  • Chinese Herbal Chicken Soup
Making soups is one of the easiest dishes to make! However, you might not know which Chinese herbs to put together to make a yummy, nourishing soup.
My mom used to make herbal soup for me when I was growing up at least once a week. With this recipe, you will only need 6 simple ingredients. Just add everything together in a pot and boil!
    Ingredients
3 chicken frames (1.5kg bones or 1 chicken)
    1.2 litres water
    Chinese herbs
2 tbsp wolfberry fruit (goji berries)
    8 pieces astragalus roots
    12 small dried scallops
12 dried Chinese dates (jujube fruit)
    6 codonopsis roots
    4 pieces Chinese yam
    Method
    1. Wash chicken frames with water. Rub with salt and wash off.
    2. Rinse and drain dried herbs over running water to remove dirt.
    3. Place all ingredients in pot with 1.2 litres water
    4. Bring to boil (Induction cooker used in this video)
    5. Reduce heat and simmer for 1- 1.5 hours (2 hours if over traditional hot stove)
    6. Remove from heat
    7. Skim fat from top
    8. Serve as a clear soup
*This recipe yields 3 bowls of soup
