    Salt & Pepper
    Flour & Seasoning -
    1 Cup (100g) - Plain (All Purpose) Flour
    1/2 Cup (50g) - Corn Flour or Starch
    1 tsp (3g) - Onion Powder
    1 tsp (3g) - Garlic Powder
    2 tsp (6g) - Smoked Paprika
    1/2 tsp (1g) - Chilli Powder
    Salt & Pepper
    Hot Honey Sauce -
    1/2 Cup (125ml) - Franks Hot Sauce
    1/4 Cup - Honey
    1/3 Cup - Unsalted Butter
    1 tsp (3g) - Onion Powder
    1 tsp (3g) - Garlic Powder
    Salt & Pepper
    Remaining Ingredients -
    Burger Buns
    Pickles
    Neutral Oil For Frying
    Ranch Sauce -
    1/2 Cup (100g) - Mayonnaise
    1 1/2 Tbsp (25g) - Sour Cream
    1/4 Cup (60ml) - Buttermilk
    1 tsp (2.5g) - Onion Powder
    1 tsp (2.5g) - Garlic Powder
    1 tsp (1g) - Dried Dill
    1 tsp (1g) - Dried Parsley
    2 tsp (2g) - Dried Chives
    Seasoning To Taste
    Pickles -
    1 - Lebanese Cucumber
    8g (0.2oz) - Fresh Dill
    125ml (1/2 Cup) - Cold Water
    125ml (1/2 Cup) - White Vinegar
    2 Tbsp (20g) - White Sugar
    1 tsp (5g) - Sea Salt Flakes
    Method -
    1. Place the chicken thigh into a bowl, add buttermilk, franks hot sauce, salt and pepper. Mix to combine and marinate for 4 hours up to 48 hours.
    2. In a clean bowl, add all of the flour seasoning and mix it. Set aside.
    3. Add the ranch ingredients to a bowl, mix well and place in the fridge.
    4. Add all of the hot honey sauce ingredients in a saucepan over medium heat and whisk to combine. Once the butter has melted, remove from the stovetop.
    5. Heat a large high-rimmed pan or pot with enough oil to fill it halfway at 180.c-350.f.
    6. Add the chicken from the buttermilk to the seasoned flour and dredge well, shaking off excess. You can double-coat if preferred. Once coated, fry in the hot oil for 10-12 minutes or until golden, crispy, and cooked through. Repeat with the remaining batches.
    7. Add the cooked chicken to a large mixing bowl and pour over the hot honey sauce; mix well to coat.
    8. Toast buns to your liking. Spread the buns with ranch sauce on both top and bottom. Place in the crispy chicken, top with pickles and top bun. Dig in.
    Pickle Method -
    1. Place all the brine ingredients into a saucepan and bring to a boil. Turn off the heat.
    2. Add the cucumber, garlic, and dill to a clean mason jar. Pour over the brine, cover with a lid and store in the fridge for several weeks. Dig in.

      In Australia, where chef now lives, sandwiches are strictly made with sliced bread, not buns (as Subway discovered when they first opened up here and upset everybody). Here if if it's made with a bun instead of sliced bread then it's called a roll. Chicken burger would also be acceptable for this dish.

    • @danfred579
      @danfred579 Před 16 dny

      When is it a burger?

    • @TheRealPotoroo
      @TheRealPotoroo Před 15 dny

      @@danfred579 TL;DR: burger = bun + soft meat.
      Hamburgers essentially consist of a bun and a patty, usually made from minced beef, that are mechanically easy to eat because the core components are soft. A chicken burger is a bun with a (flattish) chicken piece in place of the patty. Chicken works as a substitute for the patty because it's a soft meat that comes apart easily when you bite it even if it's not uber-processed. Meats that don't come apart easily typically don't get used as burgers.

    • @danfred579
      @danfred579 Před 12 dny +1

      It's not a sandwich in Australia, where chef now lives. If you use a bun then it's either a chicken roll or a chicken burger. Sandwiches here are strictly made with sliced bread.

    • @slamslam-qw8qi
      @slamslam-qw8qi Před 15 dny

      Pretty surenthe debate is whether a sandwich is a burger not the other way around.
      Regardless, sandwich and burgers are form factors - you can put a goat and a pig in a car but that doesn't make it a barn - it's a car with animals inside it.

    • @ChefJackOvens

      Haha that’s a good way to put it

    • @TheRealPotoroo
      @TheRealPotoroo Před 15 dny +1

      @@slamslam-qw8qi The reason burgers use buns and not sliced bread is because sliced bread is too flimsy and quickly falls apart. Buns don't. Since in Australia sandwiches strictly use sliced bread they cannot be burgers.
