This looks amazing! Going to try making it - I feel your pain with scooping heavily frozen ice cream though. My recommendation is microwaving the ice cream for 9 minutes (or 1-2 minutes depending on how intense your microwave's wattage is) to slightly soften it to make it easier for scooping.

I made this and had it with Cinnamon Toast Crunch it tasted very similar to strawberry jam on toast
