How to Make Sweet Potato Mont Blanc

100g Japanese Sweet Potato, net weight (3.5 oz)
10g Butter, unsalted (0.35 oz)
40g Granulated Sugar (1.4 oz)
½ tsp Rum
½ tsp Vanilla Extract
2 tbsp Heavy Cream, 36% fat
4 slices of Swiss Roll or Sponge Cake (5cm/2” diameter | 3cm/1.2” thick)
1 tbsp Syrup (substitute with syrup from the Kuri Kanroni)
½ tsp Rum
70ml Heavy Cream, 36% fat (2.4 fl oz)
1 tsp Sugar
4 pieces of Kuri Kanroni, chestnuts simmered in syrup
Milk to adjust the consistency, optional
Icing Sugar, optional

さつま芋のモンブランの作り方

さつま芋(正味):100g
無塩バター:10g
グラニュー糖:40g
ラム酒:小さじ1/2
バニラエクストラクト:小さじ1/2
生クリーム(乳脂肪分36%):大さじ2
ロールケーキ(市販)またはスポンジ生地:直径5㎝高さ3㎝の円柱×4
栗の甘露煮のシロップ:大さじ1
ラム酒:小さじ½
生クリーム(乳脂肪分36%):70ml
グラニュー糖:小さじ1
栗の甘露煮:4粒
牛乳(かたい場合使用)

+okashi10 Well, I'm guessing she eats healthy and gets out a fair bit. She possibly maintains a regular diet of vegetables and various other foods along with these special foods here. But I agree! She does have that younger look to her in each video :)
I think Chef is feeling and looking better because she has mostly recovered from her accident. I understand she was badly hurt, so maybe wasn't feeling as well. She looks like she just loves cooking doesn't she?

rhijulbec1 Oh, right. I forgot she was in a biking accident back is 2012. But yeah she's much better now. I agree with you though. I was still living in Japan when I heard about Chef's accident. Of course, it wasn't really broadcasted because she probably wanted to have some privacy.

It's good to see Francis doing well! My little old dog Max died this week, and I miss him lots. He was 17 though, and had a good life! He was such a good dog. He also liked to join me as I cooked, but mostly for snacks. I hope to adopt a new friend to cook with soon.

Are Japanese Sweet Potato different from American Sweet Potato? (except for the color) Can I use them (or maybe yam) ?
I dont think this works as well for other sweet potatoes compared to the japanese purple skin ones. I just had some and it freaking tastes like sweet chestnuts. it's so sweet as if soaked in sugar. .. /notexaggerating

Is it ok if I use a blender or food processor instead of the shift u guys used for crushing the sweet potato
The point of the sieve is to remove the fibers from the potato. Blenders and food processors will only mash the potato, but you'll still taste the stringy parts in the end product.
