  • My classic Italian tiramisu recipe has lightly sweet mascarpone filling layered with ladyfingers soaked with a spiked espresso mixture and topped with a dusting of cocoa powder. It's practically perfect and totally delicious!

    I love tiramisu because it has all the best things in one package: coffee, rum or brandy, a super creamy but not too sweet custard and just a little chocolate! It’s one of the FIRST recipes I made as a teenage baker and has remained a favorite ever since.

    Nice recipe, I love tiramisu!
    Here in Italy the classic version of tiramisu requires 1 small sized egg per 100g of mascarpone cheese - so, for instance, 5 eggs for 500g of mascarpone. Many italians tend to reduce the amount of eggs (like, 3 eggs for 500g of cheese).
    Also, there's no whipping cream - the extra air is given by whipped egg whites which are supposed to be folded in the sugar+yolks (to be beaten beforehand) and mascarpone mix (to which you may add a tablespoon of liqueur, here Marsala wine is pretty popular). The "traditional version from the 80s" doesn't require any cooking or double boiling but if you're afraid of using raw eggs (which is mainly a concern for little kids of pregnant women) you may attempt a bland pasteurization, being careful not to make it cook or it'll get lumpy - and to add the yolks+sugar mixture ONLY after it reached room temperature.
    The trick of not over-soaking ladyfingers is actually true and it makes a difference; also, beware of your coffee dip temperature, if it's still kinda warm it'll soak more easily your biscuits. Not to mention that not all ladyfingers from marts are the same, some are more prone to fast absorbing than others... You'll eventually find your favourite brand and adjust the needed soaking time.

    One thing to note. Make sure the egg yolks and mascarpone mixture is cooled before mixing in the whipped cream. Mine wasn’t and my cream mixture looked curdled

      Mine curdled too. Then I warm it up in the microwave in short intervals and stir it and it all blended together, no more curdled look. Then pop in fridge until ready to fold in the whipped cream.

    I made this recipe and OMG soooo yummy. Definitely recommend and easy to make 👌 my family loved it.
    -1/2 cup dark rum
    -1 1/2 to 2 cups espresso
    -16oz room temperature mascarpone (450g)
    -1/4 cup dark rum (60mL) (to be mixed with the mascarpone)
    -6 large egg yolk
    -2/3 cup granulated sugar (133g)
    -2 cups heavy whipping cream (480L)
    -2 tsp vanilla

    I have been making tiramisu for 50+ years. When my kids were little, they did not like the coffee flavor, so I made it with Mexican hot chocolate instead, and it was a huge hit at sleepovers. Once I made two versions for a large neighborhood party, and we did a side-by-side taste test. Among 30+ tasters, 100% preferred the Mexican chocolate version over the espresso. I have never looked back, though I do pay homage to the original by decorating the top with chocolate covered espresso beans.

      Hey! When you say Mexican hot chocloate, are you referring to something like the Nestle Abuelito? Great suggestion, by the way!

      @@jayantdrummer I hate to be too pedantic, but it's Abuelita (grandma, not grandpa 😁)...and yes! Be sure to get the solid hexagonal pieces of Abuelita chocolate. Since Nestle bought the brand, they came up with a powdered version, but that contains powdered milk and is meant to be made with water instead of milk. It's just not the same, especially when used in recipes. The solid chocolate pieces take some time to dissolve into the milk, but it is worth a few extra minutes. LMK how yours turns out!

      @@Inigo_The_Son thanks for correcting me.. it was a funny mistake though, you'd agree. I got the hexagonal pieces from a colleague who got it from the US - absolutely loved it.. I live in London and having a tough time finding it. Any suggestions would be helpful :)

    Oh boy! This dessert is hands down my favorite😂 I could eat all that tiramisu by myself in a sitting... It's insane. My nonna didn't skip the rum or coffee and we as kids would have some and just go to take a nap while the adults chatted 🥴 I also had ladyfinger as snacks for kindergarten and apple juice... I'm 26 and I still remember my mom packing some for me and being unable to wait until break to have them ahahah. Again, thank you for the amazing videos... it's making me remember things from my childhood that I thought I've forgotten!

      Not worth the trouble. You can get perfect lady fingers for cheap at the shop in a few mins or fingers: homemade along with hours of work. With also the possibility of not getting a perfect savoiardi.

    Thank you, John! I just made this for a neighbor (with your ladyfinger recipe as well). It smells and looks just beautiful. Setting in the fridge now.     Love Preppy Kitchen and his actual kitchen, especially the stove! I made this tiramisu twice this past Christmas and it came out perfect. My family have already requested I make it again.     For a more unique and complex flavour, try using marsala wine instead of run or coffee liqueur! I’m told using marsala wine in tiramisu is traditional in some parts of Italy. Also, it’s traditional to use whipped egg whites instead of whipped cream to floof up the dessert, cuts back on the richness while keeping all the flavour 😊
    Of course, uncooked egg whites worry some people, so you can either buy pasteurized egg whites, or whip the egg whites over a double boiler, to bring it up to the temperature that would kill salmonella (can’t remember it off the top of my head)

      this isnt that easy of a substitution if u plan on keeping it a while. whipped cream is very thick and solid, it holds its mass, but whipped hard whites are much runnier and more fragile and are prone to splitting. I found a hard italian meringue worked the best but it may not be as cuttable. I think a version is possible that still sets utilising whites but its not simply replacement. i need to experiment more 😢 man cooking is tough. so many eggs rip

    I love how you cook the egg yolk into a zabaglione. Can't wait to prepare this dessert!!! One of my favorite frostings is Italian Meringue. Great way to use up the egg whites. You can make an omelet with the whites too. Your videos and recipes are wonderful.

    I love this dessert! many times I’ve found that in some restaurants it is not as rich as it should be, they sadly used cream mixed with the mascarpone. Your recipe is just perfect!

    you have been a blessing to me since I found your channel. All the tips and tricks you provide us in every video have made my life so much easier when cooking! I am 24 years old, and I've recently developed an obsession with baking! it all started with a box cake!     Did this at Christmas and it was amazing the family loved it. For tonight Valentine’s Day I’ve gone for a twist buttering lady fingers with blood orange marmalade soaking the sides with Tia Maria using Marsala Wine in the mascarpone and as well as cocoa powder I’ve crushed dark chocolate orange on top. 2 helpings says it all 😮

    The only thing I do differently is to whip the egg yolks after heating them, until they are thick and lemon colored, then I add them to the mascarpone. I find it sets firmer that way. The lady finger recipe you shared is amazing! I have a dairy cow, so I was able to make my own mascarpone and whipped cream 😊

    Dark Rum, Kalua, Frangelico, Tia Maria, Amaretto, hey, just about any sweet liquer works in this dish. But, oh no! They contain demon alcohol!!! If you have kids or people in recovery about whom you're concerned, just heat your liquer of choice and light it with a lighter. Ethanol burns with a beautiful blue flame, and after it goes out, you can add the liquid to your recipe with less alcohol than you would find in vanilla extract. I am in recovery and I endorse this message.

    I used this recipe to make Tiramisu for my husband’s birthday instead of cake (also used his lady fingers recipe) and it was a hit! Amazingly rich and creamy! The only two things that I deviated from was the coffee/rum dip, I instead did coffee/kahlua/Mr Coffee to booze it up more 👌 and I folded in Hazelnut spread to the batter. It was the perfect balance of creamy and sweetness. I’m going to make it again soon! Thank you 🙏

    This was really delicious. I made it for Xmas and because of COVID regulations and small numbers at our dinner table it lasted for 3 days of dessert. Will definitely make it again and it’ll be perfect when I can have all my family back home for Xmas dinner . Thank You John 🤗

    I Made made this for my Granddaughter's 20th Birthday. I Used Marsala instead of Rum and shaved shaved a dark chocolate bar on top just before cutting it for a beautiful finish.     I was taught a very traditional style when I spent a summer in Italy. She spoke very little English and I spoke next to no Italian but we managed. 17yrs later and I still make it the same way. No whip cream, instead make very stiff meringue and mix that into the custard. Also no alcohol. There are so many versions of this yummy dessert!

      Where did the whipped cream and alcohol come from and not using the egg white to make the meringue 😭 that's like the best part.
      This is a nice recipe but it ain't called a Tiramisu. It's a cake

    I made this Tiramisu 2 weeks before Easter and it was so good, I made it for Easter! I could not believe how creamy, smooth and flavorful the tiramisu came out, not to mention how easy it was to make. I used 2 airplane bottles of Khalua, added a generous splash to the marscapone and the rest went into the espresso. Honestly, it was better than the Italian store where I get my favorite tiramisu. If you’re thinking about making this recipe, DO IT. John has the best outline and instructions to make it almost foolproof!

    John, you should use Tía María or coffee liqueur, really makes the difference. Great recipe, it looks soooooo yummy!

      I use half Khalua/tia Maria and half amaretto. On top I use half coco and half cinnamon. Yum. Tiramisu is one of my favs!!!!

    I just finished making the tiramisu and I left it chill overnight in the fridge. Instead of dark rum I added Jack Daniel’s and I made the lady fingers from scratch with your recipe 🤎thank you.

I thought you can only cook them when you're literally having close contact with them so you can take them, chop them to pieces or whatever method you can and cook them, not behind a screen though it would be impossible for me to find any CZcamsrs because they're usually across the globe.

    I really would like to see your version of strawberry pavola cake or walnut/pistachio Baklava, I don’t really know how to make it :) I relay on many of your fool proof recipes and it never failed me so it would be awesome to see baklava being made by you :D

    This recipe has too much rum for my liking. I wish I realized this before making it. However, I made about half dipped in hot chocolate for the non-rum/coffee people.

      Was it good? I like the taste of coffee but I can't tolerate it especially strong one. 😅 My friend added milk to the coffee to make it light and she said it was good but idk if that's wise.

    If you worried about the raw eggs in the mascarpone custard then you can just mix 3 ounces of mascarpone with some powdered sugar and whipped cream!
    Trust me its so good

    I made this and my mom absolutely loved it! Tiramisu is her favorite dessert. The second I made this I added espresso to the mascarpone cheese as well. I also added less whipped cream the second time and it tasted delicious!! Thank you so much for this recipe!

    This was fucking delicious! Also it was easy to make. Only one thing is I would only dip the bottom lady fingers for one sec. Because if you don't you'll get nice top and soggy bottom. But absolutely amazing recipe! And I'm making the gingerbread cake for Christmas.
