strawberry cake…without cake?? LOL yes you read that right
instead of cake, we’ll be using lady fingers which is a sweet sponge biscuit
Since Valentines day is coming soon, this would be a simple dessert to make
TLDR: if strawberry tiramisu and strawberry shortcake had a baby lol

Ingredients:
- 360g or 30 (frozen) strawberries
- 3 tbs agave syrup (any sugar works)
- 200 - 237g whipping cream
- 6 lady fingers
- 50-60g milk (I used soy)
Method:
1. Place most of the strawberries and syrup in a pot (retain 6-7 strawberries for decor)
2. On low heat, heat the strawberries until they soften and release moisture, then mash them thoroughly and cook until syrup has achieved desired thickness. Set side to chill.
3. Slice strawberries (you can slice in half but you will need more strawberries), and cut one strawberry in half
4. Beat the whipping cream until it forms soft peaks
5. soak top and bottom of lady finger in milk for 4 seconds each and line at the bottom of the box
6. pour the strawberry compote on top, line the outside of the box withe strawberry slices, (optional: add more soaked lady fingers if you’d like), add whipping cream, then place half a strawberry on top
7. Chill in fridge for 3 hours

Yes! pretty much a lazy version of strawberry shortcake haha. box cake inspiration wise from Boram, flavour wise I just combined decided to combine elements from strawberry tiramisu, strawberry milk, and strawberry shortcake into one haha

U don’t have have to heat it up! But it makes the syrup thicker ☺️ i was also using frozen strawberries so I heated them up ☺️

I’ve tried before with baby crackers! It’s not cake but it’s a “lazy” version hahah if you’d rather make a cake base you can use the cake recipe from the grapefruit cake recipe! That’ll create 4 square sheets
I really want to try making this! But just a question, how long exactly should I be leaving things to cool? Around 15-20 minutes?
The strawberry sauce should be pretty much cool to the touch once you’ve prepared the other stuff! If you transfer it to another cup or container it’ll cool faster ☺️ but yeah around 10-15 min depending

if you're okay with making cake, you can use the cake recipe from my grapefruit cake recipe! I haven't tried before but you can try substituting with Japanese milk bread, if you like strawberry sandos!
Can this also work with all purpose cream?
If your all purpose cream has around 30% milk fat it should be okay!

I haven't tried before but I don't see why not! I do recommend using milk bread though. it might be hard to scoop out, but it may taste like Japanese strawberry cream sandwiches, which are delicious!

Instead of using a fork to mash the strawberries in the stove I used a metal potato masher! Much easier and safer🥰

mmm do you have ingredients to make a sponge cake? I have a grapefruit cake recipe on my channel, if you have the ingredients and time you can make the cake itself. I haven't personally tried before but using soft asian white bread might work?? similar to Japanese strawberry cream sandwich (might be hard to scoop out though)
