THE RECIPE 🔥

INGREDIENTS
*Makes one big sandwich
1 x baguette or bun
1 x tomato
2 - 4 x slices of fresh pork loin (depending on how serious you want the sandwich to be)
2 x 4 slices of jamón or prosciutto (or you could use bacon)
1 green Italian pepper
FOR THE ALIOLI (you could use mayo instead if you don’t want to make it)
1 egg
1 clove garlic
Olive oil
* To make the alioli, slice the garlic and drop it into a food processor. Break the egg in as well, plus a little bit of olive oil. Then slowly blend until the mixture has emulsified (become a white creamy substance). Then keep blending and pouring in olive oil to increase the quantity (and balance out the garlic flavour).
PROCESS
1. Slice the pepper into stripes, taking out the seeds
2. Start frying them on a low heat (they’ll be there about 15 minutes) - keep an eye on them, turn them as needed. You want them soft, sweet and with a little bit of char
3. While they’re frying, make the alioli (see below)
4. When the peppers are done, take them out, lay them on a plate with paper towel and salt them and set them aside
5. Toast the bread (you can do this in the same fry pan)
6. Once the bread is toasted, get ready to fry the pork loin. Turn the heat up high, and when the pan is practically smoking, drop the pork in. Salt it
7. Smother the bread on both sides with the alioli (or mayo)
7. After about 45 seconds, turn the pork loin. Drop the ham on top to make crack ham! (IF you want it to be especially cracky, you can flip the loin again so it fries about 30 second with the ham-covered said against the pan. But be careful not to overcook the pork loin otherwise it’ll get dry.
8. Remove the pork loin and drop it onto the bread
9. Put the tomato slices on top
10. Then put the pepper slices on top of that.
11. EAT!

Es buenísimo y tiene pinta de que te ha salido riquísimo pero hay demasiados bocadillos en España como para decir que es el mejor. Teneis que hacer algún marinero, ya sea de atún y huevo y lechuga y eso o con anchoas. Por la zona de la calle Almirante de Madrid había hace ya bastantes años un bar -cafetería (no fast food )donde los hacían de muerte. No se si existirá aún. Saludos y abrazos

It´s the same etymology in italian and french.

Well, guys, hats off to your enthusiasm and the sandwich does look delicious. Often, when I'm in Spain, I'll warm up a baguette and add some jamon Serrano and Manchego cheese and call it good (with some olive oil drizzled on the bread, of course). Guilty sandwich pleasure, the calamari sandwiches by the Plaza Mayor. Keep the videos coming!

My husband is from France and we love making our own alioli or aioli, at home. We make it exactly the same way you do. I think this Serranito might be in store this week at our house 😊. We also make our own Caesar dressing with the aioli base plus Worcestershire, Tabasco, anchovies, a little Dijon mustard, fresh black pepper and lemon juice. Then some Parmigiano - Reggiano in the dressing and on top of the romaine lettuce. It's also great to use on a tuna salad. Been obsessed w/ lomo y queso on a baguette since returning from Spain last fall. (Literally making it 3-4 times a week.) So excited to try the Serranito - as soon as I can get my hands on some thin sliced lomo again... I'd pick up a whole loin if it wasn't just me alone in my apt. Damn you Covid 19!

I have just seen this video, priceless!!! I am English and live in Fuerteventura where nearly all of my friends are Spanish and most of them are from Andalucia, more than half of them from Sevilla, which I have visited several times, and they introduced me to the serranito. They also support Real Betis which as you can imagine they pronounce Betty. If fact, along with several other letters, the letter S doesn't seem to exist except on the word nos. I'm sure they don't really speak Spanish but some other language. Mucho Betis!!!!!

I had a trip to Spain the first two weeks of May and I was going to go to Madrid Valencia and Sevilla but I didn’t know about this sandwich but now is another thing that I can’t wait for when I make it there , saludos from Miami Florida
Two weeks is a very short period of time to visit 3 cities. Please, please try to spend more time. I've never been to Valencia so I won't comment on that, but Madrid is a great place. Still a very large city, but fun. Seville is considered one of the most beautiful locations in the world. Take at least a week there. You'll thank me.
Oh I have been to Madrid 7 times my husband studied there for 6 months and I have been to Sevilla once before but I have not been to Valencia and besides we get 3 weeks vacation and we try traveling for 2 and 1 week to get here and there Thank you anyway I know Madrid deserves more than a few days

That looks delicious!!! I once lived in Miami, Florida and the Cuban sandwich reigns supreme over there, but "El Serranito" looks to be more up my alley. The aioli sauce is probably what really gives it that extra special kick. Another masterpiece guys !!! I wonder if finishing it up with a "Sol y Sombra" drink would work?

Very close to a sandwich I ordered at a Tapas Bar in Granada, December 1996. My first night there, and everyone was in high spirits, because it was raining (gently) for the first time in many, many months. That sandwich was one of the best things I ate in Spain, and that's saying something. Right up there was a late night sit down dinner of Sopa de Ajo, Paella with seafood and house made sausage, with a local bottle of red wine, only $3. Very surprised to find the food in Spain better than France and Italy, or at least what I happened to eat.

If I was going to pick the best sandwich I would say Pringa wins for me as a bread based snack.
Some things I do when making a Serranito which you may want to try.....
Lomo - As a lean meat they dry out easily when cooking at high temps. Take it out the fridge before hand if possible so it is not as cold when it hits the pan. To get the 'colour' when you remove the steak from the fridge dry it with paper towel and salt it . Leave for a bit and then dry again. Sprinkle a bit more salt and oil the lomo , not the pan.
Peppers - don't fry them . Cut them length ways in half , press down with your hand and then place them skin side up under a hot grill. Let the skin blister and burn . Remove and allow to cool. You will now be able to peel away the skin leaving you with the sweet juicy pepper on its own.
Knives - when I was a chef the test in any kitchen for a knifes sharpness was the tomato. If it couldn't slice one it needed sharpening. On Amazon you can get some great mini sharpeners which suction cup themselves to the surface and you just drag your knife through the gap. Provided you knives are not Japanese knives these things will work. I use one at home to quickly sharpen my jamon knife . Search for 'any sharp' knife sharpener on Amazon.

The typical Lanzarote(Canarias) sandwich is called "racing" and has a serious dish range. In a bread roll it goes: ali-oli + cooked ham + gouda cheese + lettuce + `tomato + cooked egg + beef fillet. (yammy!)

I am really not bothered about bocadillos, but the first time I had a pork loin bocadillo with alioli and tomato in Mallorca....oh my! This looks even better.
Love the serranito! Just one little advice: put the salt on top of the egg yolk at the beginning and it will emulsify better.

I don't know you know another way to fry peppers (also aubergines and zucchini), which I think is better: start by frying with olive oil, but when they are half frying, add water and let it evaporate ... then the peppers continue frying, but in the end they look better, have a softer texture and the skin of the peppers doesn't look burned. BTW, that sandwich looks great!!! mmmm

That green pepper, is that like a green chili pepper or more like a green bell pepper? Also, when I was in Barcelona I had a sandwich that had roasted eggplant, roasted red pepper, and anchovies. I think it was an escalavada or something like that. It was so delicious I made it for two weeks when I returned home. I will make the serranito sandwich this week!

Those peppers are called Italian peppers at least in the USA.
@@gemamayo-prada544 Thanks, I've never seen that shape before. We have the roundish looking ones, not these narrow ones. At first, they looked like hot peppers but when James popped one in his mouth I knew they weren't hot.

CXY Cui good point. I wish people will listen and stop avoiding animal fats . They are a great nutrition for our brains . I'm sure there is a correlation between the fashion of low fat products , the fear of cholesterol and the rise of mental illnesses like dementia or Alzheimer's .
Oh in Valencia we have the same sandwich but it also has a fried egg added. OMG I can't remember what it's called because I only found it the las few months and now it's been 6 weeks since I had one. ummmmmmm The best!!

There are some blogs about eating kosher in Spain (you'll find them if you Google it). There aren't really kosher places per se.
Ese serranito es mejor que los que ponen en muchos sitios de Sevilla :) En Sevilla se suele elegir entre carne de cerdo o de pollo y la salsa: mahonesa, alioli, mojo... Solo os han faltado las patatas fritas.
