    Just wanted to say, I tried this step by step with olive oil low heat and the tad of water and they came out great! Same if not even better than take out dumplings. 👌

      For years I always wondered how to make em just like this but could never figure it out until I saw this video. No wok pan or anything special just an ordinary skillet pan with a glass top. I'll be using this video for now on in the years to come to make perfect dumplings.

    Yes! It does indeed work! I flipped mine over about 10min in so that both sides could get a bit of a crisp on them. I did need to add a little splash of extra water in the last 5min or so though, just to keep the pan moist. I have tried doing these a few ways (including in the airfryer, which works, but they come out too crisp) this is without a doubt the best way to do em! Thank you!

    Perfection! Before I was microwaving, then pan frying - then 30 min cleaning the cooktop as the oil would splatter when those moist dumplings were added. So very clever your method. Thanks Chris!

    best way for sure. Thanks for the video😄.for party i do a whole bunch like this then i put a sesame dressing(any asian bottle dressing)in a crockpot .enough to cover the bottom, toss the potstickers and keep on warm .add sesame seeds and green oinions. everyone loves them.

    Your Bessemer frying pan and lid are ideal for this dish, also the lid has a little mark on top to turn the knob to for steam release while cooking

    I always wanted to try 'pot stickers' as they're called in the US, but never saw them here in UK shops. Just found some, but was disappointed the cooking instructions on the pack were not good. They told you to BOIL or steam for a few minutes, or fry them for a long time.
    I don't have a steamer (MUST get one!), and didn't fancy boiling such a delicate item, as I imagine the final result would be tasteless, flabby white dumplings (possibly with exploded filling!). The pack said to fry from frozen on a low-ish heat for around 20 mins - I don't trust that either, as it's slow if you're in a rush, and would be so easy to burn them on the outside, and find the inside was still frozen.
    Your method is perfect, start them off with a fry to get some colour and texture (I also added a little butter to the vegetable oil for extra yumminess and goldenness), and HOT water from a just boiled kettle to keep the temperature of the pan up before you clamp the lid on. They turned out perfect like yours, with the advantages of frying and steaming, making them both crisp AND juicy. Genius!
    These make a great, quick meal served on top of rice or noodles, with some veg like brocolli, peas, leeks or bok choy, and a simple, home made sauce made from sauteed, finely chopped shallots/brown onion, garlic, chicken stock, soy sauce, a dash of Chinese 'Five Spice' powder and a squirt of tomato puree (sauce can be thickened with a little cornflour & cold water 'slurry'). If eating the dumplings alone, some finely chopped spring onions (scallions) or shallotts in soy sauce make a great accompanying dipping sauce.

      Sorry for the slow reply Ded! I would go medium-high to start with. High risks burning them too fast.
      If it takes a long time or the first batch aren't brown ... then turn the heat up for the next attempt : )

      You sure can! Some people find that they stick to stainless steel. I haven't tried it myself but I would recommend using a touch more oil and shaking the pan a few times soon after you put them in so that they are less likely to stick. Let us know how you go!

    So, I had dumplings I wanted to cook but didn't know how. The cooking instructions I didn't really trust alone. So I found your video and did how you did it while checking out the comments for more info.
    The oil and water introduction didn't go to well but I was prepared for that based on the comment section I read. I blame this on my stove for the way the meters read. Readjusted and continued for the way you made it.
    Thought I messed up from the first goof, but after the 10 minute cook time. It looked actually like how you had done it. No left over liquid and crisp bottom. Checked to see if fully cooked and seemed alright. Waited till cool then ate them.
    Little funny part here, the first one I decided to bite into. The liquids inside the dumpling probably from the meat.
    Exploded from my mouth all over my hands. I did not expect that to happen. The rest I put fully in my mouth closed. The dumplings sure are air tight.

    Didn't work first try. All but one of 15 dumplings stuck to the bottom and ripped apart. Used peanut oil and a pretty hight temperature. Any guidance?

      Jeff Zaun Hmmm... sorry to hear that. I would try:
      cooking them longer next time before adding the water
      give the pan a shake after the first minute to loosen them
      use a non-stick pan only
      use a bit more oil.
      If they’re slightly defrosted they will often stick to the pan at first but if you loosen them after a minute or so they’ll come good. Other people have commented that this technique doesn’t work well with a non-stick pan. Let me know what works!

      @@chris.elliot That was quick, thanks. I was using 'All Clad Stainless Steel.' I have non-stick but I'm hesitant to use it for fear of loosing maillard flavor from browning. I was also wondering if I had the heat too high. Tomorrow I'll try lower heat, longer time and shimming the pan; then I'll do a second batch on the non-stick.
      It's going to work. I just have to screw it up a couple times.
      Did you use a non-stick in the video? Thanks again. I'm using a couple kinds of Ponzu sauce just because I like it. I'll try the cooking wine and Chiu Chow tomorrow . . . so I can screw that up a couple times on my way to success :)

      Hi Alexander, it's got to be reasonably hot (but definitely don't let the oil smoke) to start, then a gentler heat once the water. For the sake of a very rough guide say 8 to start and 6 to cook. Give it a try!

      Defrost the dumplings in the fridge first. Fry them in hot oil in a non stick pan with a lid until they're starting to go golden on the bottom, then prepare to add a mix of 2 tablespoons of water and half a tablespoon of plain flour. pour that around the pan between the dumplings and cover immediately. After half a minute, open it up and quickly sprinkle between the dumplings with chopped green onion or chives and cover again. check after 3 more minutes to see if the edges of your wings are crunchy yet.

      durece100 i used Olive oil and followed the rest of the video step by step. About burnt my hand of from the hot oil popping everywhere when I added my frozen dumplings.

    something weird that happened to mine is that they stuck to the bottom of the pan so when i took them out they were all apart but still good!

      Hi Isabella, I'm really sorry to hear that. I think it happens for a few reasons, but the thing I would try next time is to add a BIT more oil, and shake the pan for the first few minutes after you put the lid on - just so they don't stick. Give that a try and let us know if it works : )

      @@averiii2155 also the more you shake the pan the crispier the bottom will be which can be too much so don't get crazy with it. Shake it once when they initially stick, and then maybe 2 more times before they're completely done

      what the fuck Oh no! Three suggestions:
      1. It sounds wrong but it works - cook them longer with slightly higher heat. If they’re not very crispy on the bottom they won’t come away from the pan
      2. Shake the pan during cooking - a couple of shakes every minute
      3. Add a touch more oil
      Let me know what works!

      Here’s my guess:
      1. Make sure they’re frozen before you cook
      2. Add a touch extra oil
      3. Turn UP the heat and make sure they’re really crunchy on the bottom. I think the moisture is why they stick
      4. Use a different pan
      Not sure any of those will help but it’s what I would do

      Auntie Kay I’d start with Medium heat. Too low and it won’t brown the bottom. You can also start on high heat then turn it down to low when you put the lid on

    You should fry the base of the gyoza. :) Heat the oil in the pan, align the gyoza (fry the base only).

      My Nana was a firm believer that the more delicious meals she produced out of her battered old pans, the better they worked! She never threw a pan out unless she'd had some calamity like burning it too black to clean, or the handle falling off. Old pans make the best food - the best cooks know that!

      I would think so! Definitely as long as they are cooked through it will be fine. Sometimes those wontons are a bit more delicate - just treat them gently. It depends on the brand you use though.
