  • Have you ever wondered what to do with asparagus ends? Wonder no more! Here's how to turn those woody ends of asparagus into creamy, flavorful, asparagus ends soup.
    It’s a great way to reduce your food waste and embrace a sustainable lifestyle in the kitchen.
    Feel free to mix your favorite leftover meat or veggies into the soup. You can also simply omit the optional milk, cheese, and prosciutto to make this dairy free and vegan.

    🥬 INGREDIENTS 🥬
    40-60 asparagus ends
    1 TBS avocado oil
    1 yellow onion, chopped
    2 medium red potatoes, chopped
    1/2 lemon, juiced
    1/4 cup cream
    salt and pepper
    🍋 OPTIONAL TOPPINGS 🍋
    1/4 cup grated parmesan, optional
    2 oz prosciutto, sliced and fried (optional)
    12-18 roasted asparagus spears, optional
    lemon zest
    🍴 INSTRUCTIONS 🍴
    1️⃣ Place the asparagus ends in a large pot and fill with water to cover one inch above the asparagus.
    2️⃣ Bring to a boil and simmer 30-40 minutes until asparagus is very soft (it will still be quite fibrous though).
    3️⃣ Blend the asparagus and liquid it boiled in using an immersion blender (In a regular blender, you must blend in very small batches as hot liquids expand. Or let it cool first).
    4️⃣ Strain the pulp out, reserving the liquid.
    5️⃣ Heat the oil in the large pot and add the onion and potatoes. Heat on medium high, stirring for 10 minutes until there are some good golden brown marks on the vegetables.
    6️⃣ Add the reserved asparagus stock and simmer on medium low for 20-30 minutes until vegetables are very soft. Blend well.
    7️⃣ Add juice of the 1/2 lemon, cream and salt and pepper to taste.
    8️⃣ (Optional: garnish the bowls of soup with grated parmesan, fried prosciutto, roasted asparagus spears and/or zest of the 1/2 lemon)

    I love cream of asparagus soup. I also use the ends and potatoes in my soup. I also use a leek, celery seed, and thyme in my soup. At the end of the cooking cycle I add heavy cream, sour cream, and lemon zest and juice in the soup. I also like to add shaved parmesan and toasted croutons. BTW...I have, thank G0d, never been homeless but there was a time when I got my first apartment and job when I couldn't afford to buy food so I'd go home after work, drink 2 quarts of ice water so that I would not have to go to bed on an empty stomach and go to bed. This went on for 2 weeks until I got my next pay check. At the time we didn't have food stamps. So I don't waste food, either.
    I think the tragedy in America, the richest country on earth, is that there are so many Americans going hungry. That there are so many starving CHILDREN in America! And the grocery stores throw perfectly good food in the landfills because the insurance companies will not allow them to donate the foods to food banks. They throw away enough food EVERY DAY to feed all Americans FIVE TIMES OVER...on a daily basis while CHILDREN and elderly people go hungry. Please write your Congress men and women and insist they take up the issue of homelessness and hunger in America!
    In France it's illegal for a store, farmer, restaurant or caterer to throw usable food in the trash just to end up in a landfill. It should be illegal here, too.

      @@domenicoberardi2739 Believe me or not. That's your choice. Everything I have written is true. My employer at the time was on a Weight Watcher's Diet. He would sit at his desk at lunch time and eat FIVE hotdogs to lose weight...and never offered me a single bite of a hot dog much less an entire hotdog. So when I got my own business I take everyone to lunch when we are working on a large event or holiday and I buy their lunches. I also have never paid an employee minimum wage much less the $60 per week...for 70 hours minimum of work paid cash under the table like that employer paid me. Incredible? Maybe. True? Absolutely!

      I see your comment is 2 years ago. But in these current times, homelessness & hunger are also plaguing 🇨🇦. It’s tragic. Always remember when helping the homeless & hungry: all medial can opener. Bandaids. Polysporin. Femine products-maxi pads are best as they can also be used as wound dressings. A dollar store can if dry chicken, beef or vegetable broth. A mug or thermos that keeps water hot. Always ask if there is anything they do lot like or are allergic to-such as nuts, shell fish, eggs. If you have a dehydrating option on your oven, dehydrate frozen vegetables like corn, peas, onion, beans & put onto clean plastic #2 containers like vinegar containers & give to them to add to their soup broths. I had a ton of frozen asparagus ends from pickling asparagus last season. This is a great way to use them up! I wonder if I can dehydrate them & make into powder to add to a cup of soup!

    I googled ways to use my asparagus ends today and you were the first to pop up on my CZcams feed. I was so thankful to not waste. Living the WFPB SOFAS free lifestyle about 10 weeks, and dropped my A1C from 8 to 5.8, and am 26 lbs lighter.     I was so glad to see this as I was searchng for a good cream of asparagus soup recipe and I like you, HATE wasted food, I try to use everything I can in one way or another. I am getting ready to try this so I should have waited to comment on how it turns out but I am already excited just to know I am able to use it now. THanks so much.     Instead of cream I added plain Greek yogurt after mixing it well
    It tasted so yummy and much less calories.

      I do.......I chop them up into small pieces, about 1/4 inch long. Then dehydrate fully...prob at 135 degrees overnight or longer. Then grind up in a bullet style blender ..to powder. Add to broths as you please.

    Have you ever blended it up in a vitamix blender? I’m wondering if it would blend the fibrous parts up enough to make it edible without having to strain it.🤔 And that would mean even LESS food waste, and a fuller tummy. 😊 I’m collecting my ends now in a ziplock. Throwing away half the bag was making my frugal side insane. LoL.

      Try your Vitamix. I make my soup that way and have never strained it.

      @@lizchilders4154 I did and it works great. I slice the ends into “coins” so the strands of fiber are short, that way they don’t bog up my blender blade. I keep all my ends in the freezer until I have at least a gallon ziploc full that way I make a big pot of soup and freeze the leftovers in my Souper Cubes tray then bag up. 😊

    I just got on this channel because I am preparing asparagus and I can't see wasting the lower half which is called Woody. Woody my butt. Like this women is explaining,I am going to stock up on the lower half and eventually make a asparagus bisque soup. She is absolutely rite on .No reason to throw away these parts of the asparagus unless you are a leftist snob. For me,its not about saving money. When I was young,it was drilled into my brain how there are starving people around the world who need food,DONT THROW ANY OF IF AWAY !
    MAN.....It really FROSTS MY BALLS when I hear about supermarkets, and restaurants throwing away perfectly good,edible food. This needs to be illegal and a hefty fine or imprisonment.
