    Hm I never heard about this steak. It sounds very interesting. I think with the rich sauce and with all the colours the plate has in the end, it could be a great meal for autumn!

    This is the first vid I’ve seen where it seemed like you didn’t really like it. Quite frankly that much pepper seems like ruining a steak from here so I wasn’t really shocked. I’ve always been a fan of the idea that you’re enhancing and displaying the flavour of the meat rather than whatever else you’re adding. Thanks for the vid as ever 😊

    I have an episode idea for you! Best way-taste wise to thaw meat. Possibly a multi episode idea on type. So like moving to fridge, sitting on a plate in ambient temp, sitting in hot water, microwave defrost, or maybe oven defrost at its minimum temp? Hot water soak but sealed.

Also I mentioned before about a newish cast iron company called Austin Foundry Cookware. I bought one and it’s now a favorite of mine, tied with my Smithey but for different reasons.     I'm nitpicking but, AAA is the equivalent of choice in the US. Prime is Prime in both countries. But that's like 2% of all beef here
    But I've a found that a high quality (nicely marbled) AAA, is pretty damn close to prime.

      @@BBQandBottles Ostrich is delicious! It's very similar to beef, however it's more lean and low in cholesterol. The texture is like beef, meaty and tender We live in South Africa and it's common to buy it in the supermarkets and butcheries

    Worst recipe ever.
    Proper Steak au poivre :
    Green pepper in brine is what to use. Drain it, then soak it in water for 10minutes (same as capers).
    Make it with a bit of reduced veal stock, red wine, onion and cream.
    It’s best for fillet steak and you pan fry the steak in a little butter in a cast iron skillet. Blue or rare is best. Pour the sauce on top when serving.
