- We spend the day preserving roasts from our fall moose harvest. We pressure can the meat and make sweet sausage. The following morning we enjoy a home cooked breakfast at our cabin.

What I especially like about you two is that you make no extra noise with your utensils and stuff, no clattering of pots and pans, but measured and meaningful movements and placements. It makes the watching possible for me (as very sound sensitive) without turning off the sound. Thank you and great way of working, with respect for your things. Love it.
It's nice just to sit back an watch w/out all the narration...I feel as I'm sitting there, sipping my coffee and just observing while waiting for my breakfast as well.
First 15 minutes: Intense anxiety waiting for the cutaway and the "Alright guys, today we're...."
Last 10 minutes: Yeah okay, this is kinda relaxing.

Brings back 50 year old memories of helping grind wild meat with a hand crank grinder hooked to edge of counter. I was around 10 at the time.
All I could think of while Eric was cutting meat was how he is a nurse's dream. Those veins! 🤣

The quality of your editing and camera angles for just 2 people, combined with the frequency you release videos, is just nuts. It is very obvious ya'll have put a ton of time into studying what makes a good video, regardless of actual content. I personally enjoy eating steak while watching you handle moose meat, imagining what it might taste like :D.

Here's a tip I've seen you made hashbrowns a couple of times if you lay a thick piece of cheesecloth crossed your cutting board when you grind your potatoes you can just twist it and get the water out right into a bowl without dying your hands from all the great heritage variety potatoes that you guys cook up

I've watched several of your blogs and they are out standing. God has blessed you beyond words, beautiful marriage, good health, beautiful surroundings, give God praise his love endures forever.I'm a organic gardener I only use worm castings & compost.Since my hip replacement I garden out of raised beds.About three years ago I had my neighbor build a 3 x 13 foot raised bed that will last for years.I make my own sausage I use pork instead of elk you are blessed.I started raising chickens almost four months ago.I only have five hens no rooster I don't live in the country.I keep them in a 13' x 10' enclosure all covered completely with chicken wire.The hens are range chickens so they can fly they haven't had their wings clipped.I'll enjoy watching more of your blogs.Put your faith and trust in Jesus he will never let you down.

These sausages looks amazing and beautiful, yummy.
It's easier to press all the sausage meat through at once and then come back and twist each link after, first link towards you, next away, then towards, then away, ect(just helpful advice)

As someone who spent years in a meat market stuffing sausage I was thinking the same thing.
1:32 as the meat packages came out I saw that head pop up with the "is that for ME?" look!

Why do people give thumbs down on theses wonderful hardworking couple, get a life. They have beautiful content.
Tip for cutting onions keep a soaking rag next the the cutting board. The acid in the onions is attracted to water so if some water source other than your eyes are present, it should make it easier:) love you videos
We were taught in chef school to keep the onions in water prior to cutting. The water has to evaporate before the acid in the onion ... No fumes
Then you can always resort to a pair of swimming/diving/skiing googles to use as onion goggles. I know 2 cooks that won’t cut an onion without them.
Light a candle and set it close by, problem solved .

That's what I do at home, lol. With the addition of breating through my mouth during the process so the effect doesn't trigger through the sense of smell either. (An often overlooked part that btw.)
Sure don't want to lose any of that eye-stinging onion juice by soaking it in water, microwaving it for some seconds etc. but I don't want that juice in my eyes or nose either.

Chef Larry here, with a safety suggestion. Whenever you are fabricating meat, or cutting a cutting board, you should take a wet towel and spread it evenly, onto the table and put the cutting board on top of the wet towel. That way the cutting board stays stationary, preventing it from sliding and possibly cutting you with a very sharp knife. That is just one of the tricks of the trade. I MUST Compliment you though!!! You guys are really doing a great job! It's SMART to get your meat almost frozen, to cut it evenly and properly! ALL of your methods are fine. When canning, though, make sure that the liquid goes above the meat! It should be totally submerged.
