    Raspberry Crumble Cake
    Makes one 9” x 13” cake
    Crumble Topping:
    1 cup packed brown sugar
    1/2 cup granulated sugar
    œ t ground cinnamon
    œ t ground nutmeg
    1/2 teaspoon salt
    1 cup (2 sticks) unsalted butter, melted
    2 œ cups all-purpose flour
    Cake:
    1 œ sticks butter at room temperature
    1 cup granulated sugar
    3 large eggs at room temperature
    1 1/2 teaspoons almond or vanilla extract
    1 1/4 cups sour cream
    2 1/2 cups flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon kosher salt
    16oz raspberry fruit preserves/jam (all fruit, no extra sugar) or any preserve of your liking
    Preheat oven to 350. Line a 13” x 9” baking pan with parchment paper and spray with non-stick cooking spray.
    In a large bowl, combine all of the crumble topping ingredients and mix until a crumbly mixture forms. Set aside.
    In the bowl of a stand mixer, cream together butter and sugar until light and fluffy. Mix in eggs, one at a time, scraping down the sides of the bowl to ensure even mixing. Add in almond extract and sour cream and mix to combine. Add in the rest of the dry ingredients and mix until combined, being sure not to over mix.
    Spoon batter into prepared baking pan and use a spoon or spatular to spread it into an even layer. Spread raspberry preserves on top of the batter, trying to get it as even as possible. Top cake with crumble topping and bake for 50-60 minutes or until a toothpick comes out mostly clean (or with a few moist crumbs on it).
