Come in different sizes and colors)
Hi, thanks for this video!! Super informative and precise. I have a question - if you don’t have a rice cooker for your shop, where do you store you cooked boba throughout the day as your serving? Thanks!
You're welcome Anya, glad it was useful 😇.
If you don't have a small rice cooker to keep it insulated, and with the option to be able to warm it slightly during the day, it is no problem. Especially if you live in a warm climate, you can simply serve it out of whatever container you want and it will be fine. I grew up in Southern California and Boba was always just stored out because the temperature was so hot and everyone hard. However in the UK it is cold throughout the year in comparison. The place where I currently live doesn't get above 20° c in the summer. 😂 Also perhaps in the winter your location might become cold also. The idea is just to make sure that the boba doesn't go hard. But if you don't have this issue then I wouldn't worry about it. 👏🏼🧋☺️
Kristin, can you do a video of how to set up for an event? How do you store ice at a day market (would buying bag ice and storing in a plastic cooler okay and just scooping it out to serve), how to set up with just one table at a day market etc
I've made a note for part of a future video idea.
But yes, you can easily store ice in coolers. This is done all the time by street vendors in places like Thailand.
You'll just use a different type of ice than square... More like pellets is easier for this, and just pour the drink over the ice in the cup.
No need for a sealing machine in this case, just a simple lid with a hole and straw, or even a sipper lid if no toppings.
Hope that makes sense. 👍🏻
@@BubbleTeaKristin Wow! Thank you so much for responding! I wasn't sure what to do. I'd love that future video and I'm sure others will too, I love your tip about using a rice cooker for the tapioca.
Please do that video, tell us how many hours you'd recommend getting there to set up, and would you make large batches of milk tea on-site if its a far destination and serve them out of beverage dispensers...stuff like that geared towards someone who doesn't have a physical store
Such a useful series, thank you. I'm using these instructions as I price out the servings of each product component. Could you tell me how many servings this 700g batch will typically make?
Hello Emi, Happy to answer your question... I just looked through the comments section as I couldn't recall off the top of my head. 😅 "Approx 20 drinks depending on your scoop size 👍🏼"
Hope this helps. I'm glad you've found value in the series! Thanks for watching. 🧋
@@BubbleTeaKristin Thanks 👍
Hi Kristin, I'm in the early stages of starting my Bubble tea business way up here in Powell River, BC, Canada. So great to find a video that explains how to keep the boba throughout the day. For foodsafe purposes what temperature do you hold your boba at throughout the day. I'm thinking the 4 hour industry standard is likely linked to bacteria prevention?? Thank you so much for your advice and I'm sure I'll have more Q's in the near future. All the best. and thank you. I'll be sure to check out your website.
Hi Daniel,
I'm excited for you to start your own shop! I hope it will be a fun experience 😁
The 'industry 4-hours' thing is not only because of potential bacteria growth, but also the boba will either go hard, or become all gooey and gross.
If someone doesn't know, they won't taste the difference... but for the connoisseur and major fans... if you keep the boba too long, you'll hear about it from them via complaints.
Here's a funny story: After I sold my shop, the owner had new staff, etc. I went in once to get a drink and i noticed the boba didn't seem flavored at all with the solution. I politely mentioned to the new owner later about this and they inquired into who was on that day. Come to find out that staff member was putting new cooked boba in with the old cooked boba... and not even changing the solution or adding new! 😩
First off that's not hygienic in this type of scenario, as it was the end of the day so who knows how long the old boba was there for, but second, obviously you're getting delicious new pearls... with old!? And lastly, because there's no new solution, the new boba had no flavor to absorb and tasted plain.😂😂😂
Hope that helps!
@@BubbleTeaKristin Certainly helps and thank you for getting back to me. All the best from Canada.

Hey Kristin! These videos have helped me a bunch! I would love to know how youd make the tiger milk teas!
Looking forward to your response!
Hello 👋🏼
Thanks for the comment 🥰
Which sort of Tiger do you mean? The older version of it, or the newer trendy version of it...?
I have a video coming out Sunday that shows the newer version.👍🏼
If you watch my 'how to make boba pearls at home from scratch' video, I also show how to make it the newer type, generally speaking... But instead of adding the Thai Tea at the end of the video... Just add milk. And Viola! You have 'Tiger Milk'. 😇😍
@@BubbleTeaKristin thank you so much For your help Kristin! It’s much appreciated
Really good job in your method!!! As a Taiwanese immigrant in Canada, not everyone makes Boba as well as you describe. Not everyone uses Taiwanese products. The Taiwanese one uses starch from the Cassava plant (sago) instead of tapioca which is used in China. Tapioca pearls are transparent and much cheaper in cost. Boba pearls in Thailand are made from Cassava (sago) as well, as it has a subtle earthy flavour that is not present at all in Tapioca pearls made from Tapioca starch. Cheers.
Thanks for watching 😎🧋
i love the way u teach
how can we buy boba and other product for it from nepal❣️
Thanks Kalpana 😇🥰🙏🏼
Nepal... Wow!
Hmm... Have you seen my recent video where I shared all about finding a supplier? ☺️ Watching that video is a good beginning point. It came out in July.
Hey Kristin, thanks for all your hard work and informative videos. Long shot question here, but I own a boba tea shop in Australia and usually use an induction cooker to prepare grade A pearls from Taiwan. Now that two years have passed this was uploaded, I wanted to know if those new pearl cooking machines would do the job now in hopes of cutting down on cooking time or electricity consumption whilst also retaining its quality.
Thanks for your time.
Hello 👋🏼
I've had some clients using the new 'boba cookers'.
They're just rice cookers converted with tapioca names... but not even like "braise"?! 😅
The thing is, It's a really dependent upon how much you are making every day and what size batches you are doing. A large hob container or large rice cooker will yield more than a small or regular size Boba cooker.
Worth getting one you can return if you don't like it... giving it a try, and see.
Doesn't hurt.
As for amount of electricity used... the ice machine and fridge are the real chuggers. Also the hot water boilers and heating/AC units.
Not really an electric hob tbh I wouldn't think... but I'm not an electrician. 🤣🤣🤣
Let us know either way!!!
Hi , May I know if we need to use both boba cooker 22:30 and boba warmer ? Can I use all in one pot in baba cooker n warm it in the same pot ?
You could do as you're asking. 👍🏻
But it's a good idea If you're only making one batch at home or for a party.
If you have a shop and you plan on making more than one batch, what will you transfer the tapioca pearls to while you are cooking another batch that takes an hour and a half?
If it's summer and the weather is warm, you can transfer it to whatever you want. But if it's colder, you'll need to keep it warmly insulated... So up to you really 😁
Hi!
Question! Who do you order your products from? I noticed you said quality matter, so I want to make sure I am using the best ingredients! Thanks!
Hello 👋🏼 Yes - quality does matter. My shops were in the UK and I preferred to use Boba Box UK. They also have an EU branch. I recommend requesting any company's quality reports for the factories to buy from... and the factories themselves should only be in Taiwan or your home country, wherever you're located... Eventually it's good to visit the factories you're buying from too as they should allow for private pre-booked tours. Hope that helps!
Hi Kristin, I am ready to buy the big rice cooker but there are 2 of the big sizes I found: a 33 cups or a 42 cups rice. Which one are you using on this video or which one do you recommend? Thanks
Hello 👋🏼
I had to look through all the comments to remember the answer 😅
Here is the info:
The brand I usually used I think was Buffalo. But if you search for 'Commercial Rice Cooker' you'll find plenty of similar options online.
The size I think was 25-30 cup dry. (This means, if you were making rice in it, you'd put 20 cups of dry rice.)
But I know for sure, mine would comfortably fill with 6-Liters of water up to the '20-line' and then I'd put in 700grams of the uncooked Tapioca Pearls, as seen in the video.
This allowed for plenty of space still at the top for everything to expand and it wouldn't cook over that way.
Then: 700 grams of boba made approx 20-drinks (give or take)
So if that's enough for you to begin your day, the this is a good size for you.
But my other shop I used the largest one they offer, about double the size, and did a half-a-bag of 3kg boba at a time or more... Giving me 40 drinks worth at a time... In that shop we always sold more boba than other toppings. But the shop in this video boba didn't sell as often.
Hope that helps!😇🤗
@@BubbleTeaKristin thank you so much for this information. I finally found a space for my boba business here in Puerto Vallarta,MX. Hoping to open in September.
Great video! I was wondering after sealing the uncooked boba in an airtight container, where it should be stored. Can I leave it in the freezer or should I leave it outside?
Either is fine. If you're going to be using it the same week, then as you said normal temp is fine. But longer than that definitely freezer. 👍🏻
So glad you made this awesome video.
Thank you VERY much.
Regarding your rice cooker to cook boba. Usually a rice cooker automatically switch to warm as soon as it is completed. So I assume you click “cook” for that first 30 mins for water to boil and after it boils, you click “cook” AGAIN to keep it cooking for 30 mins? Am i correct?
Lastly, I store my boba in an air tight container, but for some reason moisture is form on the side of the walls,
Then I try sealing it in a bag then put it in a airtight container, STILL moister now builds up on the seal bag. What am I doing wrong?
Hiya - You're very welcome :) Glad you appreciate the video! 😍
1.) Rice Cooker - so with this HUGE industrial grade one, it doesn't automatically switch to warm. But I do know what you mean, as my small home rice cooker does do that.
The large one for the shops that you see in the video, it will stay on cook, even after the water is boiling. It will only switch to warm if we switch it manually. Not sure why exactly, but it was this way for all the different brands we used/tried out over the years.
2.) I think I understand what you're talking about regarding the uncooked Boba. Basically when you open the bag and you transfer it into a different container, you are getting a lot of humidity?
Can I ask how long you are leaving it in these other containers and what size containers you are using?
If it is a large container you are pouring the uncooked boba into, there will be a greater risk for a lot of condensation. But if you put it all into many smaller containers it is less likely. to have this condensation problem.
The other thing I would do is: inside each giant bag of Boba there is a 'dehumidifier little baggie tablet' type thing. You can save those overtime and then put them into the divided containers and that will prevent any moisture buildup. But just make sure you and your staff remember to remove those dehumidifier tablets before you cook the Boba!
Thank you so much for helpful information. Can you tell me what is the size of your hot water boiler? What would you recommend for a big 10,000 outdoor event as a tent vendor? How do you make sure you have enough bubbles and teas throughout the day? I am planning to get one of each 12 litter black and jasmine tea urns. A 30 cup (dry ride) commercial rice cooker? Any idea, suggestions I would appreciate very much. You are an excellent teacher. 👍❤️💐
The size of my hot water boiler was around 30 L. It was a manual fill. Honestly doing a large event is just trial and error. I usually recommend people to start smaller at maybe a farmers market or small kiosk, and then work their way up to big events. Because the biggest issue that you will have at big events will be running out of ice, having waste you're unable to dispose of potentially, and an electricity supply. If you are able to get fresh water during the event, then that will be a bonus. But ice will probably be the biggest difficulty especially if you are in the middle of a field and it will take an hour or more round trip to go get more. But nobody wants to spend all of their profits on ice which is wasted at the end of the day. There are so many factors for an event such as who the customers there, what is the target market in terms of culture and taste preferences, pricing, etc. And in terms of the recipes, there are big batch recipes or made to order recipes, but trying to keep things as simple as possible with as little waste at the end of the day is key. And for calculating the recipes, it's all multiplication. However even then the flavor may not turn out exactly right so you'll need to trial an error large batches in advance. It will be a lot of work and a huge learning curve for you, but hopefully in the end you will be able to make a profit and have learned a lot so then that way the next time you do a large event you will already have notes from the previous one on how to improve. That's all business is just making sure that you improve from every event every single time to get better and better until you have it perfected and can continue to divide and conquer. 😍😍😍 Good luck!!!
Thank you so much Kristin for your input! You are the best! 👍💐
Hi your video has been so helpful. I’ve been making boba at home and I didn’t know how to flavor the boba until I watched this. Although I have a question, is it ok leave boba in the freezer, if it is how long would it last?
Hello Ray 👋🏼
Happy to receive your comment! Glad my video was helpful for you. 😇
Yes it's absolutely okay to freeze the cooked boba in small ice cubes with water for home use.
I've never done it, but I've heard from many people who do with happy results. 😇
Thank you for the great info. Question- after you soak the boba in the sugar solution, do you discard the solution after 15 minutes of soaking? If you soak it too long, ie 4 hours, will the boba get mushy?
Hello pixs4family. 🙋🏼♀️ After the cooked tapioca pearls have been cleaned and then soaking in the sweet solution for 15-minutes, they're ready to be consumed. KEEP THEM IN IT! If you take them out, they'll become a giant clump and nobody wants that. 😂 After 4-hours, serve up new boba and new solution. And always add new boba to new solution if adding in a small quantity of new boba to top it up... I always kept new separate from old, and staff served older first and then newer so there's no confusion and the 'old' doesn't get too 'old'. Hopefully this all makes sense. 🤣
@@BubbleTeaKristin Thank you! That makes sense.
Wow! Such great, detailed video! Can you share the Taiwanese restaurant grade boba supplier? Thank you 🙏
Thank you! 🤩 The supplier of the pearls was a Taiwanese brand called Chainly... but they're wholesale to middle-man distributors only. (I don't think you can buy direct). However any bubble tea middle-man supplier should be offering Grade-A pearls. If they don't... I would second guess the rest of their products...
Hey Kristin! I am working on opening a milk tea place here in the US and I have found your channel extremely useful! You go into so much depth and detail! No one else is on this level of clarity- thank you! I would like to ask you how many bags of boba you use per day? How many drinks are made per day from the quantity? And what boba supplier do you use? I am considering making the boba myself, however I want to reduce the costs at first so that I can focus on the menu and side menu. Right now i am calculating all the upfront costs and the cost of supplies so that i can get the COGS. Any information is greatly appreciated!!!
Hi Andrea,
Thank you for your comment. It's very kind of you! 😁
The questions you asked are quite in depth, but I can answer them for the most part.
As I think I mentioned in the video, we usually made 700 grams in the morning on a weekday, but the weekends we usually kept it going all day. (Cleaning it out in between, etc.)
700 grams made 15-20 drinks. My shops were in the UK so I used the supplier 'Boba Box'. But they're UK & Europe only.
Everything comes down to you customers. In the UK majority of customers prefer the juice balls and jellies over boba. But in the US, generally they want the tapioca pearls (boba). So You'll just have to learn over time.
Making tapioca pearls yourself would be too expensive for the demand and supply... you'd need to get a huge machine to do it which is really expensive. But there are franchises where making their own boba is a niche thing. If you make them by hand, you'll need to employ a staff member just to stand there doing this basic task all day long... staff are expensive. 😂 Better just to buy them pre-made and cook them up.

@@BubbleTeaKristin Thank you so much for the reply! I just knew you'd answer! Yes the machine is about $1,000 and the task is demanding a lot of work. We will have a side menu so it's too much at least at first... Thank you, again!
@@andreastearns7464 only $1k?! Wow! That's cheaper than the Sealing Machine 😂
I think a proper one would be around $4k or more... Just keep that in mind, something to save up for 👍🏼🥰
@@BubbleTeaKristin Thanks! I will! ^^
Hi, if we are cooking in the pot do we need cover while cooking for the 30 minutes procedure? thanks
Yes, best to keep the water inside so the liquid level doesn't boil down... Whereas if you keep on the lid, less water molecules will escape. However you don't want to have it airtight, just enough to let a little bit of the steam out.
I also have a video where I show you how to cook boba at home in a smaller size batch, I think it is in the same playlist as this one. "Boba Basics"
