    Chef Pi Tou will be showing us how to make Thai Chicken Biryani. This classic dish is extremely popular in the south of Thailand and is becoming increasingly more popular in Bangkok. Mild in spice and incredibly fragrant this is the perfect home cooking dish for all the family to enjoy.
    This recipe is fairly simple but has quite a few steps and a lot of ingredients.
    This will last a few days kept in the fridge, lower the amount of chicken and rice to make the portion smaller.
    Ingredients:
    FOR THE BIRYANI SAUCE:
    1.5 tsp sugar
    2 tsp salt, we added another tsp after tasting
    4 Banana shallot cut in chunks
    4 large pieces of ginger sliced
    1 ladle of rapeseed oil or other good quality oil from fry the sliced shallots
    50g Fresh coriander
    15/20 Cloves of garlic
    A dash of water
    A heaped tsp of cumin
    A heaped tsp of curry powder
    10 anis star
    10 pieces of clove
    A heaped tsp of turmeric powder, we put an extra one after to deepen the colour
    2kg Chicken drumsticks
    FOR THE MAIN PART:
    4 cups or 400g Basmati rice
    2 large tomatoes
    1 Banana shallot thinly sliced
    AJAD SAUCE

    • AWESOME Thai Fish Cake...
    1 tsp salt
    4 Tbsp water
    4 Tbsp sugar for the dipping sauce
    4 Tbsp white vinegar
    1 chopped cucumber
    2 banana shallot chopped
    2/3 large sweet chilli chopped
    6/7 Green birds eye chilli
    As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
    If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.

      @@FitousThaiKitchen ya why not. But it's just that they don't eat pork that much, prefer chicken , mutton, sea food etc. That's why you will find less but you will find no big deal.
