Howdy Glenn and Kati, I was wondering what makes these caramels Amish? The Brown Sugar turns these into Butterscotch Caramel's. I know lots of people don't understand that, but White Cane Sugar makes a Caramel, Adding Brown Sugar makes Butterscotch. So sure, I could see that maybe Amish Caramels Might actually be Butterscotch Caramels. Either way, I am certain what you created is WONDERFULLY Delicious!! I am a Professional Caramel Maker, so I understand caramel making pretty well. If you have any questions, please feel free to ask me. I am retired now, but my door is open to anybody needing caramel making help.
Have a Beautiful Day!!

Just wondering if at the right stage this recipe could be used to dip apples in it to make caramel apples on a wooden stick...Thanks for sharing! great video!
That's a great idea! We have not personally tried that to confirm but, if you do, please let us know how it turns out! Thank you for watching and commenting! - Glenn and Kati

Hi Glenn and Katie! I made the caramel with the. Ew thermometer and it worked ! Thank you so much ! The only problem I have now is getting it out of the pan. It wouldn't co.e out like yours and now it's just a caramel blob in the container! Any suggestions?
Thank you for your comment! Were you able to thoroughly grease the pan with butter or cooking spray prior to putting in the caramel?
@@CookingwithGlennandKati yes I did. But when I cut straps it was so soft it was pulling all sorts of ways
@@JASmith0718 know it’s been a while but if you make them again-
I haven’t made caramels with corn syrup like this but I would imagine you’d want to cook it to a higher temperature. I cook mine to 250 but the perfect temperature differs by elevation.
You can also test if it’s done by dripping a bit into a glass of cold water. If you can then mold it into a ball with your fingers it’s time to pour it.
Where to get that fab thermometer you use?
Hello! Unfortunately, we couldn't find where the exact thermometer is available online anymore; we've had it for a while. Sorry we couldn't be of more help!
i 've never added my cream in 2 batches, nor used brown sugar, i cooked it a little longer so it doesn't stick to wrapper. i like mine with walnut or pecans and dipped in melted chocolate chips:)
Bonjour
Félicitation ! Pour cette quantité de caramel, quelles sont les dimensions du moule ? (buttered pan) Merci !
The pan is 9”x13” or 23x33cm
Are you cooking that on high r medium
Hello! We're so sorry that we're just now responding to your comment! If you're still wondering: we start cooking with the burner on HIGH, but we use a cooking thermometer to let us know when the pot and its content reach 235 degrees Fahrenheit (while stirring constantly!), which is when we then take the pot off the burner and add in the vanilla.
Is it 2 cups of sugar
Yes! It is 2 cups of light brown sugar (packed!). Thank you for taking the time to watch and comment, Pamela! - Glenn and Kati
Could recipe be cut in half?! Looks so good!
Great question! I'm sure it could, but we have not personally tried to do so. We hope you try out the recipe sometime soon. Thank you for watching! - Kati
Hello, I have tried this twice with no success, it stays runny and doesn't get chewy. My son thought I did something wrong so we set the tablet up and did it together, but it still came out runny. 3 batches in the garbage. Any suggestions?
I am so sorry for this happening to you. I had this happen once and son-in-law once and we just finished discussing this and both feel that if all the ingredients are correct it is probably that the caramel did not reach 235 degrees F while stirring constantly. I see I made 235 bold so very important. It may be your thermometer... easier to see with a digital. I sure hope this helps. I hope you use the runny on ice cream or with apples.

Thank you so much Glenn ! My son was thinking it was our thermometer also so I ordered one the same as yours ! Hopefully this will solve the problem!
Don’t throw it in the garbage, use it for apples and we’ve always used a spoon if it didn’t set up.
I have watched this video a few times. You don't tell us how much Karo corn syrup to you. I'm thinking 1 cup, but I'd like to know for sure.
We use 1 cup of Karo light corn syrup. Hope that helps! Thank you for watching and commenting! - Glenn and Kati
@CookingwithGlennandKati I used one q of Karo. I've made several batches of this caramel. It is delicious. I've been selling it as a fund raiser, to go toward my lung transplant.
Hi...Here u have used the unsweetened whipped cream?????If Yes,so pls will u let me know the measurements for the sweetened whipped cream that contains 25% sugar. How much cup of sugar I should use for the 25% sugar contain whipped cream...
Zehra, thank you for your comment! Unfortunately, we haven't tested our recipe with sweetened whipped cream. If you try making the recipe using it, please let us know how it turns out and if you ended up making any adjustments! We'd love to hear.
No se como bajar la receta.Probe de different tes formas.
.e gustaria tenerlas para hacerlas para los niñas del Orfanato.
I have an Amish candy store a mile away. They let people watch them make candy. They don't use thermometers they do everything by I measuring cups or just a cup so to make real Amish candy you have to do it like the Amish or it's just your candy. I'm not saying yours is bad but you don't make it like the Amish
Thank you for your response and feedback! Our caramels are based off the delicious ones we enjoyed in the Shipshewana, Indiana (a town with a significant Amish community). We have found that ours are as close in taste as we could get them to that of the ones in Shipshewana. We're grateful to have perfected our recipe since it's not so easy to make the 600 mile commute to our favorite Amish town that often! ;)
Nice
