- Is CHICKEN Rice THE PERFECT Meal? | Khao Mun Gai! Part 2
This is another cracker of a dish!!!
Simple, fresh, healthy and packed full of flavour.
Here's the recipe:
🟢 For the chicken
1 good quality chicken ( or you can use chicken thighs with the skin)
2 Cloves of garlic (smashed)
2/3 sprigs of Coriander root
Salt for cleaning and adding to the boiling water
🟢 For the rice
1 large finger of Ginger
2/3 sprigs of coriander root
2 cloves of garlic (smashed)
Some oil
Jasmine rice
Enough fat skimmed from the water used for cooking the chicken to cover the rice up to the first joint on your index finger
🟢 For the sauce

🟢 For the soup
Use the stock left over from cooking the chicken, add spring onion and salt to flavour
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.

I have been wanting to make this recipe. How long did Tou boil the chicken? I read somewhere not to wash the raw chicken because of bacteria may spread in the sink.
Hi Sue, yes, you're correct that washing chicken can spread germs, however we rinsed it as there was quite a bit of blood in the carcass. It's fine to rinse meat, poultry and fish but always make sure you properly clean surfaces afterwards.
