  • Passatelli is a pasta unique to Romagna, northern Marche and parts of Umbria. When I was having trouble with the consistency of my passatelli dough, I called on an expert, Paolo Ciucci. Paolo and his sister Daniele run one of my favourite restaurants in Italy, Osteria La Corte in San Leo. He kindly sent me this step-by-step video of how he makes it. It's a little different to my technique, but the key is in the ratio of flour and eggs to breadcrumbs and parmigiana. Grazie Paolo!
