Protein-packed Spicy Summer Salad | Fitous Thai Kitchen
Protein-packed Spicy Summer Salad | Fitous Thai Kitchen
Here's the recipe:
🟢 For the sauce
2/3 Tbsp of water
3x Tbsp Fish sauce (we added another half Tbsp)
3x Tbsp of lime juice
2 x Chopped bulbs of pickled garlic with the juice
2x Tbsp of sugar
🟢 For the rest
250g Minced chicken
250g Prawns
5/6 Baby cucumbers
We used around 10 Thai Birds eye chilli, smashed in a pestle and mortar.
30g Sliced celery
30g Sliced red pepper
30g Sliced green pepper
30g Sliced white onion
1x Tomato quartered
30g spring onion sliced thin
30g coriander
1x Hard boiled egg
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.

no fish sauce or substitute ketchup ?
We used salt instead of fish sauce, so that we can use the sauce for vegetarians. Keep KETCHUP away from pad thai, it has absolutely no business being in there.

Is this fully grown and shelled prawns? Normally we have dried small baby prawns, and at that stage we eat whole with the shell.

Dear viewers, this sauce is a personal preference for her taste, not for the adventurous. If you make it at home, leave out the coriander roots, the handful of garlic, and that amount of peppers. Use only 2 to 3 cloves of garlic, 1 to 3 peppers, either white or palmer sugar, you don't have to use both. Also, if you prefer, you can use cilantro leaves to add in at the end after you put everything together. You're welcome. To make it less pungent, dilute it with some water.
