    Former Chef and Culinary School grad. The recipe is legit. 8.5/10 as good as making home made pita with flour. I did need to use a bit more flour than 1:1 to get them to roll out and not break when I tried to move them on to my pizza peel before I baked them on my Baking Steel.

      Thank you. You are very encouraging. We have found that weather and elevation affects some of our recipes especially our baking recipes.

    I used plain full fat yoghurt, and also found that I had to use quite a bit more flour to get the mixture even remotely workable. I didn’t measure, but I added at least 1/3 cup more flour. Then when rolling it out it was still sticky. My oven also only goes up to 240c and it took longer than 1:30m to cook per side. But even though the initial struggles, it tasted really good, and will be using it for pizza dough too!

      Thank you. The yogurt gives them a nice taste but also makes the gluten free tortillas and pita pliable.

    could you use milk instead of yoghurt and bake it on the stope top?

      Thank you for watching our videos. We have never used regular milk so we don't know if that will work or not. We have used various types of nut and coconut yogurts. As far as making them on the stove, yes that will work.

    If using Cassava flour to make the pita, how long do you wait until you cut it. How can I prevent the pita from being gummy?

      Thank you for watching our videos. We use yogurt as the binder. We have used several types of yogurt. Dairy, Coconut, Soy, Almond, Cashew. All seem to work the same. Hope this helps.

    What kind of yogurt did you use? Greek, Plain? Fat content?

      we used Greek here but we have found that any yogurt, diary or vegan, will work.

      This is Gluten Free flour. Bob's Redmill Gluten Free 1 to 1. We have also used Cassava flour for a grain free version.
