Since I discovered I suffer from gluten sensitivity 3 years ago, I never had curry rice again. Today I made this recipe. I used tapioca starch as the thickening agent instead of flour and I also added a bit of honey for flavor. It was so delicious. Better than store bought. Thank you so much for this recipe, now I’m able to eat curry rice again ☺️
I see you figured out how to cook and plate rice! LOL! Seriously, Top Chef production gave everyone access to stoves, fryers, blenders, ovens, even pizza ovens, but no, they didn’t let you use a rice cooker to cook rice. You should have been the winner! You are my winner!
I made this tonight for my family and it was really good. Used grated pear instead of apple, and omitted the cardamom (didn’t have any on hand) and it was still amazing. Used a bit of dark soy to deepen the colour. Wish I had some scallions or chives to garnish with. So good. Thanks for the recipe!

I eyeballed the spice mix, which turned out great, and having had Japanese curry before I know it tasted the way it should, but maybe give a rough ratio of spices for those that might not have the experience? Thank you for the recipe, this is going into the family catalogue.
There are a few comments asking about the curry spice blend measurements. I will share what I tried. I toasted these in a skillet let them cool and then ground them up in a mortar and pestle 7g whole coriander seed 6g whole cumin seed 6g whole cardamom seed (shelled) 6g Szechuan Peppercorn 4g allspice (if you can't find allspice, try mixing cinnamon, cloves, and nutmeg) I then added Ground Turmeric to that spice mix. 16g turmeric I used about 3 tablespoons of that mixture in the curry to about 2 liters of stock.

Here are the changes I made: Cut back the peppercorns to 5g Added and toasted: 6g fenugreek seeds 2g fennel seeds 1/2 star anise pod 3 cloves For the stock, I blended 1l of dashi and 1l of chicken. I tend to prefer spicier curries so I added habanero powder to the seasoning blend to suit my taste.

Good balance using banana and carrot... tomatos are generally asid rate high levels when if you not use these fruit maybe a little bit can add sugar for the tomatos next time...
Would it be better to cook the tomato paste with the onion and carrots ? i was taught to do this with italian cooking by my aunt, so the tomato cooks out and deepens in flavour.

Loved the editing style. Reminds me of the, amusing, You Suck at Cooking channel. I love seeing great knife-work and I'm a little OCD on technique, especially if it's an lesser used ingredient or unique kitchen hack. But I don't necessarily need to see every onion diced and carrot sliced.
Honestly tomatos should cooking at first maybe can this so much the better... and a bit more oliv oil for the karamizasyon and flour.. you can use yogurt for making marine chicken.

Did you add the banana as well? Can you taste the banana in the curry?
Yeah, I did, but I think it’s mainly for sweetness. With this much spice going on you won’t be able to taste the banana distinctly.

When I lived in Japan the curry was sooo good. Nobody where I am makes it like that and it makes me sad.

means to let it turn brown. bananas & apples turn brown (aka oxidize) if you leave them exposed/uncovered

Yea apples and bananas will turn brown after a while if left out after mashing probably a few mins at best.
