FOR THE STOCK
5 1-inch thick pieces bone marrow
1 lb. brisket
1 oxtail, cut into 2-3 inch pieces
1 onion, peeled and quartered
1 4-inch piece of ginger, cut into chunks
1 garlic clove, cut in half
1 cinnamon stick, broken in half
1 tbsp coriander seeds
2 star anise
3-4 cloves
1 stalk lemon grass, cut into 2-inch pieces
Salt to taste
TO ASSEMBLE
1 onion, thinly sliced
2 scallions, think sliced
1 small bunch cilantro, finely chopped (stems included)
1 454g package rice noodles, cooked to package directions.
DIRECTIONS
Place bone marrow, brisket, and oxtail in a large pot and fill with cold water.
Bring to a boil and then immediately reduce to a simmer. Remove scum from the surface of the water until liquid is clear and no more scum rises to the surface of the pot. Cover and continue to simmer on low for 12 hours.
Add in onion, ginger, cinnamon, coriander seed, star anise, cloves, and lemongrass. Cover and simmer for another 12 hours
Carefully remove brisket, marrow, and oxtail from the broth and set aside
Strain soup through a fine-mesh sieve then season stock with salt
Remove marrow and tendon from marrow bones, slice brisket, pull meat from oxtail. Discard bones.
Heat a pan over high, add in oxtail meat. Fry until crisp, about 3 minutes.
In a bowl combine onion, scallion, cilantro
Divide noodles, marrow, brisket, tendon, and crispy oxtail into bowls. Divide onion mixture among bowls then pour pho stock into each bowl.
Garnish with fresh cilantro, Thai basil, and thinly sliced red chilis. Serve with Hoisin sauce and Sriracha.

***1/16/2020 Update*** This recipe is amazing! I followed it completely and got rave reviews. Yes, 24 hours for pho is a bit much....but it is soooo worth it. Thank you Matty.
***Update 12/17/2020***
I'm making it again, this time I will let it simmer in the oven. I'll put it on 250F and place the stock pot on the lowest rack, cover and let it simmer. This time I will add more oxtail and less brisket.

roast all the :
1 onion, peeled and quartered

1 tbsp coriander seeds
2 star anise
3-4 cloves
in a dry sauteed pan, Roast ALL, before you throw in the soup to give more depth of flavor... Try that to level up that flavors
How much did all of this cost lol?
Oxtail alone is like $15, same with the brisket and ribeye
could have done it in 14 hours actually, when you put in the aromatic, simmer it for 2 hours more then it's done

Isn't this more of a northern vs. southern Vietnamese thing, though? While purists would prefer to stick to the way pho is eaten in the north where it originated, my understanding is that putting condiments into the broth is much more accepted in the south where most Vietnamese immigrants to North America came from.

Dude, I'm a grown Vietnamese man and I still put my sriracha and hoisin sauce into my broth.
Given, I always taste my broth pure first just to know if I want little to no hoisin sauce in it.
However, sriracha is a must in my broth because I like my broth spicy and I'm use to the taste with sriracha.
