Canning Asparagus Soup ~ Cream of Asparagus Soup Base ~ Pressure Canning

    You can never have too many soups in your arsenal. Stock your shelves with this easy to can soup base. Just a few basic ingredients. Eat as is or take it up a notch and create a creamy dreamy Cream of Asparagus Soup. Tasty and comforting. This recipe is intentded as a base for cream of asparagus soup only. Adding dairy or thickeners prior to canning is not safe or recommended.
    6 lbs. fresh asparagus spears, rinsed, trimmed and cut into 1" pieces
    3 quarts of chicken or vegetable stock
    1 large onion, chopped
    2 T. Seasoned Salt
    2 T. Lemon Pepper
    1 T. Garlic Powder
    2 t. Dried Tarragon
    1 T. Dried Parsley flakes
    To make Cream of Asparagus Soup (Optional)… please note that adding dairy or thickeners prior to canning is not safe or recommended. The addition of dairy and cornstarch as mentioned below is to be added when opening a jar of base to make Cream of Asparagus Soup…
    1 T. butter
    1 T. flour
    1/3 c. cream
    OR
    1 T. cornstarch mixed with cold water
    1/3 c. milk or evaporated milk
    Fill hot jars with hot soup to 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
    Pressure can pints and quarts for 40 minutes, adjusting for altitude as follows:
    Weighted gauge Dial gauge
    0-1,000 ft 10 11
    1,001-2,000 ft 15 11
    2,001-4,000 ft 15 12
    4,001-6,000 ft 15 13
    6,001-8,000 ft 15 14
    8,001-10,000 ft 15 15
    This recipe CANNOT be safely water bath or steam canned.
    Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

    Hi Carol. I want to give you a GREAT BIG THANK YOU!!! I started watching you just a little while ago back in the summer of 2020 and liked your canning instructions so much, that I've been canning up a storm. Well can you tell you that it's been a God-send to me and the family. Who would have thought that we would freeze out in Texas -- of all places. I've been snowed in for almost 2 weeks and have not missed a beat or stressed out at all about not being able to go to the stores. I have so many meals that I can make out of my canning stores. And yes Ma'am. It was all done "safely" -- thanks to your excellent instructions. We haven't been eating ourselves out of house and home, but eating frugally. The food is excellent and tastes great. I'm just so thankful that I can just cry. I haven't had to worry about feeding my family and we can last for months to come. So even when the stores are open and stocked again -- if that can happen anytime soon. I don't worry. I don't even have to go. I thank you and so many others for teaching me how to can. Who knew you were psychic and could foretell the future need?? Thank you.

    Crazy, that you are doing this video. I just learned that asparagus is the #1 vegatable to eat for diabetics. Great info for me to use.

    One of my favorite soups! It reminds me of my mother making creamed asparagus on toast point when I came home from school for lunch during the winter. I will keep my eyes open for a deal on asparagus. Too bad broccoli doesn't can well. It make another delicious cream soup. Thanks, Carol.

    Looks really good! Thanks for showing the final prep for serving. Asparagus is one of my favorite veggies. I also want to use your recipe for corn stock this summer. I can’t wait until time for fresh produce and to put winter behind us!

    Good evening Carol, thanks for the recipe. I wanted to ask you about the dairy products. I know we aren’t supposed to can with milk but I have a problem with regular milk anyway. However, when I make my Clam Chowder, not canning, just eating. I use Coffee-mate liquid instead of the dairy. I’m curious about canning with it since it’s not real dairy! Have you ever heard anything about using this in canning? It could be a game-changer when it comes to canning soups and other things, even before we use the inversion blender. I sure wish there was a way to safely can recipes with Rice. I’d love to make Beans & Rice.

    Yummy! I’ve canned most veggies but never asparagus due to it getting soggy but if you are going to turn it into a creamed soup then amazing!

    what are your thoughts on using small broccoli stem to make the same soup? I canned the broccoli leaves yesterday and will blanch/freeze florets. But the plants need to come out for corn planting so the small stems holding the florets that are beginning to bolt due to heat are still tasty, tender and usable. The fact that I can safely can the stems rather than puree is great!!
    I am definitely using your recipe and time for doing asparagus I bought yesterday.... but using the drop off good parts from sizing asparagus to fit jars.

      Technically there are no approved processing times for broccoli as it’s not recommended for canning. I’m
      sorry... I would freeze them instead 😊

      Yes. I would add more asparagus less stock. Add asparagus to 1” headspace then add stock or water maintaining 1” headspace 😊
