  • Tomato processing is a much awaited event for us, from starting the seeds inside the cabin in early spring, to planting starts in the high tunnel, and finally harvesting the fruit to ripen back inside the cabin during the fall months. With snow falling and the wood stove cooking we make our annual tomato sauce and were lucky enough to have an excellent tomato yield to be able to make homemade salsa for this winter too.

      Where'd you leave from? I'm in North Dakota and TBH I'm hoping to make my way to the New York area. Not into the city, of course, but either way it's going to be expensive, so self sufficiency will help me save money.😌😅

    Someday I picture you with a dedicated canning/ pantry room added to your house. Rows and rows of earthquake proof shelves of your home canning products. Rows and rows of hanging onions and garlic. Bins of potatoes and root crops. Wow! Real riches, the equivalent of Scrooge McDuck's bags of gold.

    For the first time in 64 years, I canned tomatoes this last summer. I ended up with 26 pints, and I've already gone through half of them! (And it's JUST November)
    Next year I'll need to buy more jars! A LOT more. 🤣

    I saw one CZcamsr use an immersion blender and completely incorporated all the skins and seeds so nothing was visible and made up whatever she decided: sauce, ketchup, salsa etc. Also dehydrated tomato skins make a fabulous tomato powder to
    add to soups etc and you can make tomato “paste” from it.

      I have seen that also. I get the tomato powder but I wouldn't grind up the skins and seeds and leave them in the sauce. It changes the flavor and many suffer with heartburn and a few other things. I just don't like them left in. It is worth the extra steps to process. They did use the mill for the tomatos so I think it might have been all the peppers and other ingredients in the salsa.

      It really changes the texture and flavour. It doesn't taste bad, and my favourite tomato soup is made with the seeds and skins on, but it's a lot of extra fibres.

      The skins and the seeds have a chemical in them that make exacerbate arthritis & other joint pain. A little is fine, but a lot can really cause problems overtime. There is a reason they are extracted. I once thought that they add

    Canning is Alot of work but when you are finally all done it is SO rewarding to see all those bottles on the shelves. Thank you for showing the wonderful weather changes you guys have In Alaska. Until I watched your channel, I never realized how absolutely stunning Alaska was. I see now how people are in love with its seasons.

      When people ask me why I can my own food I just take them to my canning room or show them a picture and try to explain how satisfying it is to see all that food and know that, by the grace of God, I made that happen!! I don't have enough space to grow all the food I preserve, but when I am able to can something I grew it is an even more amazing feeling!!! I will never forget the 1st time we had a dinner where everything on the plate, but the meat which we do buy grass-fed meat in bulk when possible, was from my garden it was the most amazing feeling!!!!

    The chickens got a good treat, but dehydrating the tomato pulp makes a fantastic seasoning. Dehydrate and grind to a powder for great tomato flavoring sprinkles.

I always criticize other videos specially if their content should be living off the grid yet their thumbnails are naked body of their partners.. but in all of your videos I really love the content what I see in the thumbnail is what is really the content of the videos..     Pro tip for doing the onions: toss them into a pot of cold water as you chop the ends off. Leave them in there until you are ready to peal and slice them. It will get rid of the liquid that comes out of the cut ends and they won't be so hard on your eyes.

    When I was growing up one of my friends family cooked all their food (for canning) outside over an open fire to save on propane usage. They had a big family. They did have a wood stove, and your channel reminds me of their lifestyle. Sorry, It wasn't a lifestyle, it was a way of life. I'm so glad I found your channel it is very inspiring.

    I don't care what anyone else says, but those are the best chips EVER!!!! Didn't know of anyone else who did that, we fry ours a bit more with more oil. Take care Kids!

    It will save you a LOT of cook down time if you would drain the tomatoes after they thaw out. I do that too. Too much going in the summer sometimes so I wash cut and core the tomatoes and chuck them in the freezer till later. Draining them while they are still in chunks really helps. You can save and freeze the water you drain for vegetable soup stock or whatever...

      @@michelestarkey5564 we core and score the bottoms so when they come out of the freezer the skins slide right off while defrosting. That way we don’t have to strain - we just rough dice- and make chunkier sauce and salsa.

    Hi! I'm new here on Channel, sorry for my English because I'm Brazilian, and I don't speak fluent English, Here I make tomato sauce for storage, roasting the ingredients! I cut tomatoes, onions, carrots (1 or 2) a very small beetroot, garlic and bake it in the oven, it will dehydrate and cook, then just crush or process and store in the jars!     Love your vids. Brings back so many wonderful memories from my youth.
    I remember we had the most incredible dog, his name was Skookum. 125 pound Makenzie river Husky black Lab mix. Best dog that ever lived. Sorry but Bo and Bandit would agree. He would have been Bo and Bandit's best friend for sure. He was the uber alfa dog, bred with wolves, took down moose in deep snow, bla, bla. Saved my life from a charging (not a false) cow moose protecting her calf. N.S. She would have stomped me into mush if not for him. How many people can say that? What I remember most as a young teen was checking my trapline after school in the dark with Skook. He always had to come along at his insistence, but complained the whole way about the cold. Other than his whimpering there was the hush. The silence of the deep woods. 3 feet of snow on the spruces as I trudged along on my 5 foot long bentwood snowshoes. 25 degrees below zero. Fond, fond memories. Sparkley. Crunchy. Even a little spooky. Rabbit creek valley, in the shadow of Flattop mt. n.e. of Anchorage Alaska, 1970-1975. I was 12-17 years old. Used victor leg holds and Thompson deadfall snares. In adulthood I also used conabear 330s. You share so I share.

    My mom used to can tomatoes - whole- and fruit - sliced. We boiled the tomatoes briefly, dunked them in cold water and then used a paring knife to remove the skin. Super easy that way. It was long, hot, sweaty work to do during the late summer months, but we would have tomatoes and fruit for much of the winter.
    It's hard work, but it's so nice to have those when you want. Great job.

    Wishing I was 40 years younger and able to return to Alaska to live as you are. That was a lifelong dream. Although knowing what I know now I would build my place using double-wall construction. Incredibly easy to heat in the winter. And your garden and canning... love it. Thanks for sharing.

    Something that might help you when cutting and peeling onions. Cut a lemon in half and rub it all over the side of the cutting board you're using. The lemon smell will draw the onion smell down. You'll never year up again. I've been doing that for years, never had an issue.
    The chips look like roti, before they're cut in fours. Still looks yummy.

    The salsas look terrific, I'm more of a chunky salsa person, so I chop, chop, chop the tomatoes into diced pieces, my sister just love the salsa but questions my mental state because I love to dive veggie and tons of them, I just sit at my table with all my pots,veggies, knivesand spices and am happy as a lark. Your harvest looks like it was plentiful, end results look yummy. Bye for now. Lots of hard work. Be safe, hope you get a road kill moose, and plenty other animals for winter supplies. LOL ☃️🤗

    Man I just know that the meal and snacks the two show on camera looks so mouth watering and delicious. It seems that all the hard work in the garden this past summer has really provided great harvest for the winter months.     My husband and I moved to the rural area of Tennessee from Indianapolis. It may not be super remote and off grid, but the joy of having chickens and growing a garden is fantastic! Hoping to bE more self sufficient! My husband and I stay up late watching your videos, we love them!

    WOW did that look good!!!!! It's near dinner time and that was killing me. The snow shot's in the beginning were fantastic too. You really had a great tomato crop this year, when you were pulling them in out of the tunnel I was surprised at how many you got. Looked like more than double than last year. Looking forward to the next segment already!

    A pair of swimmer’s goggles will eliminate tears from spicy onions. Might look funny, but when you’re cutting a bunch, totally worth it

    I would love to see you do a video on the Spring seed starting that you do inside. You have such limited indoor space. I am curious about the lighting you use.     As many as y’all process every year y’all almost need the industrial size one! It made our canning season fast, six cases of tomatoes strained in 30 minutes even with the second go round with peels!

      Actually it doesn’t use that much power. Yeah they might have to get a bigger grinder but for as much as they put away every year it would be an awesome investment and give their smaller one a break just incase something ever happened and they need it in a pinch. But it’s whatever they’re most happy with and what works for them. I just know my parents love theirs cause we all put up so much every year. Can’t beat fresh taste I tell you that

      @@michellesellars4241 I wouldnt know actually, I am far from living off grid so never had to bother with that kind of things. But I know if I had something that still works, I probably wouldnt buy a new one "just" for convenience. Im the kind of person that uses stuff way beyond their lifetime, reuses, repair as much as I can, repurpose, upcycle, recycle...it just kills me to throw things away or not use them anymore just because they're past their prime. (Im an old grandma inside a 31yo body :-D )

      I completely get that. My parents are a little bit older and it just helps them process because we used to do it all by hand with a food mill. And they didn’t wanna give up something they love.

    I tried a little trick on my tomatoes this year and had the best crop ever. I simply ground 4 non coated aspirin and mixed with a gallon of water. Sprayed on my plants every week and a half. Something in the aspirin from what I have heard kicks the tomato plant's immune system into overdrive. My plants were loaded like never before.

    Another fantastic video. Strange what you in USA / Canada call Salsa in UK / Europe that would be pasta sauce and the tomato sauce would be passata. Salsa here is much chunkier with chunky whole chopped tomatoes & onions chilli garlic not cooked just bottled and water bathed. Good too see how different countries do it their own way. 👏👍

      In the USA there are several different ways to make salsa. We do have a chunky version and also a blended version.

    cutting onions is always a tearful event for me i like to use a damp rag to help aid with that though. thank you for the videos

      If you leave the root end on till you've finished peeling and/or cutting them they won't make you cry.

    If you guys make a recipe book.. make it known. I would purchase that and extra copies for gifts! That salsa looked amazing! Everything you guys make looks amazing!
