- It's been about 2 years since I posted my first video detailing how I use my KJ Jr. I've learned a lot, and wanted to share my updates with everyone.

I was a kcbs competitor and judge, once the kids graduated college we decided to move, I gave away all my smoking equipment to friends and have been analyzing the purchase of one last smoker to take me and my wife home. Your videos convinced me that smoker was a KJ Jr, arrived yesterday, re-watched all your videos in anticipation of my first cook. I love your presentation style: no nonsense, thoughtful and intelligent.
Not sure if you are disappointed about the relatively small number of subscribers but your insights have helped 1000s of people, I hope you'll continue to publish updates about the smoker in general and your experience cooking other meats. Best and God bless.
Video says more about your wife willing to stand in the snow for you than it does about brisket smoking.

This great. I got a Joe Jr. for Christmas and I haven’t fired it up yet. We live in central PA and it is 9 degrees out with 2 feet of snow. But seeing you with a wool coat and wool hat has inspired me. I also subscribed so I can see all of your early videos to guide my efforts and learn from them. I too purchased the KickAsh tray and I’m waiting for the Soap Stone to arrive. Thanks for sharing your evolution as a pit master.

Great video! I've had the Joe Jr for about a year now and used one of your original video to get me started. Interesting to see you've stopped using the charcoal chimney. I find it a bit fiddly and quite smokey and was thinking of trying something else too. Also I don't use the charcoal basket so might give that a try 👍

Thank you for the vids sir. Tbh, as a beginner into kamados, I almost regretted ordering my incoming KJ Jr (and actually using it aside from chicken) since Joe Junior vids are pretty sparse. Looking more forward to using it and even getting a Flameboss myself.

How tall is the table? Is it necessary for the top to be in marble or is it also good in wood?
You need something that can withstand high heat...
Is the Kamado frost proof or do you cover it or store it indoors for winter? Thanks
Thanks for your video! I,ve had the Joe Jr for 14 months now and I like a lot.
I also use the Kick Ash basket and I find that the bottom of grill get´s very hot. To avoid this, I leave about a 1/4 inch of ash on the bottom. Ash is a very good insulator from my experience of pellet and wood chip boilers.
Another trick that I use is to put the cast iron grate between the deflector plate and a drip pan. This reduces somewhat the temperature of the drip pan.
You can also use a small , 6 inch, aluminium pie form on top of the cast iron grate and put your Beer Can Chicken in it. This works very well.
In Fireboard 2 Drive, you can limit the fan's capacity to, for example, 25% so as not to exceed the desired target temperature. Do you not have that possibility in your regulator?

good tips! no, I cannot limit the fan like that. it has algorithms for a target temp and is automatic.
That blower... Thats what ive been missing... But hell for the price of that ill just buy a damn side by side smoker
Just found your junior vid mate. Are these grills made in the US? Just over here in the UK, they are like £120 more expensive than the USA. Liking the hat too, try and find one with nough ear cover is hard work for some reason lol.
According to KJ's site, they're manufactured in Yixing, China.
I agree about the hat. I need some with those little flip down ear muffs!
Have you tried lighting with a heat gun? $20 and it works great.

Paper works great. if you add a couple of cotton balls with alcohol. Light it up one time with a a simple lighter and you are set. Try it, no need for anything else

@@backyardkamado2546 yeah gonna try it. Ordered the adaptor today. I was told to have the daisy wheel open half - that about right?
@@swimadamswim Definitely not. Do you mean half open at startup or once the grill's up to temp? If it's half open, I strongly suspect it will run away at high temps. The pamphlet says to leave it open only a crack, which is what I always do, and have no problems with temp.
@@backyardkamado2546 yep sorry I meant half on the 6 holes not leave the whole daisy wheel open. Ie 1/2 v 1/8 but il try and 1/8 like I normally do. Cheers

no ! do not soak the wood. You'll get the wrong kinda smoke and your food will not be as good as using dry wood. I know some people tell you to; but experienced people ( I've been smoking for over 20+ years) do not... I made that mistake the first couple of years and then in a competition the judges told me not to do it anymore. They went thru the chemistry of the heat & smoke. So I haven't for years and its paid off.
No. The wood combusts which causes the good clean smoke. Soaking wood can cause it to just smolder, or steam, instead of combusting.
