    타피오카 전분으로 쫄깃하고 탱글한 2가지의 수제 타피오카펄을 만들었어요~
    일반적인 펄과 코코아파우더를 섞어 진한 색의 펄을 만들었는데 함께 섞어 놓으니 더 먹음직스러워 보이네요~~
    흑설탕과 물을 끓이고 전분을 넣을때 한번에 다 넣고 섞으면 반죽이 뭉치 않고 흐르게 되서
    설탕물에 전분을 조금 넣고 섞어 약불에 올려 걸쭉하게 끓인 뒤 남은 전분을 모두 넣고 섞어야 한덩이로 뭉친 답니다~
    처음에는 잘 뭉치지 않는 것 같지만 손으로 치대면 매끈한 반죽이 되더라구요~^^
    타피오카펄을 끓이고 물에 헹군 뒤 얼음물에 넣어 한번 더 헹궈주니 더 탱글한 식감이 나는 것 같아요~
    저는 흑당 시럽에 졸인 뒤 병에 담아 보관했는데 시럽에 졸이는 과정은 생략하셔도 괜찮답니다~
    저는 타피오카 전분 100% 가루를 사용했는데 첨가물 없이 집에서 직접 만들어 먹으니 안심도 되고 더 맛있는 것 같아요~^^
    하지만 만드는 과정도 복잡한 편이고 시간이 많이 걸려서 다시 만들어 먹을 엄두는 나지 않더라구요~ㅎㅎㅎㅎ
    보기만 해도 영롱하고 탱글해보이는 비주얼이 기분까지 맑게 해주는 것 같아요~~

    ▶재료
    흑설탕 45g
    물 60g
    타피오카 전분 90g
    흑설탕 50g
    물 60g
    타피오카 전분 85g
    코코아파우더 5g
    흑설탕 70g
    물 140g
    ▶레시피
    1. 흑설탕과 물을 냄비에 넣고 중약불에서 끓어 오를 때까지 가열한 뒤 불을 끄고 타피오카 전분을 조금 넣고 섞는다.
    2. 다시 약불에 올려 저으며 걸쭉해지면 불에서 내린다.
    3. 전분을 모두 넣고 섞은 뒤 평평한 곳에 올려 손으로 치대며 매끈해질 때까지 반죽한다. (코코아 반죽도 같은 방법으로 만든다.)
    4. 반죽을 분할하여 길게 밀어 편 뒤 작게 자르고 손에 굴러 동그랗게 모양을 잡는다.
    5. 전분으로 코팅해 달라붙지 않게 한 뒤 끓는 물에 넣고 삶는다.
    6. 중불에서 끓이다가 타피오카펄이 떠오르면 약불로 내려 중간 중간 저어가며 20분 정도 삶는다.
    7. 불에서 내리고 뚜껑을 덮어 20분 정도 뜸을 들인 뒤 체에 받쳐 찬물에 헹군다.
    8. 얼음물에 넣어 한번 더 헹군 뒤 냄비에 넣고 흑설탕과 물을 넣는다.
    9. 중불에 올려 끓이다가 끓어 오르면 약불로 줄인 뒤 저어가며 걸쭉해질 때까지 약 5~6분 정도 끓이고 용기에 담는다.

    60g Water
    90g Tapioca starch
    50g Brown sugar
    60g Water
    85g Tapioca starch
    5g Cocoa powder
    70g Brown sugar
    140g Water

      Lucía Amarillo it’s like chewy kinda like a mix between a gummy and chewy candy and some people would even describe the outside consistency as slimy. it’s quite good in my opinion but only if it’s sweet

      @@luciaamarillo9002 puedes intentar hacerlas tu, no es difícil, solo es importante respetar las cantidades, en cuanto al sabor... diria que es algo muy especifico, saben al polvo que uses (en mi pais no hay de tapioca, asi que intenté con "chuño" que es el de papa y quedaron estupendas), recomiendo usar el polvo de cacao también , les da un mejor sabor!

    Steps [roughly]:
    Mix
    85g Tapioca Starch
    5g Cocoa Powder
    50g Brown sugar
    60g Water
    Stir
    Turn off when boiling
    Add in some Tapioca Starch and stir
    Place back on heat and boil
    Turn off heat
    Stir until thick
    Add rest of mixed ingredients:
    85g Tapioca Starch
    5g Cocoa Powder
    Mix
    On dry surface combine until doughy
    [add tapioca starch to prevent sticking]
    Separate into rod-like sections
    Roll into snakes
    Cut into tiny pieces
    Roll until ball-like in appearance
    Add Tapioca on top
    Boil in water until it floats above the surface
    [stir to prevent sticking]
    Let simmer for 20 minutes in low heat
    Let sit for 20 minutes [with lid on top]
    Drain through sieve
    rinse with cold water and remove excess starch
    Put in ice water bath
    Rinse through sieve once more
    pour into pot
    Add 70 Brown sugar
    140 water
    medium high heat
    Mix well
    boil
    Reduce heat to low for 5-7 minutes
    Boil for 5-6 minutes until thick
    Pour into drink or cup as desired

    1:15 VERY IMPORTANT PART
    if you over cooked the starch it will become very gooey and you can't make it into the little ball shape
    If you dont cook the tapioka, the dough also cant be shaped because its to watery

    I made easy one in small amount in just 10-15 minutes, visually not pretty, but taste the same.
    Mix tapioca starch and brown sugar water in a ceramic bowl until creamy sticky, microwave 1.5 minutes, take out run under cold water to cool it down, before taking it out the bowl to cut them in small pieces.
    Heat up small pot of water on stove, put in the pieces that you’ve cut in there.
    Boil them for around 3-5 minutes, turn off stove.
    Strain them and rinse under cool water. Now it’s ready to eat.
    To make sure they don’t stick to each other, mix in some brown sugar.

      Don’t use other bowl like plastic and glass. Because those materials make the heat increase faster and higher inside microwave, which cause the end results to be hard and crusty instead of soft and chewy.
      This way of making pearl is suitable for around 2 glass serving.

    Woah what a coincidence I made them for the first time last week and now you have a recipe! I'm excited to try it
    Edit: just made it and it turned out great! Just a few things I noticed were that the brown pearls needed more tapioca added to them, you REALLY need to cook down the sugar into a thick syrup before you add it to the tapioca, and it never really makes a dough, you just have to smush it into little balls.

      Literally made a first batch and it was in crumbles...tried again with a touch less powder and more sugar..too moist. I’m like...is there something I’m doing wrong?!?!

      @@PeacheePea mine was crumbly, patience and added water fixed it, was still a pain in the ass to work with but the boba turned out good anyway

      kat k yeah I ended up just mushing the pieces to make the balls, idk I let both doughs rest and they got hard and crumbly either way. I’ve watched other versions where they don’t rest and just use, next time I’ll try something like that. I also cooked mine and they came out fine, a little undercooked but that’s my fault, not bad though for the first try. I was more shocked it all came together in the end, those crumbles weren’t looking good! Seems like it’s pretty forgiving as long as the balls hold their shape while cooking

      I am so glad I'm not the only one with the crumbly problem. I added more water, till it was too much. Eventually tossed it in despair. Maybe once I regain my courage I'll remember to just persevere and see what I get

    This recipe took me (an amateur) about 3 hours to make the pearls and another hour to cook them up BUT they were probably the best boba I’ve ever had in my life. My family of 5 finished them in 2-3 days - we had them with milk and plain and they were good both ways. 10/10

      Did you use light or dark brown sugar? I tried a different recipe and used light brown and the dough was too dry.

      KarP I used half dark half light (I was short on the dark one) but I think next time maybe add more of the light sugar

      @@gooseenthusiast3655 I’m not sure tbh 😀 I just put them directly into a large sterilised jar just like the video, and then refrigerated them. I’ve made them a couple of times now and they don’t seem to go off quickly if you put them in a fridge (then again we eat them so quickly they don’t have time too 🥴😂)

    When resting the dough, about how long do you let it rest? And are you letting it rest at room temperature or in a fridge?

      Usually a minimum 1 hr in the fridge or 40 min on the counter is a good rule of thumb, but a little longer is fine too.

      jwelly smooth i did!!
      when youre adding the extra flour into the mixture like in 4:35, make sure the mixture is hot enough that it sort of cooks the rest of the flour with residual heat.
      when youre combining the dough and rolling it into balls, it shouldnt be sticky, it should look pretty matte. i think this was the most important part. it might get a little crumbly at first like in the video but it cannot be sticky and soft!
      i also froze the pearls for a while (think 20 minutes) before i boiled them just to be sure hahaha :’)

      Sofi if you want to store it, you can put the dough balls in the fridge after you shape them and make sure to cover them with tapioca strach.

      I think can keep it in the fridge for two or three days~
      If you keep it for a long time, you can store it in the freezer and boil it again~^^

    I have a question :) can we store the uncooked pearls (as in they are coated with the starch) in the freezer with a zip lock bag until we need to cook it?

      You can store uncooked pearl in a ziplock bag, just make sure you take out as much air as possible. Actually if you already boil some and have leftover and it harden you could reheat it to re soften the boba
