I really liked Hades 1, but I kind of don't want to play another one though. As excellent as it was I think they should have focused on something new, or just a paid expansion.

There aren’t many of them compared to the 303928 Metroid-likes available right now.
Souls-like is kind of an invalid/vague genre though. People use the term because the games have been popular, but at it's core it's just a difficult 3rd person fighter game which has been around for ages. And whether you call it a 3rd person fighter or a "souls-like" it's not every game; there's tons of other games out there which are not that.
