The best tiramisu I’ve ever eaten was made right in front of the in a small village restaurant in Italy. And the chef sat down and ate it with me.

Finally one recipe outside Italy, close to the real classics tiramisù! I am from Veneto, the region where tiramisù was created, just a hint, don't use egg whites, just mix mascarpone and egg yolks, and the classic hasn't chocolate chips, just unsweetened cocoa powder. Yes we use uncooked eggs, but only if they're super fresh and organic. Eventually you could sterilize the eggs like in the zabaione recipe.

  • @Yakikitsu
    @Yakikitsu Před 5 lety +284

I think for those who don't want the yolks raw they could make a "bain marie"..
Hot water in a Pot and over it the Bowl with the Yolks and Sugar, you whip them fast and it's basically lightly cooked and has the same result.. tbh Sugar DOES cook the yolks so it's also not Raw.. and the white part is protein rich so nothing will happen to you

Doing this the fourth time! And I still like it. And I don't add choco flakes in the middle, I just use cocoa powder, so one less ingredient to buy in the store!

I am italian and it was almost perfect.. just a couple of things are wrong. Chocolate crumbles are totally wrong and when you add the cream to the mascarpone’s cream do it but little by little mixing it from the bottom to the top. The rest is done in a very good way

I followed this recipe and the result was absolutely marvelous. Really, better than in a restaurant. I was a little bit concerned about the raw eggs, but after a little research about eating raw eggs, I decided to give it a try. 4 of us loved it. Plus it looks beautiful on the plate, I can't believe I actually made it. The only thing I changed was adding 2 tsp of dark rhum to the coffee (I have seen other recipes that use either dark rhum, Kalua, brandy or Marsala Wine; it is supposed to accentuate the coffee flavor).

I chose tbis recipe because after an extensive research, reading several recipes, reading the comments and reviews, the one in this video is actually the authentic one. Raw eggs, no vanilla, no heavy cream.

This recipe seems ok. Closest one to Giada's recipe which also uses raw eggs. For everyone saying not to use raw eggs, I've made this many times, always with raw, organic eggs and it has NEVER made me sick. I think the danger is minimal at best if you're using good quality eggs. Also, I do add either Marsala wine or a coffee liqueur like Kahlua (NOT Bailey's as it is not coffee liqueur, but Irish cream and NOT Amaretto) to the espresso.

this worked great but when i mixed the eggwhites with the yolks and mascarpone mine became a bit lumpy, looking back at the vid i think my mascarpone was much thicker. i suppose if you are watching this and trying to making tiramisu for the first time aswell you can thin it a bit before mixing.
delicious! (i cheated a bit on mine, added a dash of bailey's)

Not bad. The lady fingers i use are bigger and more soft.
When finished, i let it rest 12 hours minimum. In this time, the moisture from coffee and the cream distributes evenly in the biscuits.
In the same time, the alcohol from the liquor (mixed in the coffee)will "cook" the egg white proteins, making the cream firmier. It's like eating a slice of paradise

Detto cio' :
    ognuno lo fa' come crede.

Hi really hope someone could help me, it’s my second time trying this recipe but I’m still getting a very grainy like custard. Any guess of what possibly went wrong there? Could it be because I overbeat the egg whites, or maybe due to temp of whites and mascarpone mixture ? I’ve tried omitting egg whites and replacing it with heavy cream instead which turns out very well. Somehow never made it with egg whites :( I really wish to do the authentic way tho!

It's my first making tiramisu and may I ask some questions?
After assembling everything ( lady fingers , the custard ...) into the bowl, do you have to keep it in the fridge?
If so, how many should it be kept in the fridge before it can be served?
