  • Guga's always raved about PICANHA, but I've never grilled it for myself at home. We put the picanha head to head against a prime graded New York strip steak in a blind taste test to see if we can tell the difference.

    The grey Look really scared me at My first Attempt, I have never tried to Cook this awesome cut of meat until last night, It was pulled at 120 prior to sear and looked poor!
    The wife said stick to stick to your plan100%.
    I was skeptical However, I agreed while resting at 120F,
    It turned a nice Brown color while sitting on the paper towels prior to SEAR! I kept patting it to dry it!
    This technique is magnificent!
    We both agree this may be the best steak we have ever had!!!!!!

    The main name that I know for this roast is the petite sirloin roast. As opposed to the top sirloin roast you can actually cut against the grain where as you cant with the Top sirloin roast. What I did was stuck garlic slices and roast mary put wholes in the steak stuck em in there. Oil, salt, pepper. Seared all sides. Put it in oven for around 1.5 hrs at about 285 til it got to 125 internal.

    I'm actually surprised leaving those Meater probes in during the sear doesn't damage them. I'd probably use my Meater Block more if the batteries lasted longer (and it wasn't just impossible to insert the probe deep enough in a lot of what I cook, e.g. bone in chicken thighs). I tend to use the FireBoard 2 Drive a lot more and the battery seems to last forever. I feel like I could do 3+ overnight brisket cooks before I'd have to charge it.

    My picanha tastes quiet like liver, is that common? Please let me know! Thanks I followed gugas method. I saw ribeye guys say it’s better I was a bit let down last time but I want to blame it on me for some reason lol. Any advice?

      Yes, i guess the Cow didnt have enough fat. Next time choose a piece with a really high marbling

      WHAT? Dude, I'm from Brazil i have been eating picanha since a kid i have never eated any picanha that taste like liver. I don't even like liver but i could eat picanha everyday. Are you sure what you got is really picanha? They didnt sell you another cut? Even Nelore cattle(most common in brazil) that usally don't have any marbling don't have any taste similar to liver. In fact this is a first time hearing someone saying that picanha taste like liver. I'm sure even the lowest quality picanha without any fat will not taste like liver. Also here in brazil is common that some butchery sell fake picanha to misinformed costumers. They can cut other parts of the cattle to make it look like picanha.
      When you are buying picanha other than knowing and trusting your butcher you can look for:
      1 - fat cap cant be too thin.(more is better here)
      2 - the cut must look similar to a triangle when look at it from the fat cap side
      3 - It should weight between 1 to 1.5 kg but less is better, so that you dont buy other cut together
      4 - (BEST TIP) you MUST count 3 blood veins only. The cut must be made just after the third vein. Everything after the third blood vein is another steak cut and even the muscles fibers will look different.

    You literally can’t guess it wrong the picanha has such a huge fat cap on it you would know the difference from a blind taste test just in the fat cap alone

    No contest. The picanha is sooooo much better than a NY Strip. Frankly, I would take it over just about anything. And for the $$$ easily the best steak I have ever had, bar none.
