Props to you for trying this game. Soulsborne are very rewarding despite of its difficulty. Here's an additional tip for you: Level up doesn't really mean a lot if your weapon aren't upgraded properly. So be sure to prioritize using your runes to upgrade your weapon. Even your default weapon could be extremely powerful when you upgrade it and it's actually more effective sticking and upgrading your old weapon instead of finding a new ones (been sticking to my falchion since the beginning. I'm lv. 97 now, lol). There's really no best weapon or equipment. Any build are viable.
Also, when you're stuck at a boss, dump some points in your vigor. Vigor not only increase your HP, but it also increases your overall defense, so it helps massively.

One tip I've got for new people is, dont neglect leveling up your vigor. I was helping people in redmane the other day and so many people that summoned me got their cheeks clapped in seconds because they had like... 500 - 600 hp and the bosses killed them in 1 or 2 hits. It'll change your life when you are able to survive that one massive hit a boss lands on you and you can heal up and keep fighting. Vs being 1 shot and having to restart the whole fight.

Weapon upgrades (up to +3 at the Church of Elleh anvil) will increase your damage output quite a bit more than stat upgrades, so if you find smithing stones or somber smithing stones, stop at the Church to upgrade your weapon - you will take down those early enemies and bosses in fewer swings.

The site of grace highlighted at 14:44 wasn't where I gained the ability to level up and call the horse, but maybe that can change. If you rest at that site and she doesn't appear, try the site of grace slightly NW of the map ruins I mentioned above. That's where I got mine

If you didn't like Dark Souls I don't think you will enjoy Elden Ring. It's the spiritual successor just with an open world and a few more combat mechanics. In terms of boss moves, Elden Ring is definitely even harder. Many bosses don't leave any openings and require extreme precision/quick reaction or some other strategy to damage them.

    Regarding the Demi-Human Chiefs:
Liam was fighting both at the same time. When you first enter, if one of the demi-humans spots you (or you otherwise attack one, be it with a bow, spell or throwing item), it'll only aggro the Chief closest to you. If you stay near the entrance to the room, you won't aggro the other Chief (and the five, I think it is, adds that come with it). As Liam said in the video, the fight's much easier if you're not constantly watching your back, worrying about the other Chief. Just... mind where you roll and that you stay away from the 'tunnel' where the second Chief is, and you can pick them apart one by one.
