    Your Bessemer frying pan and lid are ideal for this dish, also the lid has a little mark on top to turn the knob to for steam release while cooking

      Defrost the dumplings in the fridge first. Fry them in hot oil in a non stick pan with a lid until they're starting to go golden on the bottom, then prepare to add a mix of 2 tablespoons of water and half a tablespoon of plain flour. pour that around the pan between the dumplings and cover immediately. After half a minute, open it up and quickly sprinkle between the dumplings with chopped green onion or chives and cover again. check after 3 more minutes to see if the edges of your wings are crunchy yet.

      No it doesn’t - as long as you only put JUST enough oil to cover the base of the pan. If there’s any “depth” to the oil then it might splatter. Actually that’s exactly the question I had for CanadianChef when he proposed this method - AND the reason I originally made the video. I was convinced he’d burn the kitchen down by adding water to hot oil, but if you do it this way it’s ok. I still use this recipe… made some last week this way and they were perfect. Good luck and please tell me how it goes! 😊🙏

    Yes! It does indeed work! I flipped mine over about 10min in so that both sides could get a bit of a crisp on them. I did need to add a little splash of extra water in the last 5min or so though, just to keep the pan moist. I have tried doing these a few ways (including in the airfryer, which works, but they come out too crisp) this is without a doubt the best way to do em! Thank you!

    So, I had dumplings I wanted to cook but didn't know how. The cooking instructions I didn't really trust alone. So I found your video and did how you did it while checking out the comments for more info. The oil and water introduction didn't go to well but I was prepared for that based on the comment section I read. I blame this on my stove for the way the meters read. Readjusted and continued for the way you made it. Thought I messed up from the first goof, but after the 10 minute cook time. It looked actually like how you had done it. No left over liquid and crisp bottom. Checked to see if fully cooked and seemed alright. Waited till cool then ate them. Little funny part here, the first one I decided to bite into. The liquids inside the dumpling probably from the meat. Exploded from my mouth all over my hands. I did not expect that to happen. The rest I put fully in my mouth closed. The dumplings sure are air tight.

      Sorry for the slow reply Ded! I would go medium-high to start with. High risks burning them too fast. If it takes a long time or the first batch aren't brown ... then turn the heat up for the next attempt : )

    I always wanted to try 'pot stickers' as they're called in the US, but never saw them here in UK shops. Just found some, but was disappointed the cooking instructions on the pack were not good. They told you to BOIL or steam for a few minutes, or fry them for a long time. I don't have a steamer (MUST get one!), and didn't fancy boiling such a delicate item, as I imagine the final result would be tasteless, flabby white dumplings (possibly with exploded filling!). The pack said to fry from frozen on a low-ish heat for around 20 mins - I don't trust that either, as it's slow if you're in a rush, and would be so easy to burn them on the outside, and find the inside was still frozen. Your method is perfect, start them off with a fry to get some colour and texture (I also added a little butter to the vegetable oil for extra yumminess and goldenness), and HOT water from a just boiled kettle to keep the temperature of the pan up before you clamp the lid on. They turned out perfect like yours, with the advantages of frying and steaming, making them both crisp AND juicy. Genius! These make a great, quick meal served on top of rice or noodles, with some veg like brocolli, peas, leeks or bok choy, and a simple, home made sauce made from sauteed, finely chopped shallots/brown onion, garlic, chicken stock, soy sauce, a dash of Chinese 'Five Spice' powder and a squirt of tomato puree (sauce can be thickened with a little cornflour & cold water 'slurry'). If eating the dumplings alone, some finely chopped spring onions (scallions) or shallotts in soy sauce make a great accompanying dipping sauce.

      It’s not you … it’s me. This one doesn’t have any sound at all. I prefer videos with a voice or sound too. It’s a total accident that this video was so popular - it started out as a simple video for friends. Once it had > 100,000 views it was locked and I can’t edit it at all any more.       Hi Isabella, I'm really sorry to hear that. I think it happens for a few reasons, but the thing I would try next time is to add a BIT more oil, and shake the pan for the first few minutes after you put the lid on - just so they don't stick. Give that a try and let us know if it works : )

      @@averiii2155 also the more you shake the pan the crispier the bottom will be which can be too much so don't get crazy with it. Shake it once when they initially stick, and then maybe 2 more times before they're completely done

      My Nana was a firm believer that the more delicious meals she produced out of her battered old pans, the better they worked! She never threw a pan out unless she'd had some calamity like burning it too black to clean, or the handle falling off. Old pans make the best food - the best cooks know that!

      Hi Gavin - hmmm... I'm not sure, but I don't think it would work as well, no. The lid is to keep the steam in, and steam the top of the dumplings. Good news is that you could use a plate or another frying pan (as long as they are big enough and you're careful not to burn yourself) - anything that will cover the top of the pan and keep most of the steam in. Let us know what you try!

      You sure can! Some people find that they stick to stainless steel. I haven't tried it myself but I would recommend using a touch more oil and shaking the pan a few times soon after you put them in so that they are less likely to stick. Let us know how you go!

    I did this with chicken dumplings and made 2 grave mistakes 1) the dumplings had melted by the time i got around to making them 2)i used a fu***ng pan that i thought was non stick but apparently wasn't The result-a gooey mess Then i tried again after 2 days this time doing it right and what i got was an absolute masterpiece 👌

      If you'd cooked from frozen you'd have had no problems, regardless of which pan you used. Dumplings are pretty delicate - that's why you get the best results cooking from frozen.

    I am scared to add water to hot oil but it looks like this method does not release a burning hell fire on you so maybe adding water to oil is ok? I have always been told water and oil don't mix in cooking and they result in fires.

      100% you should not add water to hot oil - that's what I've been taught too. This is EXACTLY why I made this video originally - CanadianChef swore to me that this was the correct way to cook crispy dumplings, and I expected to watch him burn his house down.... In THIS case, however, it turns out the key is to have a very thin layer of oil. It's almost invisible - it only JUST covers the base of the saucepan. This way, when you add the water (not too much!) the oil doesn't "spit". If you add water to hot oil that is deeper, when the water boils it will throw hot oil everywhere. The method in the video works if you don't use too much oil - but as always, YMMV so be careful!

      That's only the case with deep drying, eg never throw water onto a chip pan fire. A frying pan like this with just a little oil is safe - but you should only add a small amount of water, and do it gradually. I use hot water from the kettle to speed the cooking process, I wouldn't use cold tap water as we see here, but he got a great result so it obviously works!

      I think this video is a great method for frozen dumplings, but I part company with the cook when he adds tap water -I use just boiled, ie very hot water from the kettle, as it's similar temperature to the oil in the pan so blends with it fast, and speeds the cooking process. I think you get a more even cooking result by adding very hot water.
